This time it is Iwase, a limited brand of Phantom Taki. This sake is from Kurobe City, Toyama Prefecture. It is a Junmai Daiginjo-class sake that has been aged for one year without filtration, This sake is brewed with "Iwase family's fresh water" from the Kurobe River fan spring group, which is one of the 100 best water sources in Japan. Like the previous Ariiso Akebono and Sanjoraku, this sake was also brewed at a certain shopping center. It was obtained at a Hokuriku Sake Fair held at a certain shopping center. The aroma is of ripe bananas, raisins, and aromatic wood. It is served cold. It has a mild mouthfeel like drinking good water, and the banana-like sweetness is quickly followed by a rice cake-like rice flavor. The overall taste is full-bodied with an astringent flavor. When served cold, the astringency is a bit strong. But when brought back to room temperature, it has a good balance between the beauty of the water and the richness of the umami. I was attracted to this feeling in the tasting 😊. Toyama sake is hard to find in Kansai. Three varieties with a lot of variety. I was so happy to be able to get it! Good evening, Hirupeko 😃. When you say "unfiltered", I am tempted to continue with "raw sake", but it is rare to find a sake that claims to be "unfiltered and aged". With the rush of new sake, a beautiful aged sake seemed fresh 🍶. The quintessence is the result of morning tasting 😁.

It was nice to be able to talk with the liquor store owner while tasting at a leisurely pace since it's not common for people to start tasting first thing in the morning😊I wasn't really aware of it, but I found myself choosing the matured type 😅.

Clear, crisp, but soft. I wonder if it is similar to Phantom Waterfall. The taste of the water is fully expressed. You can go for this like mineral water on a hot day.

Iwase Junmai Ginjo 1,800ml Rice polishing ratio: 50 Alcohol content: 15%. The third bottle at the year-end party at an old house in Yatsuo. It was purchased at the brewery opening of the Koukokuharu Sake Brewery in Phantom Taki. It is a Daiginjo-class sake that is matured for a year before shipping. After the crab and amberjack shabu-shabu, we continued with vinegared shirako and bai clam sashimi. I had brought some sake to be heated, but it ended up being served cold.

I thought it had a clear, umami taste on the palate with a clean finish, but was surprised to learn that it had been aged for a year to a year and a half. I was surprised to hear that it has been matured for a year to a year and a half. The brewery explained to me that they use water from the 100 best waters in Japan on the brewery's premises for their brewing water, so it tends to be dry.
