100% Yamada-Nishiki Polishing ratio 59 Alcohol 16%. I visited 4 dealers in Nagano, but could not find it. 、、、、 I was able to purchase it at a liquor store I stopped by in Aichi at a good time. It has a refreshing yet deep sweetness. The sweetness and umami are full, with a minerality and crispness. Delightful!

It has been a long time since I have been to Kawanakajima Genmai 🍶. When I asked the master about the word "aged" on the menu, he told me that it was written as a warning because of the aged aroma. The top aroma has a slight matured aroma. It has a sweet aroma that is one step short of caramel. When you put it in your mouth, it tastes sweet and delicious like Genmai, and there is no problem with the taste. According to the master, the brewery has always had a tendency to produce aged aroma when the temperature is high (manufactured in August 2024). It may be a characteristic of the brewery 🤔. It was delicious ✨

I wanted to drink something sweet, so I went to a liquor store in the middle of nowhere. I successfully bought a bottle of Genmai. It was made in February this year, so it was freshly pressed 😆. Miyamanishiki 49% polished, 16% alcohol! Daiginjo class! Twist the aluminum cap tightly. The sound of opening the bottle is silent. The aroma is softly good from the mouth of the bottle. The top aroma is of honey apple. There is also a lactic acidity. On the palate... Yay! As sweet as expected 😘. Gorgeous fullness with lactic acidity and malted rice I like it 👍 The chiliiness of the sake is a little bit... The last taste of just opened is just a little bitterness I think the true value of Genmai comes after the second day. It tasted rich like Yamadanishiki from the first day. It's been a long time since I've tasted Genshu Mai 😉.

The other day, after Ane-san's check-in for reaching the hermit number, there was a bit of a buzz among Kansai Sake-no-Wa members about Genmai's Aizan. I was lucky enough to come across it and tried it for the first time after all this time. For some reason, only Gensen Mai's Aizan (and its activated sake, Hwarin) has a slightly modern and stylish label. The point of the "i" being a grain of rice, etc. is also intoxicating ☺️ The exterior is a very pale silver crystal. The aroma is sweet and fruity, with a "genmai" ginjo aroma. Ripe melon, young banana, ripe white peach. The rice aroma is about the same as that of white dumplings. The first touch of sweetness. Cute acidity mixes with the sweetness and acidity. The sweetness gives way to a swelling umami flavor and a loss of alcohol that is typical of nama-zake. The lingering aftertaste, including a slight bitterness, lingers gradually. This is Genmai, this is Genmai. Fruity, rich, and cute. Delicious. ☺️🍶 The day's lineup was full of sakes to suit our tastes and some great first encounters, making for a very satisfying end to a very satisfying day 😊. Thanks for the treat 🍶.

For some reason, I buy a bottle whenever I see it 🍸. I didn't notice any aroma and thought it was a delicious fruity sake at first sip, but from the second sip, it seemed to change to a sweeter taste. Alcohol content: 16%. Rice polishing ratio: 49 Rice: 100% Miyamanishiki

I have been drinking carefully little by little since New Year's, and it is now February. I can't drink to my heart's content because I'm too concerned about my health, but I can enjoy a cup of sake in a cup, and it soaks into my body. It has a nice aroma and is so tasty that you can enjoy it forever. It is a beautiful sake. As expected, it has less schwarziness than the first time I drank it.
