A friend of mine gave me some of his precious sake to share with you!
There is no picture of the package, so I drank it believing in the contents of the small bottle 🍶 lol
It is a sake made by a winery, so I got the impression that it has a refreshing sweetness, but with a high alcohol content that leaves a lingering aftertaste!
I still have about half of it, so I'll drink a little bit at a time! LOL!
It is also different from conventional sake in that it is brewed in wine facilities, has a rich aroma like white wine, and is sold in white wine bottles. It is very rare and difficult to obtain due to its limited production time and short quality assurance period of 3 to 5 months. Sake is not sold directly, and if you wish to purchase it, it is very important to be persistent and frequently check the information of the distributors.
Sogapère Ephis is characterized by the use of Association No. 1 to No. 6 yeasts and the use of sake brewing techniques. In particular, yeasts No. 1 to No. 5 were thought to have disappeared with the times, but Obuse Winery preserved them for 70 years. Each brand has produced unique flavors that make the most of the characteristics of each yeast. The sake rice used is Miyamanishiki grown in Nagano Prefecture."
The stock of Socapère, which is said to be drunk a lot but has not been turned over that much. There are still 4 or 5 bottles of Socapert in the refrigerator, but they can be aged for a long time, so I put them off. I think it doesn't matter whether I drink it right away or let it sit for a while, it tastes so good that I can't help it.
The color of the liquid is a little yellowish. I wonder if it is the result of aging.
What kind of fruit is it? It seems to have a hint of grapes or apples, perhaps because it is made by a winery or because of the image of Nagano. But there may not be anything special about it. It is moderately ripe and juicy with a certain elegance, or maybe it is like a mango after 3 days!
I liked it when the temperature was higher and I could taste the flavor.
I had the impression that numerosis was a refreshing wine right after its release, so I had no idea that it had become such a juicy wine, but it is very tasty. The rear is good whether you drink it right away or let it sit for a while. If you want to taste the ripe fruitiness, it is better to let it sit for 2 years.

They have a variety of different yeasts, but I like them all so much that I can't say which one is the best. This #6 yeast version is my favorite among them: ‼️

I received a bottle of Numero Sisu from Sogapeur et Fis.
This sake is produced by the winery only during the winter months.
It is made entirely from Miyamanishiki grown in Nagano Prefecture and brewed in the classic ikamatake style. They also make sake using yeasts No. 1 to No. 5, which are not even kept by the Japan Brewers Association.
The sake we received this time was produced in March 2024.
I was lucky enough to be able to purchase both the Domaine Ikeda lot and the normal lot, the latter of which I was able to purchase.
The manufacturer's quality guarantee expires at the end of May. Even though it is stored below freezing, it has been 9 months since purchase and 6 months since the expiration date.
Perhaps this in-house storage was a good thing, because at the time of tasting it tasted fresh at best, or green and hard depending on how you look at it, but it seemed to have lost some of its angularity, softened, and gained a fruitier feel. Perhaps it is a preconceived notion, but while there are apple-like nuances typical of Nagano sake, you can also enjoy the fresh acidity of a white wine.
According to the label on the back, after the quality assurance period, it "may become a SAKE with a super-geeky aroma and taste." But personally, I was lucky because it changed in the direction I liked.
I guess it is about time for it to start appearing again this year.

This is Mr. Soga's Riasake Naturel 🥂.
This will be the last sake of Mr. Soga's 6BY at Master's store.
The first aroma is a sweet aroma with a slight Obuse flavor.
When you put it in your mouth, it has a slight acidity and a moderate sweetness.
It finishes with a slight astringency that is typical of Miyamanishiki.
It was delicious with just the right amount of flavor. ✨️🥂

My friends and I were taken to Sembello. We found an extraordinary rare gem. I would recommend it to women as it has a wonderful taste with a hint of sake and a hint of white wine.

I couldn't drink it in Nagano, so I decided to open it after I got home from my trip 🥂.
First, I drank it cold.
The first aroma is sweet with a hint of raw hiney.
When you put it in your mouth, it has a mild sweetness with a hint of acidity.
The flavor is well balanced, but there is a unique raw hiney aroma unique to Obuse.
This is the reason why last month when flos_lingua_est drank a 4.5 year old wine, he said it would be good to let it sit for about a year 🤔.
