Conquered all the breweries in Kochi Prefecture 16/18.
Two more breweries to go.
For snacks, I bought a copy of "dancyu", a magazine that I enjoy this season.
I can't resist buying it. The number of sake I want to drink increases again.
This brewery is located in Kami City, Kochi Prefecture.
They also have a brand called Matsuo, but this time I decided to go with Yamada Taiko.
The aroma that comes up is a bit like cooked rice. In the mouth, there is a crisp umami and acidity.
It is a hard sake.
The umami is not so thick, but it is heavy.
The acidity is there, but it is not fruity.
It has a unique grassy flavor.
It has a similar atmosphere to the Takiarashi I drank the other day.
For better or worse, it does not have a sophisticated modern taste.
It is more of a classic type.
From the mid-palate, a light bitterness and spiciness emerge, and the sharpness is good.
I feel that the sharpness is common to all Tosa sake.
When served cold, the impression of this sake is too stoic. It seems to have been cut down to the bare essentials.
When warmed, the flavor swells to a good level.
If you pair it with a meal, you can drink it as if it were water.

The only Kochi sake I've tried is Drunken Whale, so I'm interested.
