At Kanazawa station, I found a mini bottle that I could carry home in the space between my luggage. Among several types of sake, when I had a hard time deciding, I decided on Omachi.
I had drunk the sake here several times, so I had an idea of what it tasted like. But this bottle tasted different. It had a strong flavor, but it went down my throat easily, and even though it was 18% alcohol, I didn't feel any alcohol. I was reminded of what a wonderful sake this was. It seems to go well with high quality Japanese food.
I bought 3 bottles of this VINTAGE 2020 in bulk and opened the second bottle for the first time since the summer because it was the end of the year.
The lid is glass too!
This is a very special sake that was developed and released through trial and error and night and day struggle in a documentary film.
It has a soft, clear, mellow aroma, smoothness on the palate, and a strong 18% alcohol content with a rice flavor that lingers pleasantly on the palate.
It has the strength of a Hokuriku sake, and has a luxurious feel.
We are enjoying it with Old Baccarat.
Alcohol content 18%.
Rice polishing ratio 50%.
Specific name: Yamahai Junmai Daiginshu
Ingredient rice: 100% Yamadanishiki produced in Hyogo Prefecture
Ingredients: Rice (domestic), Rice Koji (domestic)

I drank some of the original sake, and while most of the original sake smells like sake, this one is quite moderate.
The aroma and umami are well balanced.
It's been cold all of a sudden this week.
I chose this item because I wanted to drink it warmed up.

Although the high alcohol content of the heated sake gives it a hint of alcohol in the aroma, the softness and umami spread softly on the palate and disappear crisply at the end.
It has been quite a while since I bought it, so the flavor has changed, but since it is a winter sake, it would be a good match with nabe (hot pot) or grilled fish.
