Fourth round of drinks with Go-ni-Go-san. Amanurin Tokubetsu Junmai Sake Limited Bottle Enclosure This is also my first time to drink Mie sake! I chose only sake from Tokai region😅. This seems to be a regular sake of Amanurin! After bottling, the sake is matured slowly in the brewery. Mellow and full-flavored with a lot of umami!

The rice used is Comet from Hokkaido. You can't ignore the sake made with Hokkaido rice, can you? It has a clear and refreshing taste typical of Comet. Yamamoto Honke had a store at Sendai Mitsukoshi in conjunction with the Kyoto Exhibition. A "sacred" store found near Nishiki Market in Kyoto. Great cold drink when you are finally able to sit down after a long day of walking 😀. It was slightly carbonated and went down my throat so well I didn't mind the 19% alcohol content 😅. You can't tell the alcohol content in modern sakes. Beautiful construction.

The fourth glass was my first sake, Miyako Bijin The fourth glass was a freshly squeezed, light nigori sake of Miyako Bijin, which is a first for me. It is silky, sweet and bitter (with a weak bitterness). Silky, sweet and bitter (with a weak bitterness). Daruma-san is always available at my favorite izakaya that serves kusetsu-tsuyo sake 🪆. I bought it with the hope that 3 years of aging would make it a versatile player...? I bought it with high hopes 🍶. As it turns out, it's not so much a versatile sake as it is the best sake when heated lukewarm: ♨️ It has an aroma like caramelized nuts and a rich sweetness that spreads 🥜. It was perfect with gratin or anything warm and creamy in winter 🐄. I think even those who have no experience with aged sake can drink this without any resistance. I think this is a bottle that even those who have never experienced aged sake will be able to enjoy it without hesitation 🍶. After a first visit to a liquor store or a first visit to a department store to buy sake, we went to Ikoma. A customer gave him a bottle of sake😁. It's so golden in color after 3 years 😹. It seems to be aged at room temperature 😅. It's like the Notoji I drank the other day, but I think this one is more beautiful 🤔. I drank it cold, but I guess it's generally a heated type of sake, but I thought I'd rather drink it at room temperature. Since it's spring🌸, I think I'll have another bottle of sake with spring in it. I bought a bottle of Shunshin by Nishide Sake Brewery in Komatsu City, Ishikawa Prefecture. I've been curious about this sake for a while but never got around to it. I will have it with boiled flounder 🙏. I thought it might be a bit strong, but it wasn't. It has a nice richness, sweetness, acidity, and a mellow feeling 😆. It's a bit like a lighter version of Tamagawa. As the label says, I preferred it at room temperature rather than chilled 👍

I saw it for the first time at a department store tasting sale, so I bought it. It's not listed on the label, but according to the brewer's description, it's unfiltered undiluted sake. It says "light nigori" but it's not cloudy at all (laughs). It's refreshing and easy to drink. The acidity in the second half is impressive.

Purchased at Umeda Department Store. (Hankyu or Hanshin) One of seven breweries in Nara Prefecture that belong to the Nara Prefecture Bodai-Hashimoto Sake Research Association. See label on back. Next was the Ryusen Yaezakura Junmai Sake Takumi no Omachi. Compared to the Yamada-Nishiki we drank earlier, the taste is a little more robust. Naohiko Noguchi Institute I wanted to try. Smells like caramel and grain. It has a dry, drinkable, honey-like sweetness, a strong flavor, powerful acidity, and a clean aftertaste with enough stimulation to numb the tongue. Delicious. Impact like a whiskey. The official recommendation is to drink it lukewarm (around 40 degrees Celsius). The warmer it is, the less stimulating it is.
