Immediately after opening the bottle, it was dry and dry, perhaps due to the 17% alcohol content. Then, after leaving it in the refrigerator for about 5 days due to a business trip, the taste changed drastically! There is almost no aroma, but it has turned into a crisp, sweet and delicious sake. I drank it last year and enjoyed it so much I bought it again. Personally, it is my favorite new sake along with "Akagisan"✨. When you open the bottle and pour it, the aroma is crisp and gorgeous, like pears. The mouthfeel is light and immediately afterwards there is a solid gassy feeling. It's as shwashy as a carbonated beverage! Dry and clean on the palate, with pear and green apple flavors that are gorgeous and fresh. There is a hint of sweetness, so it is not only dry, but also well balanced. The astringent taste comes in the last half of the bottle and finishes it all off, so it is a delicious wine with a perfect ending! The sun is setting later and later, and we can feel the approach of spring. It's still early, but I'm looking forward to this year's spring sakes!

Kikusui Shuzo has been a customer of mine for the Kikusui Funaguchi Ichiban Shibori, which is available at convenience stores and supermarkets before I started using Sake No Wa. I remember that it was a pioneer of canned raw sake. Thanks to this technology, we now have more opportunities to offer unpasteurized sake to the world, and I think this is an immeasurable achievement in the sake world. [I like it, ferry 😆 ] I've had a couple of sake from Watarifune so far, and they're usually good 😋, with a nice balance of umami and bitterness from the gentle sweetness. I think Naminoe is a rare brand that you don't see much in Tokyo. I bought it for the first time, and I got the impression that it is moderately sweet and refreshing. The aroma in the background is a fresh melon candy type. It is more suitable for simmered dishes than sashimi👍.

I did not expect much...but I experienced the power of Nagano sake🍶...aroma: a faint sweet aroma of rice, a clear sweet bitterness...the bitterness is just right and does not bother me...it is delicious😋...but it is also delicious😋 when drunk as is... ...but it really comes into its own as a food sake! I saw this one at a store I sometimes visit and have been curious about it for a long time. I tried Kanenaka, a sake made by Nakajimaya in Shunan City, Yamaguchi Prefecture. The label is very cool. The manager recommended this sake, and it won a prize at a competition in Paris, so I opened the bottle with high expectations. The first saké was cold and the first saké was, "Hmmm? It has a strong unique flavor... It's a bit peculiar because it's a sake brewed from a traditional sake brewery... It's not a good match for me... I think it would be better to warm it up 🤔. I opened it for 2 days and drank it.... It has some kind of sweetness, and it's indescribably rich and delicious 😳. This is what I mean when I say that the taste opens up. A work colleague gave it to me as a souvenir from a trip to Nagano. My first bite was "much sweeter than I expected"! It's not fruity, but more like a smooth and sweet taste. It is delicious and smooth on the palate! The sweetness is followed by a slight sourness and bitterness. At 300ml, I think it will be gone in a day, but I'll leave it for a few days.
