Sogape bought for me by a junior colleague. The last one was not to my liking. It was probably because it was purchased in the summer and past the fresh sake quality assurance period. This time it was freshly made! I opened the bottle and smelled the aroma...maybe I'm not a fan of No.6 yeast nama-shoto zukuri. The aroma is similar to that of Shinmasa's ecru and flax cat,,, the taste is refreshing and delicious!

Obuse Winery's sake, which I happened to find and was able to purchase, is said to be made with yeast #1. It has a gorgeous aroma and a refreshing aftertaste with acidity. It had a nice sharpness and would go well with both Japanese and Western food. When I used to live in Nagano, Obuse was all about chestnuts, wineries, and hot springs. I enjoyed this wine with nostalgic memories.

The first one is Sogapère Ephis Numérosis.
I look forward to this one every year, but the timing of purchase at my favorite liquor store is critical!
This year I was able to buy a magnum bottle from the first shot!
Its taste was fruity but with a sharpness and acidity that I enjoyed!

Sogape's Riasake Naturel Tenjinbara🥂.
They use Miyamanishiki🌾 produced in the Tenjinbara area of Takayama Village, next to Obuse town.
This one was also freshly ripened for about 10 months.
The aroma on the nose is soft and sweet with white wine-like acidity.
In the mouth, it tastes like cork or wood.
The taste has clear acidity and a beautiful sweetness with a hint of cane sugar.
The taste is finished off with a slight astringency.
It was the second most beautiful taste after No.6 Normal and No.3.
It was delicious ✨🥂.

A fresh sour aroma rises from the bottle when you twist the screw. When poured into a glass, it has a cute sweet aroma with a hint of a traditional sake yeast yeast.
The light, refreshing sweet and sour taste in the mouth has a hint of green, lemon, and a hint of wine yeast...it's so good you won't believe it's sake....
