It is a brand with an image of heated sake, but it seems to be brewed by the brewer's son, so the image is a little different. We started with the heated sake at 40°C (104°F). The aroma is quite spicy at first, followed by the umami of rice. After that, the umami of the rice gradually comes through. At 45℃, the spiciness is quickly snapped off again. At 50°C, the bitterness becomes even stronger, so the best temperature for heating up is 40°C or 45°C. On the second day, serve cold. The lemon-like aroma is subtle. When drunk, it has a lemon or orange flavor, with a fair amount of acidity and a little bit of sweetness. The sharpness is bitter rather than spicy. At room temperature, there is not much change from the cold sake, and the fruity flavor stands out a little and so does the umami. It is not dry with umami, but it is quite dry. It is not too heavy and seems to go well with a variety of dishes.

Get it at "Marugoto Kochi" in Ginza, Tokyo❗️. I had never heard of this brand before, but it was delicious ❣️. The rice used was something from Kochi Prefecture. It has a fresh citrusy taste like a fresh sake, with a rich mouthfeel, but it goes down smoothly. The aftertaste is clean and crisp. If I had to say something, I would say that I would like a little more sweetness, but it is just right for light drinking.

Second day of Kochi Night. The cab driver told me that Hirome is good, but for bonito, I should go to Matsuri Jaya. He advised me to go to Matsuri Jaya for bonito, as it has a good selection of alcohol. So we went to Matsuri Jaya. At first, we started out with regular sake, just like a normal drinking party in Kochi. The staff at the restaurant recommended various temperatures for drinking. The first sake is Fujimusume, which I have never tried before. Slightly spicy and umami-guchi (flavorful), it was a perfect match for the thickly sliced salt cod roe. The special sake cup is also cute! But from here, I sank into the swamp of Kochi sake.

Kochi Prefecture. Shimanto City. Fujimusume Sake Brewery Co. Fujimusume Junmai Ginjo Purchased at the Kochi Food Trip event at Hanshin Department Store. I thought it would be good warmed up, so I kept it at room temperature, waiting for the weather to get colder. The other day, Yasube and Orin drank it. I had it cold. The first aroma was mild and gentle. The color is clear with a slight yellowish tinge. The mouthfeel is smooth, with a hint of citrus yogurt. The taste starts with a lactic acidity, which is like the top layer of yogurt, and the flavor spreads with the aroma passing through the nose. The aftertaste is spicy with a hint of nikki on the tongue, giving it a very complex feeling. It can also be served warmed. When drunk, it has a mild acidity. The citrusy aroma that wafts into the nose and the umami on the tongue is expanding, the nikki-ness is gone and the spiciness is gentle and mellow. The image is a little different from when I tasted it 🤔. Ingredients:Rice (domestic), Rice malt (domestic) Rice polishing ratio: 60 Alcohol content: 15%.

Natsuta Fuyuzo works in the rice paddies in summer and in the warehouse in winter. This is my first time to try the KAME-NO-IO sake rice. 😃 It was very elegant, with a deep and delicate flavor. Plus, the mouthfeel is crisp and refreshing at the end of the drink 🙂 I paired it with grilled fish and it goes well😇. It's a lost one in my book 👍

Macho shocked me before...this time, I didn't expect much since it was fire-aged and not a draft 🍶...but when I opened the bottle: .... Pssh! Wow...the aroma of rich Yamadanishiki rice with 80% polished rice...the mouthfeel is sweet but thick... This is a very rich wine! I had been wanting to drink this for a long time and got a bottle of "Ousai Macho" from Makino Shuzo.... I'm also interested in the other macho series...I'm sipping it with cod roe tempura and black shrimp tempura...I think it goes well with strong-flavored snacks and dishes. I ordered this because they said the money for this will be donated to the Noto earthquake. It will be hot 🍶. Oh no, there was only one left when I thought this was the Mexicali Tempura. It doesn't feel special, but it's a nice sake that goes perfectly with a meal. It wasn't stingy at all. I can't read the label. It's black, which is what a beginner in calligraphy did.

A 1-goupe bottle that I had gotten at Yamada-san, a sake dealer in Ikebukuro Seibu. I check the small refrigerator near the cash register, which is mainly small bottles, every time I go there. It is Kamerei Mannen from Hiroshima🐢. The classical texture gives it a ginjo-shu feel.

I have had a little Mutsu Hassen, but Mutsu Otokoyama is completely new to me! A while ago, I had the impression that Mutsu Hassen lost all its flavor after the second day, but recently it has been able to keep its flavor quite well. What do you think of Mutsu Otokoyama? The aroma is a botanical scent similar to that of grass or earth, but only slightly. But when you take a sip, you will be surprised! It has a gorgeous capsule-like aroma similar to that of Mutsu Hassen! I don't think I've ever experienced such an aroma with such a strong standing aroma! The taste is definitely less sweet, but has a good umami. The taste is certainly not too sweet, but it has a good umami flavor, and yet it has a gorgeous overtone. It is dry, but popular, like a "Sanjyo," "EXILE," or "Ishihara Gundan"? Something like that. I don't know if the aroma has calmed down or if the taste has mellowed, but it is easier to drink and tastes even better from the second day! It's definitely dry, this one! It has a gorgeous ginjo aroma and a sharp dry taste! This is the kind of delicious sake that goes down so smoothly that you find yourself drinking it all up.

Sweet and dry drink comparison 🍶✨✨✨. I went to Urahasen last year. This year I'm going to Uraotosan😁😁. Dry and refreshing It is a good place to enjoy a meal. Personally Urahasen for sake alone 🍶. For pairing, I'd go for Ura Otokoyama I guess 😊🍶🍶.
