I tried this zanso yomogina before at a French bistro in Kichijoji (lol) and it was delicious. My husband, who is a gentler drinker, happened to buy it in Kichijoji. One sip and it was fluffy and a little soggy. It is a sweet, dark, sweet and sour apple. It has a complex layered flavor that leaves a little astringent and sour. Yeah, it's delicious! I thought "Yoroku-shiki⁉️" and looked it up... The name "Shirokushiki" is a Japanese word for "Shiroku" type, which is a combination of the word "Shiro" for white malted rice type and "Shiki" for white malted rice type." (excerpt from the product guide). The label on the back of the bottle reads, "The acidity is 3.2, which is almost double the national average for sake! This is my favorite, as I love sour sake. However, it is not all about the sourness, but a well-balanced and beautiful sake. Ah, happiness 😊.
