This is Soga's Trois 5BY. I couldn't drink it in Nagano, so I decided to open it after I got home from my trip 🥂. First, I drank it cold. The first aroma is sweet with a hint of raw hiney. When you put it in your mouth, it has a mild sweetness with a hint of acidity. The flavor is well balanced, but there is a unique raw hiney aroma unique to Obuse. This is the reason why last month when flos_lingua_est drank a 4.5 year old wine, he said it would be good to let it sit for about a year 🤔. Then hot sake 🍶. The top aroma is the aromatic aroma of heated nama sake. The top aroma is the aromatic aroma of heated nama sake 🤤. In the mouth, it has a clear and mild sweetness with a slight acidity. The aroma of nama-hine is not bothering me at all, it's well-balanced 😊. Obuse should only be heated if you're curious about the raw hiney 😤. Just kidding 😜! The third and fourth pictures are of Obuse Winery, about a 15 minute walk from Obuse Station on the Nagano Electric Railway Nagano Line. No photos inside the winery as photography is prohibited, but we tasted 7 different wines and bought a bottle of wine at the store before leaving 😊. I asked the staff at the kiosk about the sake, as it was a weekday when I visited, and they told me that they are preparing sake earlier this year compared to previous years. Is Soga going to do something new? I'm not sure 🙄 ...

Alcohol content: 15 Miyamanishiki Polishing ratio: 59 I finally had a chance to drink Sogape, which I had wanted to drink for a long time. The aroma is similar to that of ginjo. The taste is between that of sake and wine, with a predominance of bitterness and acidity. Incidentally, like wine, it was 750 ml, so it was the same as a bottle of wine.

I finally opened a magnum bottle because I had to open the refrigerator in preparation for the new sake! Perhaps because it was left to rest, I feel that the acidity of the No. 6 yeast has been preserved, but the minerality has increased. The acidity is a little strong and sweet, and the minerality gives it a nice kick.

Here's another one I put to sleep. I don't know when to take it 😂. It has the feeling of a fresh yeast yeast, but the fruity freshness is like a white wine 🥰. I drank it over a few days and it didn't change (deteriorate) that much, it was delicious 😋.

A glass of wine with a full-bodied aroma. Sophisticated and elegant taste. Sweet, but clean and free of cloying flavors. Mild acidity. Slight bitterness. Enjoy the aroma. When served in a boar cup, the aroma is not so strong, and you can feel more sweetness. Muscat flavor. Very delicious. Serve with kabokki, cheese, yellowtail marinated in soy sauce and malted rice.

I made crab cream croquettes ❗️ So I'm going to open ❗️ 🥂. Western style cooking, rich cream and crab, I consulted with my refrigerator and decided on 🧐Sogape-sama🥰. I also added cured ham and sake lees cream cheese to the menu and it was a very rich and thick dish, but I think it went well with the strong flavor, acidity and spiciness of Sogape-sama. I also think it goes great with the salted mackerel I added to the menu ‼️🥰 lol. Sogape-sama has a surprisingly western atmosphere, but it seems to go well with Japanese home cooking 🩷. I love Sogape-sama😊 Can we drink Sogape-sama next season?

Glad to drink this again this year 🥹. Opened the bottle after letting it sit for a little more than 6 months 🍾. Fruity and refreshing acidity✨ It tastes like something between wine and sake. It can be paired with a wide range of food 👼. It's amazing that they can make such a delicious sake in between making wine 😳. Obuse-san's main business, wine 🍷, is also excellent, but I've only had red wine, so I'd like to compare white wine and this one 😋.

Is Numeroan surprisingly sweet and sour? I thought it was a bit sour in the first glass or two. As the temperature rises, the sweetness is more noticeable. As usual, I'm not sure when to open it. I opened it on a day when there was an Italian menu to look at. The nose is wine-like acidity, muscat. When you drink it, it is chili chili with soft rice sweetness and wine-like acidity. It is sweet and delicious, but light and easy to drink. I thought it would become sweeter with the passage of time, but it turned out to be more refreshing. While it is rich and sweet, it has a wine-like acidity that keeps it from becoming too deep. Delicious with cheese. After a week, it suddenly became a juicy Muscat! At first, the sweetness seems to deepen, but then it takes a sharp turn and breaks off with the sweet-sourness of the muscat. It is also delicious! I could drink it slowly and enjoy the taste change 🍶.
