Iwase Junmai Ginjo 1,800ml Rice polishing ratio: 50 Alcohol content: 15%. The third bottle at the year-end party at an old house in Yatsuo. It was purchased at the brewery opening of the Koukokuharu Sake Brewery in Phantom Taki. It is a Daiginjo-class sake that is matured for a year before shipping. After the crab and amberjack shabu-shabu, we continued with vinegared shirako and bai clam sashimi. I had brought some sake to be heated, but it ended up being served cold.

A limited edition sake from the fantastic Taki no Taki🍶. Brewed with spring water from one of the 100 best springs in Japan Junmai Ginjyo aged without filtration Almost no standing aroma 50% polished for a beautiful mouthfeel. It also has a good sharpness. In the latter half, the taste of Ojigen's sake but is this maturity? It tastes like sake in a souvenir shop.

Light and simple. Aroma is moderate, dry and watery. It is easy to drink by itself. It is a little weak with a meal. It is like drinking it while writing a blog and picking up oshinko (Japanese pickles). The brewing water is from the brewery's own spring, selected as one of the 100 best waters. That's nice!

This time it is Iwase, a limited brand of Phantom Taki. This sake is from Kurobe City, Toyama Prefecture. It is a Junmai Daiginjo-class sake that has been aged for one year without filtration, This sake is brewed with "Iwase family's fresh water" from the Kurobe River fan spring group, which is one of the 100 best water sources in Japan. Like the previous Ariiso Akebono and Sanjoraku, this sake was also brewed at a certain shopping center. It was obtained at a Hokuriku Sake Fair held at a certain shopping center. It was obtained at the Hokuriku Sake Fair at a certain shopping center. I'm a bit broken to bring back 3 bottles from the morning tasting 😅. The color is a slight yellowish hue. The aroma is of ripe bananas, raisins, and aromatic wood. It is served cold. It has a mild mouthfeel like drinking good water, and the banana-like sweetness is quickly followed by a rice cake-like rice flavor. The overall taste is full-bodied with an astringent flavor. When served cold, the astringency is a bit strong. But when brought back to room temperature, it has a good balance between the beauty of the water and the richness of the umami. I was attracted to this feeling in the tasting 😊. Toyama sake is hard to find in Kansai. Three varieties with a lot of variety. I was so happy to be able to get it! Clear, crisp, but soft. I wonder if it is similar to Phantom Waterfall. The taste of the water is fully expressed. You can go for this like mineral water on a hot day.

Light tasting before going to the 6th Japanese Sake Festival @ Osaka Bay Tower in Hanshin Department Store ②. Koukokuharu Sake Brewery / "Gen no Taki" Toyama Prefecture I couldn't take my time because of the impending time of the Japanese Sake Festival, but I tasted this one because I've never had this label before. Aged sake made by laying down the original sake for a year. It has a slightly dry mouthfeel, but because it has been aged for a year, there are no corners at all! It is very smooth, so you can drink it as much as you like.
