Welcome Spring with Iga Sake (5) Iga Sake Fair this spring. The last one is a matured sake. Mie Nishiki's super-harsh junmai. First at room temperature. Pale gold in color. The top aroma is gently rounded, with an aged aroma reminiscent of fermented butter. From the slightly thickened mouthfeel, The mild ripeness of the mouthfeel The taste of rice is thick and round, The finish is capped off with acidity and bitterness, while leaving a lingering astringent taste and the umami of rice. The water content seems to have been adjusted, It is easy to drink, yet the thickness of the rice flavor can still be felt, which is typical of Mie Nishiki. When heated, the acidity and bitterness become more pronounced, and the richness of the creamy rice is more pronounced. Umu-umu-umu. Mie Nishiki is no longer brewed. 7/10 Assemblage 5 with a "I can't write anymore" feeling. So this means I drank from 2 to 5. The taste is definitely different from 3 and 4, but the image of complexity with layers of flavor remains the same. Rice used is unknown. According to the owner of the sake shop, the sake is aged for three years, but there is no strong sense of aging, and it is a dry junmai-shu with a good acidity. It is a dry junmai-shu with a lot of acidity. The sweetness that spreads fluently and the spicy astringency in the latter half are very unique. After a few days, it becomes more crisp and easy to drink. For my taste, I'd like to have more of a woody or smoky flavor. Either way, it's not a type that will appeal to everyone. The mainstay of this brewery is Yamahai brewing, so it will be interesting to see how peculiar it is.

It's not a great deal in terms of price, but I look forward to it because it contains brands that I don't usually buy. This one has the sourness that is typical of a traditional sake brewery, but when you drink it lightly, it is refreshing, and as you continue to drink it, the sweetness comes slowly. As the day goes by, the sweetness will increase even more. The sharpness is not that great, but it is not overpowering either, making it a good all-around sake. The price is less than 1,000 yen without tax, but I️ think it's quite competent.
