Junmai Daiginjo from Kawanakajima Genmai.
Sake aged at low temperature using 10% Miyamanishiki (49% milled rice) and 90% Yamadanishiki (35% milled rice) 🍶.
The aroma is mellow and sweet on the nose.
The first aroma is mildly sweet, and in the mouth it has a smooth, mellow, sweet flavor.
You can tell it's a good sake just by drinking this smoothness even if it is fire-aged 😊.

Kaoru sake. Sake from Tohoku and sake from Nagano are similar but completely different, but I can't really put it into words...the sweetness and powerful gentleness that is typical of Nagano...the tanginess was irresistibly delicious!
Comparison with Miyamanishiki. Fruity aroma. The moment you drink it, your taste buds will roar with delight. ‼️
It has a gentle mouthfeel, with a sweetness that fills the palate and finishes with a smooth finish. As the temperature rises, the sticky sweetness increases and the aroma of Miyamanishiki comes out. On the second day after opening the bottle, the aroma is lessened and it is a little more refreshing than sweeter. It's really delicious. ‼️
Comparison with Harmonic. The unique aroma is difficult to describe. The aroma is not unpleasant, but it may be different for different tastes. When you drink it, the sweetness and umami spread firmly, and the crisp acidity is more refreshing than Harmonic's. On the second day after opening the bottle, the aroma is suppressed and the sweetness becomes even more pronounced. Harmonic is sweet and smooth, and this one is sweet and refreshing. Meh, it's soooo good. ‼️

The waiter brought me a bottle of Kawanakajima Genmai because he had a good sake that he liked! It was probably the best sake I had that day out of all the famous sakes I drank that day 😆.
It was close to the last order, so we ordered a lot of entrées!
My favorite Torotaku also came!
Sake was Genmai Jungin!
This one is a bit dry!
