This is the first of two bottles that I won in the Tosa Sake campaign. It's a Junmai Ginjo from Bijou. I've drunk Biotaiou a few times. I remember it as a crisp and clean Tosa sake. How is this one? The aroma that rises is slightly fruity. In the mouth, the acidity stands out more than the sweetness and umami. Combined with the refreshing fruity aroma that you feel when you hold it in your mouth, it is like a citrus fruit. This impression is a little different from that of Kure or Aki Tora, also from Kochi. The thickness of the umami is moderate. From the mid-palate onwards, there is a strong alcohol feeling, so the moderate thickness is just right. The bitterness also comes out. The sharpness is spicy. It is firmly dry. It is a Tosa sake with a different taste from Kure, Akitora and Minami. It has the same good aroma and sharpness. It is a delicious sake with a refreshing aroma and good sharpness. Finally, I got a sake from Hokkaido. As it says "various circumstances", the Junmai Daiginjo is being sold at a much lower price. It seems to be sold at about a third of the price. The aroma that rises is modest, but it is a beautiful ginjo aroma. The aroma is clear and translucent. When you put it in your mouth, it has a beautiful sweetness and umami. The taste is not angular, but it is crisp and clean. It is really delicious. You can tell that it has been polished beautifully. The volume is moderate for the aroma. From the mid-palate, a little bitterness appears. The bitterness comes out a little in the mid-palate, but it doesn't make you tired of drinking it. The aftertaste disappears quickly. This is a class of sake that I don't usually drink (or can't drink), but it is delicious. I'd like to drink it on its own, but I can't stop drinking it. This is the third campaign of Kochi Prefecture. I drank it at the hotel when I was in Kochi, and it was so good that I went to the brewery to buy it. I drank it after a long time. It doesn't have much aroma. When I put it in my mouth, it has a flavor that I don't like. It smells like a classic type of sake. However, it doesn't last long, and after that, you can feel the refreshing taste of rice that is typical of Kochi. You can also feel the acidity. Compared to Aki Tora and Minami, it is a little thicker. It does not have a crisp finish, but leaves a little residue. For better or worse, it is an unrefined classic type of sake. The aroma that rises is a soft muscat type aroma. When you put it in your mouth, a sweet aroma like ramune spreads. There is a fizzing sensation. The flavor of the rice is light, but moderate to the aroma. You can taste the sweetness and umami in good balance. The overall tone is light. The aftertaste is also refreshing. It tastes like a sample of a good modern type of sake. It has the image of a lighter version of Kaze no Mori. You don't feel the alcohol at all. This may be the first sake that comes in so easily. Sake from Shisui, near my parents' house. When I was a kid, I used to see a sign saying "Koko". At that time, I thought it was the biggest sake maker in Japan. Sake = Koko. It's been ten years since I left my parents' house, but this is my first time drinking it. The aroma that comes up is a faint melon-like scent. Maybe it's the green color of the label. As the product name suggests, the mouthfeel is "thick". It is clean and smooth. It has a solid rice flavor and a soft sweetness. The melon-like flavor continues faintly. The taste is rich and full. It's a raw sake, but I thought it was more angular and calm than fresh, but I was convinced when I read on the back label that it had been aged for six months. The aftertaste is a little lingering, but it is just right for this rich flavor. It was my first Koshi, but I found it delicious. I think it is the royal road of the rich and delicious taste. This is not a standard product of Koshi, so I want to buy another specification when I go back to my parents' house. The second bottle of the Tosa Sake Campaign order is Mutemukan It is the first one. This brewer has the image of the chestnut syochu liqueur "Dabada Hiburi". How about it? It has almost no aroma. In the mouth, it has a taste of rice and sourness, and it is juicy. It doesn't have much of an aroma, but it's juicy like a fruit. It is more of a umami sake than a light sake. It has a lot of thickness. It is quite spicy from the mid-palate. It is a dry sake after the umakuchi entry. If Akihitora is crisp, Mute Mukan is more zippy. It's like that. I think it was after drinking Kochi's sake that I completely fell in love with sake, or rather local sake. I loved Tosa sake so much that I used to visit Kochi every year for GW before the Corona disaster. I ordered a total of six bottles of Tosa sake through the Tosa Sake Campaign. The first one is a brand new to me, Aki Tora. The aroma that comes up is a bit fruity. Even though the rice is polished to 82%, it has a ginjo-like aroma. When you put it in your mouth, it has a sweet taste just like the aroma. The acidity is not so strong, but it gives a refreshing impression like citrus fruits. The umami is not so thick. It is refreshing. The middle part is spicy. There is no harshness, just a crispness that does not linger. It is a junmai-shu made from Omachi rice polished to 82%, but it is still a Tosa-shu. It has a beautiful aroma that is not too flashy and refreshing on the palate. It is dry and crisp. It is a delicious sake that is exactly what you would expect from a Kochi sake. It does not leave you feeling tired of drinking it. It is a very dangerous sake that goes down easily. If it's like this with Omachi rice, I wonder if it would be more delicate with other sake rice. At long last, at long last, we get some sake from Okinawa! It's a sake made by Reimei. It looks like it's called "Churasaki". When I passed by a liquor store with a rather maniacal selection, I saw the words "Okinawa Prefecture Sake Available". I didn't think I'd be able to get it without popping it. It doesn't have much of a rising aroma. When you put it in your mouth, it has a strong alcohol feeling. The flavor and sweetness of classic sake spreads to the mouth. The sweetness is a little gooey. The thickness of the umami is a little thin. The aftertaste is rather refreshing. It has a flavor that I don't like, but it is more drinkable than I expected. We haven't drink Awamori for a long time, but it has a nuance like a shochu liqueur. Especially the middle part. It has a mysterious taste. We don't like it by itself, but it goes well with a little thick sweet and spicy soy sauce flavored dishes. We didn't like the Umifudo which we drank at the same time, so we reconfirmed that the impression of the sake changes with the accompaniment. The rest of the list is Hokkaido, Tokyo, Kanagawa, Nagasaki and Miyazaki. Taste level 60 points
