(1) Riasake Naturel 70 Domaine Takou
Cultivated by Ms. Sayoko Takou, this is a pesticide-free Miyamanishiki with a 30% reduction in yield.
Less than half the yield of ordinary Miyamanishiki. The low protein content of the rice allows the sake to be rich in flavor without cutting it down unnecessarily.
Mixed fermentation with No.1 to No.6 yeast. Mixed fermentation with No. 1 to No. 6 yeast.
(2) Ria Sake Naturel 70 Tenjinbara
Cultivated by Masamitsu Yamazaki in Tenjinbara, Miyamanishiki without pesticides. Miyamanishiki without pesticides.
Tenjinbara is located at an altitude of 800 meters in the sky. The spring water from Misasawa is cold, so the hanging time of the unhulled rice is unusually long, making it a harsh and ideal place for Miyamanishiki.
Mixed fermentation with No.1 to No.6 yeast. A very small amount of this sake was released, and it was made with a traditional sake yeast.

I got the impression that it was sweeter and rounder than the Sisu Ikeda lot I had the other day, with a distinct acidity. I didn't drink them at the same time though 🤭.

The fifth glass was Sogapère Ephis! This was another sake I had seen at Sakewa and wanted to try, a 2022 sake. It is made with Association No. 2 yeast.
It has an aroma like a noble rotten grape, a slightly sweet dessert mouthfeel, and a sweetness and flavor like a dessert wine. It was finished with a crisp finish.
