Kawanakajima Genmai Junmai Daiginjyo
The "Nakadori," a rice daiginjo brewed with 49% polished Miyamanishiki, and the "Junmai Daiginjo," brewed with 35% polished Yamadanishiki, are each balanced at 50% to create a sharp taste.
The flavor is united by low-temperature aging for about 6 months without filtration, resulting in an exquisitely flavored gem.

I'm jealous of GW, so I'm going to open my favorite Genmai and enjoy it. This is the first time I've had Genshu Mai Shiboritate.
I will drink it cold.
When I poured it into a glass, I noticed a few small bubbles on the sides.
The color is a little yellowish.
The top aroma is of ripe, sweet fruit wafting from the bottle as soon as it is opened. When poured into a glass, it calms down a bit and is softly pineapple.
Fresh mouthfeel with a slight tartness.
The taste is sweet and umami at first, followed by a tangy, freshly-squeezed acidity that lingers on the tongue.
The nose is filled with aromas of ripe tropical fruits, and the rich sweetness expands into a soft bitterness that does not overpower the palate.
I still like Genmai.

I kept it in the fridge for a year. This is delicious. It has been a long time since I have had a Genmai, but Miyamanishiki, was it this sweet? Is it the fresh and mild melon aroma? Anyway, smooth and soft. And it is sweet, elegant sweetness, or perhaps an unstoppable sweetness. And it is properly quenched by a slight bitterness. No wonder it is so popular. I wish I could go to Nagano.
We received a lot of wild vegetables such as cod sprouts, koshiawara, and kogomi, and opened the bottle in time for the wild vegetable tempura🍤 festival.
How could it not go well with my favorite Nagano sake 🍶😆.
It's a classic, but it's so good, even my husband lost out 🤭.
We drank a little too much and had a blast.
I love modern sake, but the classics we get sometimes are also delicious while feeling the royalty of sake 🍶✨This one is good too.

I liked it from the aroma.
It is sweet, mellow, and a little thick. I like Shinshu Kamerei and Omine, and this sake was just right for my taste.

The aroma is...what is it, grape? Sweetness.
When you take a sip, you can feel the thick, thick mouthfeel with a hint of a splash of sweetness 🫧 The sweetness comes slowly in the clear mouthfeel, and then disappears with the acidity and bitterness.
The bitterness seems to be rather bitter, but it is counterbalanced by the sweetness.
It has been quite a while, but the freshness, acidity, and bitterness combine with the freshness and seem to tighten up the rich, sweet, and delicious flavor.
As the day goes by, the freshness of the wine has calmed down, and it has become more mellow. The sweetness was firm like cotton candy, and the finish was more refreshing than expected.

You can't really sell Genmai either 😩 It is sweet, but the balance of bitter and acidic tastes and the clean aftertaste made it a delicious drink 🥳.
This is the first time I've had Kawanakajima Genmai.
I found it by chance at a liquor store in Toyonaka, but was tempted by the one bottle per person limit and bought it 🍶.
It had a very rich, caramel-like sweetness, followed by a strange taste of rice!
I'm looking forward to tasting it again tomorrow!
