June 3, 2023 At Japanese Sake Satou in Matsuyama, Japan. I took a new employee to my favorite restaurant to drinking sake. The last and seventh drink of the day was Koei Kiku Tsukishita Muyori. It is a mellow, sweet and delicious sake, easy to drink easy to drink without feeling the alcohol content. It is easy to drink without feeling alcohol content. It is a versatile sake with a soft sweetness and acidity of cucumber and herbs and a clean aftertaste that is also very sake-like 😊. It is as delicious as the rumors say 😋😋😋😋😋.

Tonight, here is a very popular project sake from Yamagata 💁. La Jomon Shoumon Koji Triple Masamune Nama Sake 2023BY✨. I think it is safe to say that this is the second most popular sake after Jyushidai. I think it is. Well, it's hard to buy and sells out quickly 😫 Now, this is the first Koji Sanbai Masozo-shu Nama-shu in my house. As you know, the specs are as perverted as you can imagine 🤣 it is made with Dewanosato x 66% koji ratio x 66% milled rice ratio x Kyokai No.6 yeast 🤣. The taste is very pleasant with the strong acidity of triple the koji, and it is easy to drink. It is not white koji, but it reminds me of a certain cat sake 😺.

La Jomon Six Nama Sake 2023BY✨ We happened to have a lot of Six Nama Sake on hand, so we'll have a quick bottle. When buying Aizu sake, I was attracted by the words "Dry Honjozo". The simple name "Aizu" also intrigues me👍. When I opened the bottle and poured it, the aroma was mineral and clear. The mouthfeel is soft and smooth. The dry, refreshing taste is balanced by the sweet, astringent acidity and the umami of the rice. Although it is a regular honjozo, it has a delicate, gorgeous flavor, perhaps due to the 60% rice polishing ratio, which makes it one rank above other dry honjoze! The soft and clean part is reminiscent of "Ding" ✨. It is also very cost-effective and tastier than I expected...! You can clearly feel that it is well-known as a local sake. I would love to drink it with codfish stew 🤤.

The acidity is citrusy with a crisp, bitter taste. Overall, it is a refreshing summer sake. It is well-balanced and can be drunk easily. The yeast seems to be different from last year's, and judging from the other reviews, it may be a different one. (It's also possible that my taste buds are wrong...) If that's the case, I look forward to it every year! This year's was my favorite type❣️.
