June 3, 2023 At Japanese Sake Satou in Matsuyama, Japan. I took a new employee to my favorite restaurant to drinking sake. The last and seventh drink of the day was Koei Kiku Tsukishita Muyori. It is a mellow, sweet and delicious sake, easy to drink easy to drink without feeling the alcohol content. It is easy to drink without feeling alcohol content. The rice used is Yamadanishiki from the Sato Plantation in Sosa City. It is said to be free of chemical fertilizers and synthetic agricultural chemicals. The sweetness is moderate. The acidity is citrusy with a crisp, bitter taste. Overall, it is a refreshing summer sake. It is well-balanced and can be drunk easily. The yeast seems to be different from last year's, and judging from the other reviews, it may be a different one. (It's also possible that my taste buds are wrong...) It is a versatile sake with a soft sweetness and acidity of cucumber and herbs and a clean aftertaste that is also very sake-like 😊. It is as delicious as the rumors say 😋😋😋😋😋.

Tonight, here is a very popular project sake from Yamagata 💁. La Jomon Shoumon Koji Triple Masamune Nama Sake 2023BY✨. I think it is safe to say that this is the second most popular sake after Jyushidai. I think it is. Well, it's hard to buy and sells out quickly 😫 Now, this is the first Koji Sanbai Masozo-shu Nama-shu in my house. As you know, the specs are as perverted as you can imagine 🤣 it is made with Dewanosato x 66% koji ratio x 66% milled rice ratio x Kyokai No.6 yeast 🤣. The taste is very pleasant with the strong acidity of triple the koji, and it is easy to drink. It is not white koji, but it reminds me of a certain cat sake 😺.

Tonight, I opened a bottle of this one to accompany my dinner of kochi and kampachi sashimi and squid cod roe 💁. La Jomon Six Nama Sake 2023BY✨ We happened to have a lot of Six Nama Sake on hand, so we'll have a quick bottle. When I poured a glass of chilled sake, it had the usual mild uri aroma, a beautiful acidity, a little sweetness and citrusy flavor like Pocari, and the second half was a mix of astringent, bitter, and spicy flavors. It can be served alone or as a mealtime drink. I'm going to try the "Murasame" that some of the connoisseurs in the area are trying later 🙌

Tasted and purchased. Firmly sweet but refreshing. Maybe citrusy? Dangerous one because of the low alcohol content. I wish Shirobotan would release fresh sake. It is sweet, but the alcohol taste is a little strong. I feel it is a bit strong. I think it tastes better after about 2 days than when it is freshly opened, even though it is fire-aged. It is similar to the impression I had when I drank it at a tasting.
