I could feel the power of the Yonome Dam.
It has a freshness on the palate that does not feel like it is a sake made from a traditional sake yeast, and a slight sake yeastiness comes through on the palate.

The first aroma is a gorgeous ginjo aroma.
When you take a sip, it has a sweet taste with a slight astringency and a refreshing umami flavor.
The aroma is sweet, so it doesn't feel that dry, but it is delicious. ✨️
I enjoyed it cold (lol).
Although it is labeled as a dry ginjo-style sake...it is not dry, and depending on what it is paired with, it can be sweet, but I still think it is an easy-drinking sake.

Junmai Ginjo-genshu is bottled, fire-brewed, and stored in an earthenware warehouse for storage and aging; the pleasant acidity and moderate aroma that are unique to the No. 7 yeast flavor are slightly fresh, but the aging process has reduced the corners to create a harmonious, soft sake with a pleasant taste. The convergence of the acidity and moderate acidity makes it a refreshing mid-meal sake that retains its mildness. Slightly acidic.
Urasaku no Hana Dry Ginjo-Kunokumi

According to online information, the sake rice is Hitogokochi.
This is one of the two bottles I purchased on my trip to Nagano. This one is my favorite choice.
The aroma is sweet banana. When you put it in your mouth, it has a pleasant tangy gassy feeling and a smooth mouthfeel.
The slightly sweet and umami taste spreads softly in the middle, and the aftertaste is sharply cut by spiciness and bitterness.
It was a well-balanced, dry, direct-drafted sake.
