I wanted to try this sake from Shimane Prefecture after reading about it in a manga. I'd like to use kanmakase, but I would like to use Kanmakase, but it is recommended to drink it cold. The aroma that rises is fluffy and fruity. It's not a very strong aroma. In the mouth, there is sweetness, umami, and acidity. The thickness is moderate. The aroma is also kind of nice and spreads in the mouth. It reminds me of ramune. The mouthfeel is like a model of a modern type. From the mid-palate, there is a bit of bitterness, but it also has a chocolate-like nuance. The sharpness is moderate. It's a good modern type of sake that is well-balanced. My wife calls it a sparkling type. I'm not sure if this is an appropriate analogy. It tastes like a light Genmai. It can be enjoyed by itself. By the way, there was a pink nigori in dancyu. Conquered all the breweries in Kochi Prefecture 16/18. Two more breweries to go. For snacks, I bought a copy of "dancyu", a magazine that I enjoy this season. I can't resist buying it. The number of sake I want to drink increases again. This brewery is located in Kami City, Kochi Prefecture. They also have a brand called Matsuo, but this time I decided to go with Yamada Taiko. The aroma that comes up is a bit like cooked rice. In the mouth, there is a crisp umami and acidity. It is a hard sake. The umami is not so thick, but it is heavy. The acidity is there, but it is not fruity. It has a unique grassy flavor. It has a similar atmosphere to the Takiarashi I drank the other day. For better or worse, it does not have a sophisticated modern taste. It is more of a classic type. From the mid-palate, a light bitterness and spiciness emerge, and the sharpness is good. I feel that the sharpness is common to all Tosa sake. When served cold, the impression of this sake is too stoic. It seems to have been cut down to the bare essentials. When warmed, the flavor swells to a good level. If you pair it with a meal, you can drink it as if it were water. Preferred: 72 points

After reading someone's review of Sake-no-Wa, I really wanted to buy this "Kanmakase" from koizumi. My wife gave it to me as a Valentine's Day gift. Thank you very much. It's a great product that heats up to your desired temperature and keeps it at the same temperature. I stocked up on Tamagawa to go with the heated sake. We started with a cold sake. It doesn't have much of an aroma, but when you put it in your mouth, it reminds you of whiskey or other distilled spirits. I think I felt this aroma when I drank Icebreaker. And it's thick! This is one of the strongest I've had in a while. The alcohol content is 17 to 18 degrees, which is about right, but it's just so rich. The first taste was sour, followed by a thick taste of rice and alcohol. This is the same feeling that you get when you drink whiskey and it makes your esophagus feel hot. The sharpness is good, but at the end of the drink, it has a flavor like Shaoxing wine. Then I heated it up. Oh, it's much softer. The thickness remains the same, but the texture becomes gentler. I feel like I'm drinking a high-quality (thick) soup stock. I'll be using it a lot more in the future, since I can easily enjoy a variety of heated versions. Liked: 88 points

I like it a lot and have drunk it several times, "The Wind Blows". Was this your first time with the red label? The aroma that comes up is mild. It has a slight rum-like aroma. A gentle sweetness spreads in the mouth. The acidity is also moderate. The thickness is moderate, not too strong, but not too weak either. The flavor is like a rice soup stock, and it is perfect as a food sake. There is a slight bitterness and spiciness from the mid-palate. In the aftertaste, the bitterness, spiciness, and umami linger a little. Kaze ga Fuu reminds me of Furozumi, which is a Kinki sake. By the way, I haven't had any Furozumi recently. I can drink this kind of sake endlessly. The aroma is mild and gentle, and it's a well-balanced sake that you won't get tired of drinking. I like it 90 points.

This is the Bijou version of the famous Kameizumi cel-24. I've always wanted to try this sake. I've drunk Bijou several times, and I have the impression that it is a refreshing, dry sake with a nice aroma that is typical of Kochi Prefecture. The aroma that rises is not strong, but it reminds me of pineapple or well-ripened melon. There is also a hint of gas in the nose. In the mouth, the sweetness is there, but the refreshing acidity reminiscent of fruit is impressive. It is also reminiscent of pineapple. The alcohol content is 14 degrees, so the sake is light. The light sweetness, umami, and clear sourness are still there, but from the middle of the bottle, there is a slight bitterness that reminds you that this is alcohol. And the sharpness is good. It is refreshing. It's been a couple of years since I last drank Kameizumi's cel24, so I'm not too accurate, but this is delicious. It's totally fine on its own. I'd like to compare Kizuki, Kameizumi, and Bijou, all of which have cel-24 yeast, at the same time. Tsukabotan also has a cel-24 yeast sake, and I'd like to try that as well. I think I'll make it my goal this year to try all the cel-24 yeast sake. Favorite 91 points

This is one of the undrinkable bottles for this year's goal of conquering all 18 breweries in Kochi Prefecture. With this sake, I have 15/18 breweries. The aroma that comes out of the bottle is faintly tinged with alcohol. In the mouth, it has the atmosphere of a classic sake, but with a unique aroma. There is a herbaceous and earthy aroma in the back that combines with the sharpness of the alcohol. It also has a sweet and savory taste. It's not a modern taste. It's a classic kind of sweetness and umami. The sweetness is like sugar. From the mid-palate, it's not spicy, but it's refreshing. It is easy to feel this sudden crispness in alcoholic beverages, but this is Junmai. The sharpness is a characteristic of Tosa sake. If you drink it by itself, it is a bit quirky. With a meal, it is like water. This sake is far from the words "sophisticated" or "modern. It is a good sake to drink with a meal. When I drank it with a meal, it was gone in a flash. Taste level 70 points

This is the back of Shippotan, which I have drunk several times. Tsukabotan is also synonymous with Tosa's light and dry taste, but the back of the bottle was made with fresh sake, aiming for a fresh and mellow taste. It doesn't have much of a rising aroma. When you put it in your mouth, you get a little bit of the muscat-like aroma that is typical of nama-shu, but soon the acidity comes out and it becomes more apricot-like than muscat. The umami (flavor) is quite thick, and the impression is not that of lightness. The sourness comes out well, so there is a fresh fruit feeling. There is not much sweetness. The alcohol is strong. The aftertaste is refreshing with a slight bitterness. It is a refreshing sake with a firm and thick body. It tastes better after a few days than just after opening the bottle. The third day after opening the bottle, the corners are removed and it becomes round and easy to drink. It is delicious. Taste level 88 points

This is the drink I was planning to drink on New Year's Day. I drank Aki Tora on New Year's Day, so it was just a normal day with nothing special. The aroma that rises up is not very pleasant. On the palate, it smells like a combination of muscat and rhumune. And a piquant fizzy feeling. It's not fresh sake, but it's fresh. The acidity is good. The umami is not so thick, but it is just right for the sharpness of the sake. Every time I drink Morishima, it leaves me with the impression that it is neat and tidy, as if all the waste has been cut down. The aftertaste is also a little bitter, but it finishes off nicely. It is indeed a well-balanced and well-balanced sake. This is a sake made with Omachi rice, but from my impression of Omachi, I found it to be very refreshing. I think this is the character of the Morishima brand. As the temperature rises, the flavor swells. I think I prefer it closer to room temperature. Taste level 90 points

Sake from Kanagawa Prefecture that I finally came across. Various from Kyoto Isetan. The rest is from Nagasaki and Miyazaki prefectures. There's almost no aroma to speak of. In the mouth, it's a classic sake flavor. The aroma is not my favorite. The sweet and savory taste of the rice that follows is moderately thick and firm. A little acidity is also present. The taste is multilayered with a variety of flavor elements. The complex taste elements are well balanced with a moderate thickness. From the mid-palate, it is slightly spicy. The sharpness is good. The flavor of the sake, which is not my favorite classic, is distracting. However, I have the impression that this is a sake that has been carefully brewed. If it didn't have this aroma, I think it would be my favorite type of sake. It went well with the fatty toro tuna. I think the multi-layered flavor was able to catch the fat of the tuna. First time to drink in Tokyo. One step closer to conquering the whole country. The sake brewery is located near Okutama? The scenery of Okutama, where I camped when I was in high school, comes to mind. Incidentally, I found it at Isetan Kyoto. It was the first time I visited there after the Corona disaster, but I got the impression that they have more items from various prefectures than before. I was able to get some sake from Kanagawa Prefecture. I didn't notice much of a rising aroma. When I put it in my mouth, the aroma is quite fruity. The flavor and sweetness are thick and sour, so the fruitiness becomes stronger. The fruity sensation in the mouth is stronger than the aroma at the beginning. It's a melon type. From the mid-palate, the bitterness comes out and the sake flavor becomes stronger. The sharpness is moderate. Medium to full-bodied, with a taste somewhere between modern and classic. It has a good balance. Delicious sake from Tokyo. Taste level 89 points

Sake from Nara Prefecture. I thought I had been drinking Nara Prefecture's sake for a while, but this was my first time. This is the third "Ryu" sake I've had, after "Kuroryu" and "Hakuryu". They are "Black Dragon," "White Dragon," and "Long Dragon," respectively, although I feel that "long" dragons are quite common. There is almost no aroma that rises up. On the palate, it has a complex flavor of apricot, grain, and chocolate. It's similar to a drink I've had somewhere before. I wonder what it is? It's got a mild hiyaoroshi-like thickness to it. I can feel the solid umami. It has thickness. And bitterness. The bitterness lingers in the aftertaste, as if burnt. It's a rich, umami, bitter sake. It is like a Kinki mountain sake. It is a sake to be drunk slowly and well. Taste level 80 points

The other day I went to Okayama to buy some Bizen Pottery as a birthday present. At that time, I found this sake at a liquor store in Bizen. It was a cel version of Kure, which I've always wanted to try. The liquor store was out of most of the Okayama sake, but they had plenty of Tosa sake. I was also disappointed to find that the oysters on the half shell I was planning to buy at the roadside station were sold out. Kure is a representative of Tosa's light, dry sake. However, this is a sweet sake made with Kochi's cel yeast. The alcohol content is also a little low. The aroma that rises is fluffy and fruity. When you put it in your mouth, the melon-like aroma spreads to your mouth and combines with the sweet flavor. It is light and refreshing, so it is not too strong and can be drunk quickly. Although it is not spicy, it has a crispness that does not linger, and surprisingly, it goes well with sashimi. It is a light, sweet and refreshing sake. The label is said to be the image of a melon. It makes sense. I like it 85 points.

I've wanted to try this brand for a long time. I hadn't drunk much Nada sake in my life. Only Kenryo and Sensuke. These two are from the same Nada brewery, but I remember feeling that the quality of the sake was completely different. I'm not sure about Sakuramasamune. I don't feel much of a rising aroma. There's a slight hint of ginjo aroma lurking in the background. When I put it in my mouth, it has a slightly burnt, caramel-like flavor. Oh, this aroma is similar to Kenryo. The flavor of the rice is also thick. Because of the caramel-like flavor, it seems to have sweetness. The taste is rich and mellow. From the mid-palate onward, you can feel the alcohol coming out. In the aftertaste, umami, bitterness, and sourness remain. You can also feel the spiciness. This is certainly a powerful sake, and you can feel the various elements of flavor. It can be used as a sake-within-a-sake. I thought it was similar to Kenryo. I'd like to try more Nada sakes. Liked: 80 points

I celebrated my birthday today. What should I drink on my birthday? This is a very difficult question to answer. It's boring to drink the same drink as usual, but you don't want to miss out on the challenge. In the end, I opened a bottle of Hirotogawa for my milestone birthday. It doesn't have much of a rising aroma. As soon as I put it in my mouth, the gentle aroma of rice, sweetness, and umami spread in my mouth in good balance. As always, it is gentle without any horniness. This is the first time I've tried Kame no O's Hirotogawa, but it's hard to tell the difference unless you compare them at the same time. The taste is somewhat refreshing. The aftertaste is also moderate. There is nothing flashy about it, but it has a good balance and a gentle mouthfeel that makes it unique. It is not to be missed as a sake for eating. I'm glad I chose Hirotogawa. I like it 90 points.

This was the winner of the Tosa Sake Campaign. It arrived at the end of the year, but my wife thought it should be opened on New Year's Day, so we opened it on New Year's Day. So, this is the first bottle of the new year. Happy New Year! The aroma is a modest, clean ginjo aroma. In the mouth, it seems like melon. I thought it might be melon-like, but I can also taste citrus-like acidity. The flavor and thickness are not that great. I think it falls into the category of "light". The mouthfeel is sweet, but it is not really sweet. The spiciness does not stand out. It has a light, umami taste. The spiciness and bitterness do not come out strongly, but the aftertaste is refreshing. It is a delicious sake with a calm and clean impression. I like this kind of sake. I recorded Rui Yoshida's "Ramblings in a Bar" at the end of the year, and it featured Kochi, so I'd like to drink it while sipping Tosa sake. Taste level 89 points

The last post of the year. The last one I opened this year was a sake from Ota Shuzo in Mie Prefecture, which I bought on my way home from work. The aroma that rises is softly Muscat-like. In the mouth, there is sweetness, umami, and a soft acidity. The taste is not too thick or too light, and it has a good mouthfeel. The mouthfeel is soft and smooth. From the mid-palate, the bitterness is felt and the alcohol feeling becomes stronger. The aftertaste of sweetness and bitterness is rather long. I think the Hanzo I drank before had a classic feel to it. This is a modern sake just like the image on the label. I prefer it to be a little more crisp, but it is a beautiful and delicious sake. Nice again this year! and comments this year! Please come back next year! Favorite 85 points
