Sake made by Obuse Winery in Nagano.
It seems to be very rare, as it is made during the short time when the winery is not working.
I was originally a wine drinker before I got into the sake swamp, so I was very interested in sake made by a winery.
The aroma is subdued but promising, with a fresh sweet acidity like that of white grapes.
The taste was complex yet sweet and sour, and both my husband and I found it delicious (and would drink it again), so I think it is a delicious sake, except for those whose tolerance is extremely narrow.
It has broadened my world again.
Polishing ratio 70%, alcohol content 15%, 100% Miyamanishiki produced in Nagano Prefecture.
Mixed fermentation of No. 1 to No. 6 yeast and natural world bacteria. I thought Obuse sake, packed in wine bottles, resembled white wine, but this is sake. No wonder. The sweetness of the rice is the main flavor, with little acidity. But not too sweet, and at 70% polished rice, this is excellent.
Mixed fermentation of Soga Pale Ephis No. 1~6 yeast and natural fungi, Ria Sake Naturel.
Sweet and sour ginjo aroma, as is typical of Soga. The palate is clean, with a slight sweetness that comes in easily, while the taste is quite robust for a sogasake, with a sense of umami and alcohol.

Normal rod
The color was the same as the Ikeda rod, and when you put it in your mouth, it was light and shrieky and tangy on the tongue, and the taste was mellower than the Ikeda rod.

The aroma is reminiscent of rum and on the palate, there is a subdued sweetness followed by a slight bitterness.
