Japanese coral tree (Erythrina variegata)
This name is derived from the Chinese legend "Huoxi Sanshouraku". This legend describes how people talk so enthusiastically that they forget about the place and even the time they are talking. As the brewer's desire, the name "Sanshoraku" was chosen to express the feeling that sake is meant to be enjoyed with laughter.
Huyuanpo Shi met with Tao Yuanming and Lu Shujing at Lushan Mountain and they talked so enthusiastically that they crossed the Tiger Stream, which borders the village, and later realized they were laughing so hard.

Next is San Shoraku's Yamahai.
San Shoraku has a certain image.
This sake is made from Yamadanishiki produced in Nanto City, and has a good balance of umami and acidity while being robust.
It has a classic taste, which is probably why it goes so well with the ingredients from Toyama Prefecture.
