This is the first sake of the Tokyo meeting with high school seniors. This is today's recommendation, they said. It is rich, sweet and mellow. It has a gorgeous aroma and an alu feel typical of sake, but I think the sweetness stands out. We paired it with sashimi😊.

Here is the third installment of our post-run, self-indulgent drinking comparison from yesterday. Kachikoma draft, Sogape, and this Shinmasa. A side note. When I was running around Tokyo Tower, an elementary school boy who was on his way home agitated me and I had to dash as fast as I could 😅 I was in a dead heat with him, leaving my husband, a slow runner, behind 😅 "Are you sure you want a husband like him, now you can start over. Money?" He said 😅. On a quieter note. This Shinmasa is a re-finish kijo sake. It is a Murasaki Yatagami, which was re-finished with the addition of Yo-no-Tori. It has a rich, austere, and rich sweet flavor, and the acidity that is typical of Shinmasa seems to be a little hidden. It has an austere aroma and a full-bodied flavor, more like brandy that has been aged for a while than sake. It is difficult to find at a reasonable price, so it would be good if it were a celebration of some kind 😊.

Continuing from yesterday, here is the Shinbashi corner after the run. This was the second round of a self-serving comparison of Kachikoma, this Sogape, and Shinmasa's re-premium sake. It is a three-way comparison among the members with strong personalities. My personal favorite was this Sogape as the best 😊. When you take a sip, the acidity and sweetness of the ripe grapes come rushing in, but as you would expect from Sogape, it finishes smartly and smoothly. There is bitterness and astringency, but it returns to wash away the sweetness of the first half, leaving a subtle aftertaste. As one would expect from a wine of this caliber 😆. But I've never seen a 1,500ml bottle before😅.

This is Shinbashi after my run 😊. Planned to go to IMADEYA but sunk in Shinbashi🤣, here is the second part. KATSUKOMA! Oh! Raw!!! So we ordered it. Sogape and Shinmasa's most precious sake to accompany our drinking comparison. I see that this one is also a draft, but with aloso. It is rich and has the classic heavy feeling of a Japanese sake. It was smooth on the tongue and tasted like a dark whiskey 😊.

Today's run was home -> Imperial Palace -> dentist -> Shinbashi. Final stop is Shinshu Osakemura 🤣. Oh! Kawanakajima Genmai! I was disappointed that they didn't have the "stubborn table" that brother takeshon is so fond of, but I decided to try the Genmai, which is a brewed alcohol that can be manipulated at will. Mmmm. It is not alcoholic, but it is a refreshing food wine. It has a perfect balance of greefiness, astringency, bitterness.... In a sense, it's like an announcer's narration with a restrained personality, but still memorable 😊.

Golf⛳️ return Hasegawa, three types of drink comparison on your own, the last Banshu Isshu Ikkyo. As the name suggests, it tastes like spring itself. It has a silky texture with a slight sizzle, a clear acidity, and a hint of sweetness, umami, and spiciness, all in good balance. All Yamada-Nishiki produced in the local area of Yoshikawa in the Special A district is used. This was my favorite of the three 😊. It makes me happy when I drink it. This brewery specializes in food sake. I had a selfish image that when it comes to food sake, spiciness precedes it 😅, but this sake overturned my assumption in a good way 😆. From the website below. I see the sake breweries are also doing a lot of creative things! Gravity System" → Sake is not first collected in a dripping jar after the top vatting, but is moved directly to a lifting vat at the bottom of the hill by gravity alone, without using a pump. The next day, the sake is bottled in a clean room. By minimizing stress on the liquid, we have succeeded in bottling the sake as it is, with all its original qualities intact. Shin Gin Mai" (milled rice): By shaving the rice in the direction of thickness, the necessary components are left and the proteins on the surface layer are efficiently removed. Even with the same rice polishing ratio, "Shin-Gin" sake has a lighter, cleaner flavor.

Golf⛳️ return Hasegawa, the second of three types of drinking comparison, is Mr. Yamakawa. If it is said to be white malted rice and citric acid rich, I can't help but drink it as a sour taste lover. The label says "Yogurt 400g. I chose it because I thought it means that it has added acidity. The sourness is sourness, but it is not the strong sourness of Shinsei, but a soft sourness like the slightest hint of spring. This muscat juice has a clean melon flavor, without any al-ness. Looking forward to spring😊. We had it with sakekasu cream cheese, as they recommend marrying it with fermented foods.

On my way home from golf ⛳️ again, I got sucked into a corner of Hasegawa at Tokyo Station😅. Today, I'm comparing 3 different kinds of sake: Omine, Yamakawa Mitsuo, and Banshu Ikken. I thought I couldn't drink them due to my bowling-like score and lack of sleep, but I couldn't resist the temptation😅. First, Omine. When I drank it before, it might have been fire-roasted and dry, and I was not so impressed, but this one was fresh and light nigori. This one was raw light nigori, which turned out to be the right choice! Pale muscat with a hint of spring, and a clear but not clingy gentle sweetness. Spring is just around the corner 😊.

Lunchtime sake running, the third part of the drinking comparison. I don't know if I can say I drank a trace amount of ⁉️, but it was delicious + interesting🤣, so here's a reminder. Ah! I asked for a bottle of "ikumi," and the guy at the restaurant who talked about Nirvana Turtle so enthusiastically said, "Ah! I asked for a shotumi, and the restaurant manager who was so enthusiastic about Nirvana Turtle said, "We just finished. Gah 😭. However, he asked me if I wanted to see the bottle, and even put it in a plate 🤣 because there was a little bit left... God bless him ⁉️ You can't see it in the picture 🤣. The taste is thick, thick, sweet, and mellow, though only slightly so. It doesn't have the clear acidity of the White Imi, but I tasted a tiny bit of pineapple 🍍dark sweetness. I would like to drink it in a glass or a boar's mouth next time 🤣.

Lunchtime Sake Comparison Running, Part 2. Nirvana Turtle. I asked the owner if it was a coincidence that the menu was in a state of Shinsei festival ⁉️. He told me that the manager doesn't drink alcohol but he has a connection with alcohol 😅 and he sometimes comes with more Shinsei than he can serve! (◎_◎;) Nirvana Kame is a 90% low-pasteurized sake, and after he gave a grand presentation saying "Look how dark it is, it has a unique flavor! I thought ⁉️, but the waiter said "I've never had it because I don't have any money". Too funny 🤣. Let's talk about the quiet taste. First, bitterness, sourness, and astringency come with a gusto, but they disappear as quickly as water. A little spicy, I guess. The sweetness is just a little at the end. According to my husband, who is not a drinker, it is the opposite of Hato Masamune. It is a kind of sake that gives me a feeling of "Zen" purity. I've only ever done zazen 🤣.

Another daytime sake run 😅. Today is another 3 kinds of ⁉️ drink comparison @ Yokohama. This is Hato Masamune from AQE PROJECT Vol.2 "Ichiki Nikai". Actually, this is my first Hato Masamune. It starts with the sweetness of ripe apples, followed by sourness, and ends with a crisp, spiciness that is typical of Japanese sake. My husband, who is not a sake connoisseur, is smugly explaining to me that, contrary to Nirvana Kame, which we compared, the sake-like taste remains softly at the end 😅. I chose this one by chance, but I see it is a popular sake! Following yesterday, we are blessed to have the restaurant 😊. Reprinted from the website below. ↓↓ What is AQE? AQE stands for "Aomori Quattro Esperanza" and is the team name of four volunteer breweries in Aomori Prefecture. Quattro" is the Italian word for "four" and "Esperanza" is the Spanish word for "hope. The name "Quattro" is the Italian word for "4" and "Esperanza" is the Spanish word for "hope. Following the first "Spring Drop", this is the second "Ichigo Futae". Two AQE breweries will team up to brew a junmai daiginjo.

After a three-drink kaku-uchi at GINZA SIX, we went to a nearby Aomori restaurant. I went for the sujiko natto donburi, which was introduced by ⁉️ Instagrammer Foreign Deb, a famous meat lover, but I knew that Aomori is famous for sake ‼️, so I had this one. I thought it might be Tasake or Toyohai, but since I was there, I went for my first sake. It has a gorgeous sweet rice softness and a slight elegant acidity. It has a freshness that can only be found in nama-shu. Served with local Aomori cuisine such as suji natto donburi, Kuroishi tsuyu yakisoba, etc. 😊.

This is the third sogape for drinking. At 🤣GINZA SIX in Ginza. As a side note, many of the sake drinkers are young, fashionable people. Even here at the corner shop, there was a boy with a beautiful face like a Korean idol who was seriously enjoying sogape. Oh, it might have been Mr. Manachie. ‼️ A quiet word. When I saw sogape being served at the corner bar, I didn't hesitate to ask for it. I added two kinds of doburoku (a kind of sake made with soy sauce and sugar) as an afterthought, which was serendipitous and a bonanza. The sogapé was stable and delicate, with a well-balanced sweetness and acidity. As one would expect from a winery, it was like a white wine. The Korean man who attended the corner club, who lives in Los Angeles & was born in Australia but somehow bought a house in Osaka, described it as "Beautiful‼️" and I think it is a globally acceptable drink as it should be 😊.

The doburoku. This is my second cup at IMADEYA in GINZA SIX, Ginza, Tokyo. I was so excited to compare the taste of Doburoku with Toonoya's Gonka, but the acidity and peculiarity of Gonka was so strong that I felt the taste of Toonoya's Doburoku was just ordinary 😅. The rice has a mellow, sweet, and thick flavor. Yeah, it's the national beauty girl's deliciousness 😊. On a side note, the brewer of Kuheiji was giving a lecture on the wines made by Kuheiji at the Enoteca wine shop in GINZA SIX.

It was shockingly delicious 🫢. I asked for a doburoku of rice and agape, including sogape, to compare and was awakened by its sour, spicy, and greefy taste. It also has a deep lactic acid taste. This is amazing! This is the corner bar of GINZA SIX and IMADEYA after my run. There were many foreigners there, and some of them showed a photo of Shinsei's Ame Frog to the waiter and said they wanted this one😅. We also made friends with a Korean guy who lives in LA and was born in Australia during the kaku-uchi, and he told us that he came here to buy San-Do and Shinsei No.6. Unfortunately, IMADEYA didn't have it, but we introduced him to an izakaya in Tokyo that has a lot of Shinsei 😆. A quick word of caution. This one was sold in the store and was priced at ¥3,630 for 500ml, but I didn't hesitate to take it home. Here is an excerpt from the label This sake is a special "doburoku" brewed in a wooden vat using the "mizumoto brewing method" from the Muromachi period, without using any association yeast, lactic acid for brewing, or chemical additives. The strength of the natural yeast, lactic acid bacteria, and various bacteria that resonate with the yeast and lactic acid bacteria produces a complete fermentation process that takes more than 150 days for the unrefined sake.

Inspired by everyone's posts and comments, I had lunchtime sake again during my run. Soba and sake are an iron plate combination. This one tastes like a rich melon and smells like a melon too 😅My husband, who is not a drinker, says it tastes and smells like a melon. It is a sweet, deep, low acidity, classical sake. The alu feeling is felt deep in the melon taste, but it is not bothersome to children. Yum, great daytime sake! It's been a long time since I've had Tobiroki. When it was recommended to me before, I thought it was a little too spicy for my child, so I avoided it for a while. But today, after drinking Kangiku and Senkyoku, I thought it would be okay if it was a little spicy. As a result, I was right. It had just the right balance of sweetness and spiciness.
