Western style cooking, rich cream and crab, I consulted with my refrigerator and decided on 🧐Sogape-sama🥰.
I also added cured ham and sake lees cream cheese to the menu and it was a very rich and thick dish, but I think it went well with the strong flavor, acidity and spiciness of Sogape-sama. I also think it goes great with the salted mackerel I added to the menu ‼️🥰 lol.
Sogape-sama has a surprisingly western atmosphere, but it seems to go well with Japanese home cooking 🩷.
I love Sogape-sama😊 Can we drink Sogape-sama next season?

Good evening, Mr. Hissan. I found out after I bought it last year that this place used to make sake. I drank it thinking that the DNA of sake brewing was still alive. I believe that the taste of sake includes the persistence and history of the brewery. I think it's the taste of sake.

As usual, I'm not sure when to open it.
I opened it on a day when there was an Italian menu to look at.
The nose is wine-like acidity, muscat.
When you drink it, it is chili chili with soft rice sweetness and wine-like acidity. It is sweet and delicious, but light and easy to drink.
I thought it would become sweeter with the passage of time, but it turned out to be more refreshing. While it is rich and sweet, it has a wine-like acidity that keeps it from becoming too deep.
Delicious with cheese.
After a week, it suddenly became a juicy Muscat!
At first, the sweetness seems to deepen, but then it takes a sharp turn and breaks off with the sweet-sourness of the muscat. It is also delicious!
I could drink it slowly and enjoy the taste change 🍶.

I think it still has a wine-like quality, so it went well with Italian food 🍝😚.
The taste is so different from sake that it is almost like a white wine. It has a sweet aroma but a strong acidity that refreshes the palate. It is a sake that can be served with both Japanese and Western food.
This is a very well balanced Ria from Sogapé that has been aged for several years. I have the impression that Lia is a very well-balanced liquor, but I wanted to experiment to see what would happen if I let it age for a few years (I can't really say that I just missed the timing to drink it)! It has a floral aroma. When you drink it, a honey-like sweetness spreads along with the aroma. I feel like I can make friends with butterflies when I drink this kind of sake.
The bitterness is about 3.5 out of 10, so it is a very good accent. It has a presence like honey in curry with a little more of it.
It seemed to be similar in direction to Shinshu Kamerei, which I was drinking just before. Both are good sakes with a tropical aroma reminiscent of the tropics in a refined manner.
It is good to drink right away, and it is also good to let it sit for a year or so. I think it is best to let it sit for a year or so.

The aroma was almost imperceptible. The mouthfeel is mild. It has a sweetness like a thick honey 😳Murayu. The acidity comes in slowly and finishes it off.
I felt the sweetness was the thickest ✨.

It has a subtle aroma of aged grapes, with a full-bodied sweetness that sticks to the tongue. The sweetness is somewhat like Omachi, with a hint of acidity and a mild bitterness in the aftertaste.

By the way, Sogape-san is a completely self-serve standing bar with a cork, so you have to pull the cork out yourself 🤣.
The aroma is not that strong, but it smells like matured grapes 🍇. It has a full-bodied sweet and sour taste with a good balance of acidity. I also felt a little bit of gas.
