The sense of rice comes to the fore, and it is dry, with a good amount of minerality, umami, spicy, hot and bitter, and clean in the mouth. A slight sweetness can be enjoyed. When paired with food, it turns into a soft, fruity, refreshing drink. It assists and adds umami, both of which make it unstoppable. Hyakujuro is so good! When eaten with cheese, it was like Hyakujuro was doing its best to assist the cheese, which made me feel relaxed.

The carbonation is fine and stimulating, umami, a momentary bitterness, dryness, and a sweetness like a kijo sake, but it has a rich umami, a drinkable taste, a rice flavor like orikarami, and an acidity that comes afterwards and refreshes the palate without being sweet, with a refreshing bitterness at the end. As the temperature rises, the sweetness becomes more noticeable, with sweetness like grapefruit, honey, melted sugar with fruit coating, sourness almost bitter, and umami with rice flavor. Delicious. The balance is amazing. I had to re-fasten the crown because I couldn't use the lid of the other sake instead. 500 ml bottle. Carbonation will be gone by the time it gets close to room temperature. The 3rd day. It is still carbonated even though it is kept in the crown. I don't think I need to be in a hurry to drink it even if it's crowned. Too good. It has a refined sugar, grapefruit, lemon, and grape-like acidity that doesn't irritate the tongue, a delicious rice flavor, and a voluminous but not dull taste.

However, in the Tohoku region, the rice was not as qualitatively damaged as in western Japan, and the rice is firmer but more transparent than last year, with better storability, which may be a good thing for wine lovers. The flavor of this lot. Uitate aroma of mango, ginger, and golden osmanthus. A honey-like sweetness that heads to the northernmost part of the noble sake dominates the entire palate. Cold storage for three years or so would be a desirable change. Smells of tropical, coconut milk, mango, and ice cream. The gingerness is both smell and taste. It's amazing. On the palate, it starts with clarity, sweet and light, mango-like tropical syrup, woody, ginger, accented acidity and slight effervescence that feels like a change. Before the sweetness is strong, a soft astringency comes in and seems to disappear with a full-bodied flavor. The sweetness appears but disappears. The flow of flavors from the thick syrup to the sweet water is smooth and enjoyable. It doesn't seem to go well with food, but it's nice to drink it with food to make it more gorgeous. Day 2. The taste disappears and the aftertaste is orange.
