At SAKE MEETING 2025 Autumn, a large gathering of breweries in Ibaraki Prefecture! The first sake we decided on was Mizufu Boast from Meiri Sake Brewery (Mito City)! It was very fruity and gassy, with a sweet and sour shuwashu taste! When I hear the word "mizu-fu," I have a strong impression of the now-defunct mizu-fu village (now Hitachiota City), which is famous for its tobacco production, but mizu-fu also refers to Mito, so it is Mito's pride and joy! In addition, brewing water from various sake breweries was offered as a tempering water. The photo shows the brewing water from the Tanaka Sake Brewery (Toride City), the brewer of Kimi Mandai.

Purchased at Nakamura Sake Shop in Toride, I think it was a little over 1500 yen. It is so-called hiya oroshi. The aroma has a mildly spreading atmosphere, with a surprisingly sour, apricot-like feeling in the background. The texture is a bit mellow and dry, but the sweetness of the rice spreads through the palate. The aroma and flavor are mild, but the sweet impression on the palate gives it a nice flavor profile, making it a good match for autumnal flavors. (In fact, it went very well with grilled swordfish). The acidity was also mild and tasty... To be honest, I wish Meiri Sake Brewery would promote Suifu Boast more, not Vice Shogun or something.

The acidity is strong, but that is not the only impact, and it is a perfect product that is sure to be delicious. The company that developed the Association yeast, Meiri Sake Brewery, is said to be the largest manufacturer in Ibaraki Prefecture.

National Sake Fair 2025⑭ Ibaraki Prefecture ⑤. Akari Sake Brewery in Mito City The brewery that originated No. 10 yeast. The largest general liquor manufacturer in Ibaraki Prefecture. I've seen the brewery's Vice Shogun at Yodobashi, but have never bought it, and I've never had a bottle of Mizufu Boast because the liquor stores only carry it in one-sho bottles... Polishing ratio 50%, Gohyakumangoku 16%, Sake degree -1.0, Acidity 1.8 Amino acidity 1.0 It has a strong acidity. Not fragrant, but fruity. It is fire-brewed, but it also has a freshness.
