Purchased at Sota Watanabe Shoten in August. When I went camping in the summer, I attended with melons from Yamama and Niida Zenshu, but both were gone in an instant, so I didn't raise them to check in 😂. Such is the classic brand of the Niida head family. Did I drink it cold (room temperature) at first? I don't remember. (LOL) I thought it was very tasty when I drank it heated (probably hot)! I thought it was delicious! The complex acidity and umami of the rice, unique to the brewer's yeast, is extended by the warming up of the sake! I love the way the flavor expands when heated. I think it tastes great chilled, but I wouldn't hesitate to recommend heating it up. I might want to keep this one on hand. I'm glad I don't have to put the classic in the fridge. I would love to have a fridge for sake, but...

Personally, I bought this sake because I am in a mini-boom for a higher level of sake other than sweet and fruity. Here we go! The aroma is... What is this? It smells simple and sweet, like freshly baked bread. I have never tasted a sake with such an aroma. The mysterious brewing water is soft, slightly viscous, mineral, and translucent. The sweetness is like freshly baked bread, and the robust, tight rice flavor is as vibrant as ever. There is also a hint of acidity, which is probably due to the use of the sake yeast, but at any rate, it is full of umami. Tamura is a gem that is profound yet light, powerful yet gentle, and a contradiction in terms. It disappeared with a slight sharpness in the back of the throat. In recent years, an increasing number of popular sakes are being hailed as wine-like sake with a sweet and sour taste like grapes. Of course, I like these sake as well. But if you ask me which sake made from rice has the weight, lingering aftertaste, complexity, and simplicity of red wine, I would drink Tamura without hesitation. 2020/11/06 ⭐️⭐️⭐️⭐️⭐️ A subdued but green apple-like aroma. The mouthfeel is refreshing and smooth. It is followed by a rich sweetness and flavor. Spiciness and acidity are rather subdued. It finishes off nicely with a slight bitterness. It was easier to drink than the ginjo I received before.

Tonight, I'm posting my second bottle, this one I've been letting go for about 2 years to contrast with the first (Miyazumi Junmai Nigori Nama) 🍶. Actually, I bought it at the same time as the previous Junmai, but when I drank the Junmai, I took it for granted that this was a sake that should be aged for a long time 😪💤 and it has been in the bottle for a long time until now 😌. The aroma is grain-like, or Western liquor-like, or mature aroma, and the smell alone is enough to make you feel drunk. 😵‍💫 I think it's better to drink it at room temperature or warmed than chilled because the initial smell will disappear. Maybe I'll give it a try after tomorrow. It's good to enjoy long-aged sake sometimes. ☺️

There is no description on the 300ml bottle, but according to the official website, it seems to be called Shiboritate Nama-nihan-shu. It has a good balance of sweet and spicy and is easy to drink. It is truly exquisite. I think it is similar to the Shiroshika Classics Limited Nama-Nihan-shu. It's definitely better than the first unfiltered draft I opened.

One of the sake I wanted to try because of the stylish label❗️ A hint of pear? White peach? It smells like pear or white peach 😅 Elegant sweetness and almost no sourness ❗️ No bitterness or habits, and the aftertaste seems to disappear easily 😄. Overall, it's a gentle sake that goes well with meals. It's a delicious sake that can be drunk easily on its own 👍 Even sake beginners can enjoy it 😄.

Newly registered brand. Since the sake brewer could not be registered, the new brand is "Aizu Otokoyama" from Otokoyama Shuzo Brewery in Aizu Misato Town, Fukushima Prefecture. Its new brand name is "Wa". It has a mild aroma. It has a melon aroma and a hint of sweetness like caramel. The sweetness that is not too strong is impressive. There is some acidity. The aftertaste is strong alcohol. A strong bitterness also lingers. I have a feeling that it will be excellent with Japanese food.

I really wanted the same specs, but they only had this one and an expensive one, so I had no choice but to choose this one. The brewery has reopened after 20 years. Although it's next door, I haven't had Osaka's sake yet. I was thinking of Akishika or Katanozakura for Osaka, but I found this one at AEON today while shopping. There is no outstanding sweetness or spiciness, but a well-balanced taste. It's a good sake for eating. When I paired it with yuba and fried eggplant with sesame oil, I felt like I could drink as much as I wanted 😋. Good sake in the neighborhood too👍.
