Vice Shogun Hatsushibori (Sake)
We happened to come across a local sake shop on a day when the brewery was open for business.
This is the brewery that produced the "No. 10 yeast.
The sake was made at 19 degrees Celsius with alkaloids.
The aroma and taste are deliberately kept calm, and it is designed not to be sweet, but to have a sharpness in the front.
The mouthfeel is sharp,
The lingering aftertaste is short and sharp.
The freshness of the first Shibori-style is backed up by the robustness typical of Nanbu-style brewers.
The core is thick without being flashy or assertive.

Ibaraki Sake
Vice Shogun Junmai Ginjo
This sake is made by Meiri Shuzui, the birthplace of Ogawa yeast. This sake also uses Association yeast M310. The aroma is gorgeous. In the mouth, it is a classic type of heavy sake. It is said that the taste of wine is determined by the grapes of the year, while the taste of sake is determined by the master brewer.

Vice-Shogun Daiginjo Yamadanishiki
Vice Shogun was purchased at a supermarket during a business trip to Mito City, Ibaraki Prefecture. It has the umami of rice that is typical of a freshly stored sake, with a dry aftertaste that I felt was well balanced. Although it does not have a lot of characteristics, I am looking forward to drinking more sake from Ibaraki Prefecture in the future.

Akari Sake Brewery is the creator of M310 yeast, so their main brand is also a high ethyl caproate producing sake.
