Sake brewed under contract with local farmers using only rice without agricultural chemicals, which was rare at the time. 1974 Sake was released as "Additive-free Sake - Shizen-go" as an expression of gratitude for the abundant nature of Yabuki.

Sake with a full-bodied sweetness from the rice.
It has a slight effervescence and is relatively refreshing to drink without the melon sweetness that you may find in other shizen go.
The nose is thick and honey-like.
The aroma is quite close to the richness of oak barrels with a distinct vanilla flavor. The umami acidity is hard to detect.
The nose is thick and quite strong, with a sweetness mixed with oak, followed by a thick, short umami bitterness, acidity, and alcohol that gradually leaves the nose.
The oak sweetness lingers on the palate for a long time, not to be outdone by the bitterness that lingers afterwards.
The tongue roughness is only slightly strong.
It is quite cosy!
This is not a regular Shizen-go, but an assemblage of several types of oak barrel-aged and bottle-stored sake.
First of all, the aroma has a hint of oak in the sweetness of regular Shizen-go. It is rather like red wine or whiskey.
When you drink it, a gentle sweetness comes to the palate, followed by a sweetness covered with the aroma of oak, more like a sweet whiskey than a wine.
This is a wine that is not to be drunk all at once, like the Kaze no Mori assemblage, but to be enjoyed over time.

Yesterday, I attended a reunion in my hometown on the occasion of my 60th birthday 😁.
It had been 10 years since the last reunion, but everyone was young and energetic!
I came home early and had this while soaking up the afterglow!
As soon as I put it in my mouth, I felt the sweetness like custard.
And then the oak barrel flavor came in.
