Here is Kaygetsu, which I drank at a tasting event. It was my first sake, but this sparkling one was the best. She is from Fukuoka, and when she was working in Paris, she fell in love with the sake sold there and got a job at this brewery 😅She explained to us how unique sake is.

Putting aside the long preamble, the overall sake we tasted was modern and powerful, but we got this sparkling one. The toji-san said that the "shuwashuwa" was added afterwards, as he is very particular about his sake. He said that he is particular about adding the shuwashuwa after the fermentation of the sake because it changes the taste.
It was just like champagne! It was a champagne!
