Purchased at Umeda Department Store. (Hankyu or Hanshin) One of seven breweries in Nara Prefecture that belong to the Nara Prefecture Bodai-Hashimoto Sake Research Association. See label on back. Rich, mouthfeel It is a sweet type, but the far and spreading umami and bitterness It was delicious and matched well with food. It became mellow and mild when heated to lukewarm and I could enjoy it with ease 😁. I am interested in the history of sake only when I taste Bodaihashi.

Since it's spring🌸, I think I'll have another bottle of sake with spring in it. I bought a bottle of Shunshin by Nishide Sake Brewery in Komatsu City, Ishikawa Prefecture. I've been curious about this sake for a while but never got around to it. I will have it with boiled flounder 🙏. I thought it might be a bit strong, but it wasn't. It has a nice richness, sweetness, acidity, and a mellow feeling 😆. It's a bit like a lighter version of Tamagawa. As the label says, I preferred it at room temperature rather than chilled 👍

I saw it for the first time at a department store tasting sale, so I bought it. It's not listed on the label, but according to the brewer's description, it's unfiltered undiluted sake. It says "light nigori" but it's not cloudy at all (laughs). It's refreshing and easy to drink. The acidity in the second half is impressive.

Refill! Aromatic smell. The aromatic mouthfeel has a perfect balance of sweetness, bitterness, and umami. Although it is rich and has an alcohol content of 19%, there is no taste that sticks to you while drinking it, so you can drink it easily and be satisfied. It is delicious.

Naohiko Noguchi Institute I wanted to try. Smells like caramel and grain. It has a dry, drinkable, honey-like sweetness, a strong flavor, powerful acidity, and a clean aftertaste with enough stimulation to numb the tongue. Delicious. Impact like a whiskey. The official recommendation is to drink it lukewarm (around 40 degrees Celsius). The warmer it is, the less stimulating it is. It is a great match for fish, and the fish becomes twice as good with the support. I should have bought another kind. Second day. The second day was also good.

Next was the Ryusen Yaezakura Junmai Sake Takumi no Omachi. Compared to the Yamada-Nishiki we drank earlier, the taste is a little more robust. The aroma is almost imperceptible, but the sweetness and umami of the flavor is stronger than that of Yamadanishiki. I see that it is read as "Sekepikozan". If I had not drank this sake, I might not have been able to read it correctly for the rest of my life. The taste is fresh and quite rich. The bitter bitterness comes out in the back of the mouth, and the taste is sharp and clean. The sweetness is modest for Aizan, and although it is not the modern type of sake, the umami flavor is very well conveyed. Not bad!

I've been wanting to try this one for a while...they use 1801 yeast. It's gorgeous and fruity. It's also quite sweet. I think it's the most gorgeous of all the Yukihiko Yama brands. This was over 2,000 yen at a certain izakaya in Osaka, but at a nearby liquor store it was 1,980 yen🙄. I wonder what it is? I heard some breweries and stores add shipping costs 🤔.

Sake opened at a remote off-line meeting (3) I was asked "What is the best sake you drank this year? I answered "Aozora", but later I remembered that it was the future of sake from Akabu newborn 🤣. By this time I couldn't even remember what it tasted like, so I checked again the next day. The rice used is 100% Benkei. It is a kijoshu, although there is no description.
