Purchased with Tenryo sake cup at Okuhiroya in Kayashima. They stocked it because it was well received at a Saga sake tasting event held for sake retailers. Probably not normally available in the Kansai region. The rice is made from Hokkaido's Kitashizuku. I know Nabeshima also uses Kitashizuku. It has a beautiful sake quality for the rice polishing ratio. There is a slight sweetness, but it is also slightly thin and heavy. It also has a nutty taste. It tastes like nothing else.

I jumped on a label I'd never seen before and neglected to check the date, and found out that it was February 💦. I drank it cold. Not much Uitatekoso, but there is a slight graininess, with a hint of alkaloa. No mature-like aroma. The mouthfeel flows smoothly on the tongue, and the taste is full and full of rice flavor with a sense of maturity. The aroma that passes through the nose is a little matured, so it has matured a bit. But it just has an autumn-aged look to it 🤣. As the label on the back of the bottle says it is slightly dry, there is a bit of spiciness at the end, but I don't mind it too much because the umami is very strong. The high alcohol content makes it easy to drink, but it comes back with a thud later. I would like to try a freshly brewed sake once. When buying Aizu sake, I was attracted by the words "Dry Honjozo". The simple name "Aizu" also intrigues me👍. When I opened the bottle and poured it, the aroma was mineral and clear. The mouthfeel is soft and smooth. The dry, refreshing taste is balanced by the sweet, astringent acidity and the umami of the rice. Although it is a regular honjozo, it has a delicate, gorgeous flavor, perhaps due to the 60% rice polishing ratio, which makes it one rank above other dry honjoze! The soft and clean part is reminiscent of "Ding" ✨. It is also very cost-effective and tastier than I expected...! You can clearly feel that it is well-known as a local sake. I would love to drink it with codfish stew 🤤.
