I went on a trip to Kanazawa and bought this wine because I enjoyed it so much when I drank it at an izakaya (Japanese bar).
I chose the small bottle because I wanted to drink more than just Junmai Daiginjo, so I also purchased other types of Junmai Daiginjo with different rice polishing ratios.
After 15 hours of sleep, I'm going to have a drink with Hokuriku souvenirs for the first time in a long time ✨.
When you open the bottle and pour it, the aroma is fluffy, fragrant and mellow, like butter, nuts and grains.
The palate is clear yet punchy with a concentrated full-bodied flavor of Omachi.
Yet it is smooth, supple, and flexible. The acidity and astringency slowly seeps into the palate, stimulating it.
The expansion and contraction of the flavor is pleasant, and the lingering astringent taste that remains after a refreshing finish is also irresistible.
The Omachi type left a strong impression on us when we compared Yamahai wines in Kanazawa.

Honjozo Unfiltered Nama Sake 2021 vintage
Dry, slightly strong aroma (floral), slightly strong attack, crisp, sharp, slightly thick, clear bitterness, somewhat simple, still a good balance, mellow sake even for a fresh sake
ABV.19 Ihyakumangoku
The color is a cloudy, muddy yellow. This seems to be the color of freshly squeezed sake. It seems that the color can be described as "freshly pressed" as it is.
The aroma is not strong, but there is a hint of ginjo aroma. Is it apple-like?
This is the second bottle from Naohiko Noguchi Laboratory, and all of them have a soft taste with no hint of alcohol. This spring Shiboritate has a bitterness in the aftertaste, which is strange. I have never felt bitterness in sake so much.
