Kawanakajima Genmai Junmai Daiginjo 2024BY✨
I finally met ‼️ Genmai-sama 🥹!
It's a Jun Dai, a hybrid type of Yamadanishiki and Miyamanishiki 😊.
The aroma is mainly savory grain aroma without being flashy at all. The attack is juicy apple sweet and sour flavor that spreads softly but is not harsh, and the aftertaste is a harmony of full alcohol, umami, and a good dry sharpness that even those who do not like sake can easily drink it.
It is quite hard to find, but I would like to try other junmai sake 😁.

Good evening 😊 Surprisingly it was my first time. I've been reflecting on it lately, but I tend to stick to the good brands I know from the past rather than the new ones, so I'm going to try a little more of a challenge: ‼️
Kawanakajima Genmai, which I was sad to not get on the first day of my trip to Kanto and Niigata last month, was the first store I drank at.
On the second day, I was able to pick him up on my way from Yokohama to Niigata Prefecture 😊.
Polishing ratio 59
Alcohol content 15%.
There is a slight sweetness of rice in the umami, and after the bitterness is added, it finishes crisp and clean.
I had it cold at first, but on the second day, I was told that room temperature was recommended, so I had it at room temperature as well, and the umami was fuller and more flavorful 😄.
The bitterness is pleasant, as I felt with the Junmai Ginjo 🍶.

The Junmai Ginjo was more spectacular, but this one is easier to pair with food😊.
I tried to buy this one at the liquor store, but they explained that the aroma was not to my liking, and I had a bad impression of Miyamanishiki, so I stopped and bought Kinmonniki. I thought it was drinkable, so later I bought the Yamae Nishiki and tried it ✨.
I don't want to be rude to Sake Chiteno, but since it's online, I assumed the worst of the word of mouth I saw 😅.
It smells like a lactic acid twang. It has a yogurt-like flavor and also smells like honey in yogurt. Yes, depending on how you look at it, you can imagine that unpleasant smell of an over-fermented rainy season 🤣.
There is no gas, and the mouthfeel is soft. The sweetness is supported by the light umami, and the acidity is unexpectedly refreshing, but I also felt the sourness 🤔.
It was sweet and sour, not gobby, but surprisingly drinkable 😊.
Second day
The aroma was the same as yesterday's aroma, but the rest of the aroma was juicy and sweet, with a little bitterness 😄.
Fourth day
The aroma of lactic acidity is the same as the second day, but the sweetness is a little more clear and juicy, and there is a hint of bitterness 👍.
Third bottle of Genmai, this one tasted the best. Maybe I have a stupid tongue 🤣🤣.

I've been drinking a lot of good sake, but I'm going to have another favorite, Genmai.
I will have it cold.
When I pour it into the glass, a little bit of fine bubbles adhere to the glass.
The color is clear with a hint of yellow.
The upper aroma is of slightly sweet apricot bean curd and a little lactic acid beverage.
The mouthfeel is a bit thick, with a peculiar aroma of sweet ripeness.
The taste is also sweet apricot bean curd, lactic acid bacteria, and a tingling sensation in the aftertaste, but the sweetness lingers loosely in the aftertaste.
There is no bitterness that I felt before, but a peculiar peculiarity.
Hmmm, something like an off-flavor, not the usual image of Kinmon-nishiki Genmai...
I'll let it sit for a while before drinking it again.

I was off today, so I was buying sake and eating, but the sky was bright red in the evening, a rare sky.
The last time I drank Miyamanishiki, I didn't like the peculiar feeling it had when it moved from umami to sourness, so I bought Kinmonniki to give it another try 😊.
The aroma is mild but sweet and the mouthfeel is soft. The taste has a sense of spreading umami, but it is not grounded, and the acidity is dry and sharp, and it passes through the nose. Finally, the bitterness slowly finishes it off. It has a unique sharpness.
I paired it with tempura as a mealtime sake, but it also has a mellow sweetness, and I think it is better and easier to drink while eating 🤔.
On the 4th day, there is a slight sweetness like honey. When you feel the sweetness, it becomes better to drink the sake alone👍.
The sweetness is more pronounced after a few days than when the bottle is opened, and the acidity is soft and rounded, but the sharpness is still there. The balance improves and it is easy to drink. But I think it still has a sharp taste 🤔.
