The sake I bought back from Tottori. Oh... it's a Junmai Ginjo, but it doesn't have a Ginjo aroma... Aged scent? Yes, it's actually a sake that's been aged for 3 years. Aged sake usually has a harsh aroma for me, but But this one has a gorgeous aroma and a soft taste. It's an excellent product for beginners of aged sake.

Tasted very chilled. Nose is full of umami and funk. Flavor is full as well but balanced. Texture is silly smooth and finish is restrained. Mushroom and forest floor all the way through.
Aged 3 years, this was my first attempt at an aged product, and it has quite an impact. My honest impression is that it smells like an auto repair shop? Hmmm, difficult for a beginner.

This is a sake from my hometown - Echizen Ono (Ono City, Fukui Prefecture). It used to be sold at roadside stations, but I looked for it again on my return trip, but I didn't seem to see much of it in the city. I wondered if they are limiting the amount of brewing - or if they are just out of stock. This is the one I found in my parents' fridge. Cool and pungent. A cool spiciness, followed by a nice, clean rice flavor. Then, a strong wave of spiciness hits you. The spiciness swells up while accepting freshness, umami, and sweetness. The intense flavor is intoxicating. After all, Genpei is delicious. I found out that Genpei Shuzo went bankrupt last November, and the direct sales shop was closed. The story of the bankruptcy and revival of the brewery was also seen in the morning drama "Ranman," and I look forward to the time when I can experience the taste of Genpei again.

The rice used is Gohyakumangoku. I bought it at the end of last year at an antenna store in Toyama. I didn't know about this brand. The color is a light amber. The color is pale amber, and the flavor is just as it should be. I have had Taitozan before, but I don't remember much about it, so I bought it for the first time in a while. It has a slightly astringent white wine-like aftertaste with almost no sweetness. There is no mention of it, but it is probably nama sake. It is not labeled as Nama-shu, but according to the information on the Internet, the label on the back of the bottle says it needs to be kept chilled, which means it is Nama-shu. Am I right? Charcoal Grilled Chicken and Good Sake Tate-Aoi It is a Junmai Hi-ire of Takanomune. It was served cold to finish the day 🍶. ALLNAGOYA🍤 is made with Yume-Ginko🌾 from Nagoya city and FIA-2 yeast developed by Aichi prefecture and cultivated also in Nagoya city. Don't tell anyone that the label on the back says "ALLNAGOY" 🤫. The top aroma is mildly sweet. When you put it in your mouth, it has a mild sweetness and a good rice flavor. Actually, last year's hi-ire sake was so good that this year I bought the same ALLNAGOYA sake, but it was a little too hard. I wonder if this sake tastes better when it is fire-brewed 🤔. By chance? The third and fourth pictures are of Takanomumu's brewery, which is about a 10-minute walk from JR Tokaido Honsen Odaka Station.

I bought it because the production date was a year ago and it was priced at 1,000 yen. It is said to be a sake made for meat dishes like steak, but first I tried it by itself. There was no cloying taste, and the taste was pure and not particularly pretentious. The sweetness tends to be hidden, and perhaps because of the high alcohol content, it tastes a bit muddy afterwards. If you drink it slowly, you can taste the umami of the rice, and it is quite a good sake. However, it is a bit strong on its own, so it is best to drink it with the sweetness of fat from grilled meat.
