This is the back of Shippotan, which I have drunk several times.
Tsukabotan is also synonymous with Tosa's light and dry taste, but the back of the bottle was made with fresh sake, aiming for a fresh and mellow taste.
It doesn't have much of a rising aroma.
When you put it in your mouth, you get a little bit of the muscat-like aroma that is typical of nama-shu, but soon the acidity comes out and it becomes more apricot-like than muscat.
The umami (flavor) is quite thick, and the impression is not that of lightness.
The sourness comes out well, so there is a fresh fruit feeling.
There is not much sweetness. The alcohol is strong.
The aftertaste is refreshing with a slight bitterness.
It is a refreshing sake with a firm and thick body.
It tastes better after a few days than just after opening the bottle.
The third day after opening the bottle, the corners are removed and it becomes round and easy to drink.
It is delicious.
