This is another fun sake...
Junmai Ginjo Unfiltered Nama Nama Sake with a little bit of aging.
It has a slight aroma that is typical of aging.
The taste is well-balanced between umami and Hikariki, without being weirdly unpleasant.
It is good at room temperature after being chilled, but it makes you wonder if you should go as far as heating up the sake.
Is this the end of the line, or can it be expanded?
It leaves the choice to the drinker.
That's what I felt.

The expensive bottle, the Noguchi Institute, is a little bit cloudy. And when I looked again at the endorsement, I was surprised‼️19 degrees, and it's also alky ‼️, and it's the first time for an unfiltered, unadulterated, unadulterated sake to be alky🫨 at the same time🧐.
And it's very tasty 💖It's so gentle that it's hard to believe it's 19 degrees. But not sweet! Bitterness, and an herbal astringency in the back. It's not spicy, and there is no alcohol smell at all! Today's balcony barbecue was squid sashimi, shime saba✨, some beef, and pancakes! We'll grill them a little beforehand and serve them crispy on the balcony 😋.

First time for me to drink Mr. Noriguchi, no sweet and tasty elements at all but it's delicious ❣️😋.
It has an atmosphere similar to that of Ohroku.
It is a brewed sake at 19 degrees, but there is no "alcohol" in it at all!
It has a hard taste with a touch of elegance. 🙇♂️

Naohiko Noguchi Research Institute Kannon Shita
This sake is called "Mature Sake" by Naohiko Noguchi Laboratory.
According to the specs, it is a fire-aged version of Honjozo unfiltered unpasteurized sake.
The aroma is a little less intense, and the sweetness, umami, and alcohol content are higher than the acidity.
It's very good, and with this potential, it tastes like it won't fall apart even if it's heated up.
A bottle that can be enjoyed cold or hot.
It has a good balance of umami and sharpness, so please enjoy it in different ways depending on who you drink it with.
