Jikin Junmai Ginjo Hachitan Nishiki.
This is well-balanced. The aroma, sweetness, richness, and acidity are all understated and harmonious.
It went wonderfully with tempura🍤.

New Year's Day Sake.
I stopped by Masariya at the end of the year and bought some.
The first sake was a hot bottle of Junmai (Junmai rice).
After that, I had this Amami. It was the first nigori since Mr. Fujioka left the company.
It was a bit thin, but the acidity, sweetness, and light fizziness were typical of Amami.
2 beers -> Shimehari Tsuru -> Amami

Yesterday was the last day of work.
We had a party from 3:30 p.m. at the office.
I served Omine and Isshiro-Suisei.
(Kubota was from a junior colleague.)
It had been a while since I had tasted 3 grains of Omine, and they were sweet. After a while, I felt some sourness, but generally it was muscat.
Ippaku Suisei was delicious with a gaseous taste.
Beer -> Oumine - Ippaku Suisei - Kubota -> moved to Hormone shop and had Mokkoli x 5😎.

Kangiku Junmai Daiginjo Unfiltered Nama-shu 39!
Thankful for the events of this year, especially natural disasters and the Japanese people's compassion for them - a culture of helping each other - I wish you a wonderful year-end and New Year 🙇♂️
This is a gorgeous and elegant sake that is typical of Kangiku's high grade sake. Almost like a white wine.
The aroma of grapes, the reserved sweetness, and the typical Kangiku acidity, gas, and sharpness.
Delicious 🥰.

The sweetness stands out from the tingling gasiness that is typical of Kaze no Mori. It is no longer a white wine. A little too sweet for me.
The second bottle, Tasake, is a royal taste. It has dignity.

At FUKUNOTORI Kanda, which is owned by a 12th grade junior in high school.
This guy has superb knowledge of sake. Every time, he prepares sake that I have never had before.
Sakuta's special junmai. Naturally, this was my first time drinking it. It is a fashionable sake with lactic acidity, little bitterness, and relatively good flavor.
It goes well with yakitori. I even had ramen noodles to finish off the meal 🍜.

My wife bought this Shichiken at the foot of Yatsugatake in Yamanashi.
It seems to be the newest of the new sake.
The sweetness stands out. Green apple 🍏Sweetness is gone and sourness peeks out and turns to bitterness.
It goes well with Houtou, stir-fried pork belly and vegetables with oyster sauce, and grilled dodeca log shiitake mushrooms.

At dinner last night.
Junmai sake with an unusual name from Tomikyunaga.
It is said to be a sake to support my working father with respect and gratitude 😂.
So it's a food sake that goes well with everything my dad likes...yakitori, sashimi, appetizers...you name it.
It is dry and has umami flavor. It is a refreshing and crisp sake.

We had a bottle of Shangiku Denshogiku.
It doesn't have the sharpness that is typical of Kangiku.
It is tasty, but not enough. It does not have a refreshing taste.

Taste is modest pear + greffle. It is a dry and beautiful sake with moderate sweetness. Goes well with sushi.
I didn't realize it was a brew until I went back to my room and looked at the label.
In the room, 2 beers + white wine -> Kuroryu + 3 old Awamori bottles + martini 🍸.

The taste is clean and refreshing, as is typical of Hiyoroki.
The balance of acidity + moderate sweetness + richness of rice is elegant, and it was excellent among the sake we drank that day.

I bought this sake at Kyokui Tanaka Sake Brewery where I toured the brewery between my business trips to Sapporo last month.
It seems to be the only sake brewery in Otaru.
The modest aroma is fruit + alcohol. It is a middle-bodied food sake.
The alcohol 17 degrees is somewhat heavy.
I'm having it with oysters in a clay pot from noon 😎.

The first sake we drank was Hana-yosu.
2.800 yen/unit. It is expensive.

This is my first time to Mt. I heard on the news just last weekend that the autumn leaves🍁 are beautiful in this mountain.
It's dark only for autumn sake. The aroma is also strong with fruit (like pear?).

First glass of Hakuin Masamune. It is made by Takashima Sake Brewery in Numazu.
I have the impression that most of their sake is dry, but this is a quintessential autumnal sake. It was a delicious sake, not too dry and not too sweet, with a moderate assertiveness. It is a good sake for a meal that goes well with fish.
