On Wednesday, not wanting to miss out, we bought tuna sushi and shime saba (mackerel) 🤭Gis was also on sale so we fried it, and the only other thing we made was a special potato salad 😆🩷We also had cream cheese and mamekabu while enjoying it: ‼️
The aroma and flavor spread out differently from sake ✨It went well with sushi, cheese, fried fish, and mekabu in Japanese soup stock, but the shime saba (mackerel) made the fishy smell stand out a little more.
However, the shime saba (mackerel) seemed to accentuate the fishy smell a little bit.

The name of the sake is "100 years ago" which is a mixture of various thoughts in the history of mankind and the history of sake, and the sake is brewed with #1 and #2 yeast which existed 100 years ago.

All of the flavors that make up this sake are very elegant.
It is a Japanese rice wine 🍶 that is brewed by a winery and is a little different from sake.
I can't explain it well, but that's my impression!

This is a normal lot 2024 in Sogape 🥂.
The top aroma is sweet with a hint of acidity.
The palate is refreshingly sweet with a hint of astringency and a touch of acidity from the sake's origins.
It has a slight astringent taste and the acidity of the sake's yeast gives it a sharp finish.
It is similar to the image I had when I drank it last March.
It should be allowed to stand for a long time until the astringent taste disappears and the flavor is fully developed.
This is Domaine Ikeda 2024 from Sogape.
This will be the first time I drink it soon after its release.
The top aroma is slightly sweet.
In the mouth, it has a light, juicy sweetness with a hint of a richness like that of wasanbon.
It has a clean taste without the astringency that I felt when I drank it last July.
It will surely be good when it gets more flavor from now on, but it's good enough even now 😊🥂✨️
