This is the back of Shippotan, which I have drunk several times. Tsukabotan is also synonymous with Tosa's light and dry taste, but the back of the bottle was made with fresh sake, aiming for a fresh and mellow taste. It doesn't have much of a rising aroma. When you put it in your mouth, you get a little bit of the muscat-like aroma that is typical of nama-shu, but soon the acidity comes out and it becomes more apricot-like than muscat. The umami (flavor) is quite thick, and the impression is not that of lightness. The sourness comes out well, so there is a fresh fruit feeling. There is not much sweetness. The alcohol is strong. The aftertaste is refreshing with a slight bitterness. It is a refreshing sake with a firm and thick body. It tastes better after a few days than just after opening the bottle. The third day after opening the bottle, the corners are removed and it becomes round and easy to drink. It is delicious. Taste level 88 points
