Like Minatoya Toisuke, this is another brand of Murasuke that I bought because I liked it after tasting it at Ponshu-kan in Echigo Yuzawa. There are many liquor stores that sell Murasuke in Tokyo, but I had never seen this brand before. As its name suggests, it's low in alcohol content at 13%, so it's easy to drink 😚. When you drink it cold, it's light and refreshing, with no hint of bitterness. It's delicious in its own right, but when it's chilled at a cooler temperature, it becomes sweeter and more impressive. I liked it best when it was chilled in the wine cellar at about 15 degrees Celsius 😄. It's interesting to see how it changes with the temperature, but in any case, it's a different direction from the sweet and sour fruity Murasuke. I think it's a fine sake that won't go with any snacks 😋

Tonight's sake is a Shiraito Brewer's Nigori sake from the famous Shiraito Shuzo, which I had the pleasure of meeting at the brewery during my trip to Fukuoka in late May. When we visited the brewery, the proprietress and her little son were very attentive to us, and we were very grateful for the free tasting, which they usually don't do 😊 We bought a bottle of one of our favorites, so we're going to open it now 🙌! The rice polishing ratio is not stated, but I think it is more than 70% polished. The aroma has a soft lactic acid nuance that is not typical of sake. The taste is easy to drink with a slight sweetness of rice in the supernatant and umami flavor 😋 It becomes completely cloudy when mixed with a significant amount of lees, but it has a smooth mouthfeel and is more delicious 😋😋😋😋😋.

Tonight, I feel like I've been shvitzing at the gym for two days, but drinking this is a negative rebound, but when it comes to horse mackerel and monkfish sashimi, it's a MUST 🍶. I bought this 💁 at a brewery when I was in Fukuoka. It's Shiraito Sillite 70 ✨. Unlike Tanaka Rokujugo, this sake seems to be distributed within the prefecture, but it is a 100% Yamadanishiki Junmai sake from Itoshima, and when I tasted it, I enjoyed this lowest-purity sake 😋. The sake has a very clear and clean structure, with a hint of sourness from the ginjo aroma of the cucumber, and the rice is sweet and full. The finish is very crisp and very excellent. ☺️ It is best when it returns to room temperature from chilled. ⭕️

Sake comparison at home! We chose 3 kinds of sake from "Fukumitsuya", a long-established sake brewery in Kanazawa. Fukumasa Munune Junmai Dry, Nama Zume. This was the first sake made with black malted rice. I felt a bit salty, but I wondered if this was the richness found in sake made with "black koji"? Wind, Water, Man, Junmai 9 It is a junmai sake with an alcohol content of 9 degrees Celsius and a refreshing taste. I would like to drink it with pasta or Italian food! Fukumaso Sake: Hyoketsu Nama-Shu Dry With a sake alcohol content of +10%, it has a very strong sake taste! I would like to drink it with a salty meal and sip it while neutralizing the taste. It was interesting to compare the different types of sake and to see the difference between them. ☺️

Rooster Yoemon from Kawamura Sake Brewery in Hanamaki City, Iwate Prefecture. This sake is famous for its sour taste, which is rare in Iwate Prefecture. I drank it for the first time at a store in Hanamaki and was surprised by the sourness. It seemed to be quite a challenge since Iwate is generally known for its sweet and tasty sake. My father bought it for me as a souvenir from his trip to Aomori. The nose has a faintly acidic aroma. In the mouth, there was a delicate acidity from the sake yeast and a calm, gentle sweetness and richness. It was a crisp sake, typical of Sakuta's special pure sake. It was delicious, but it was not so good when it was warmed up 🤔.

This is my first time drinking this brand, but it is handled by a well-known sake store in Aomori, and I have hesitated to mail order it several times. So I was confident that I would not make a mistake. I was torn between this one and the Yukinaka Hakkoda from the same brewery, but I went with this one. At room temperature. The aroma is slightly banana-like. When you drink it, the umami of rice rises thinly, and if you drink it by itself, it will slowly and gently lift you up with its umami and spiciness. It becomes more crisp when paired with cheese. At 40℃, it has a little more rice flavor. The crisp and sharp taste is better than at room temperature. I personally prefer this brand to be served hotter, so I set the temperature at 50°C. The aroma is not too strong and the taste is mild. The aroma is not too strong and remains mild, but the umami comes out slowly, and the sharpness is enhanced by the slight alcohol taste. I personally prefer this temperature. Sake from the southern region is often sharp without being sweet, and I have the impression that this is also the case here. In addition to cheese, it goes well with kinpira, tsukudani (food boiled in soy sauce) of locusts, and ikamentsuchi, a specialty of Aomori. The sake has no cloying taste, and I can sense a high level of technical skill. Next time, I would like to buy some Umakuchi or Sakuta, which has a different character, but with the recent inflation and saturation of brands, I wonder if it will be a problem if they will be able to get them in stock.

Today, a Junmai Ginjo Kakupii from Setoichi in Ashigara, Kanagawa Prefecture❗️ The aroma is a subtle fruity scent of ginjo❗️ sip, and after a mild texture on the tongue comes a tingling and sharp spiciness, followed by a fruity aroma passing through the nose❗️❗️ This Setoichi sake uses a different yeast (M-310,KA4) than the one we had before. I'm not sure if it's a good idea to use it with vegetables Rice used, Miyamanishiki Yeast, Kyokai 701 Alcohol 13%. Personal preference among 4 types 4️⃣ I received a bottle of sake that has been stored at room temperature for a wacky long time... I tried to drink it but it was old sake ( ´-̥̥̥̥̥ω̥̥̥̥̥̥`) I got about 7 kinds of sake including Tasake and Jyushiyo... What a waste 😭😭😭 The sauce made with Tasake was delicious though 🥲.
