This is the last bottle of Fujioka Tenbi 😳 The man himself seems to be getting ready to restart his business, and we are looking forward to seeing what kind of scenery he will show us again. ☺️ Now, after two years of hibernation, I was worried that it would turn old and senile, but it turned out that the fresh muscat aroma is really wonderful, perhaps because it is fire-aged 👍 The taste is also lively with a soft and lively acidity at the attack. Good evening, first series drop 🍶. Rumiko's Sake Junmai Sake Kubinokami 2024BY✨ Brewed by the wife of Natsuko's sake (Rumiko) 💁. I haven't read Natsuko's sake properly, and I'll read it next time. It's paired with Spanish mackerel marinated in saikyo miso for dinner: ☺️ The aroma is mild, almost scentless. The taste is a clear, transparent sake with moderate acidity and a soft sweetness of rice. It is a perfect match for a meal with its crisp and dry aftertaste while maintaining a smooth harmony when paired with Spanish mackerel in a position where it does not disturb the meal.

Tonight, we continue our series on past due sleeping 😅. This one has been sleeping in the back of the stocker for 2.5 years. La Jomon Junmai Shu Takumon Nama Shu 2022BY✨ Surprisingly, this lot has not been released in the past, so I opened the bottle thinking that it would have aged well since it's a draft sake. The aroma is half fresh gourd aroma and half aged caramel aroma. The taste has a beautiful acidity at the attack, but it soon turns into a sweet and delicious sake like the black honey of pudding. The aftertaste is also bitter and not the original flavor, but it is a taste that makes you feel warm in this season, and as a result it is delicious 😋😋😋😋 I will enjoy it later with lukewarm sake or something 🍶.

Tonight, I'm starting my evening after a weekend of work 🍶. I dug up the bottom of the stocker and found this rare find, so I opened a bottle 💁. SENKOKU Modern SENKOKU Mukunin Mukunin Kumi Naokumi 2022BY✨. I was surprised to see that there was still a pre-Edogari sake 😳 I looked closely and it looks like it's a limited edition directly pumped sake, and it's been 2.5 years since he last had it 😅. I was afraid to open the bottle, but the aroma was banana-like and more than that, it had a refreshing feeling of rummy, the taste was pleasant with chirichiri-gas and acidity, and there was a sweetness with a bit of maturity, very delicious 😋😋😋😋😋😋. It was so easy to drink that it will be gone in no time 🤩.

Tonight, the perfect drink for a long autumn evening 🍶. Senkori Akatombo 2023BY✨ It seems to be flying in this season, but I haven't been able to buy it yet 😅 So, as usual, it's from last season. The tag is "hiya oroshi" but I guess it is "hiya hiya oroshi" since it has been one year 🤣. The color is clear, and the aroma is a bit chemically and citrusy. The citrus on the attack tastes like lime 🍋‍🟩 and the acidity is really refreshing ‼️, so it's not a hiyaoroshi but a summer sake 😅 But the umami aftertaste is delicious, maybe because it's been a year 😋😋😋😋😋😋😋😋 because the temperature was cooler. I'm sure it will open up and become a bit more rounded as it rises. ☺️

It's the middle day of a consecutive holiday weekend, but now that the season has finally turned pleasantly pleasant, I'm enjoying a long autumn evening with a small glass of sake 🍶🌕. Nichinichi Korohshinko 2024BY✨ Following the last Sake Komachi, this one is made with rice from Niimasa 💁. The opening of the bottle was a bit rushed as it seemed to be full of gas, but no problem 😅. When I poured it into the sake cup, there were a few bubbles 🫧 I started with the tachikou (standing aroma). At first it was quite cold, so I couldn't really taste its characteristics, but as the temperature gradually rose, gorgeous aromas like pear, green apple, apricot, and rose appeared. The taste has a clear dry texture with a hint of gas on the tongue and a touch of acidity. It is different from the original, but this is delicious 😋😋😋. By the way, I think I haven't opened the Akisakura/Cosmos yet at home, so if I have some left after tomorrow, I might try to compare the two 🤔.

Tonight, a bit of an oddity here 💁. Fish in a cedar barrel in the shade of a tree x Tsuetoro Brewery ✨ Our first sake brewery, Kamishin Sake Brewery and Tsuetoro Sake Shop collaboration 🍶. It's a low-al sake called Kiin no Fish, aged in cedar barrels. The jacket looks more like wine than sake and this sake is said to be like that. Open the bottle and start with the standing aroma. The aroma of cedar barrel aging is not so strong, but it has a refreshing green apple and white grape acidity. The taste is also very similar to that of white wine, almost as if it were Japanese sake. It tastes like a malolactic fermented white wine. It has a pleasantly fruity sweetness with a pleasant acidity 😋😋😋😋 and the low alcohol content of 8.5 degrees makes it very easy to drink. Personally, I would have liked it a little drier, but I am satisfied with the taste 😊.

Good evening, here's another post for the project sake 💁. La Jomon Jennenshin Eido 2025BY✨ This sake is made with Rikuu No. 132, grown without pesticides, brewed in wooden vats, using mizu-hashiro (water yeast), and with no added yeast 🍶. Pouring it into the sake cup, it has a light cloudy color. The aroma is fresh lactic yogurt and floral, like a flower garden. The taste also has a craft saké-like attack, with a hop-like citrus flavor, rice flavor, and acidity that turns bitter and pungent and flows smoothly down the back of the throat. But this flavor is completely made in the way sake is made, which is amazing & very delicious 😋😋😋😋😋😋. Niida-san is a master of his craft👍

Good evening from the Okini-Kura here 💁. Collage Junmai Ginjo Sake Mirai I was able to buy a bottle of this season's Sake Future from O'Sherlock and I'm looking forward to opening it 😊. The aroma is fresh grapes and bananas 🍇. The taste also has a juicy sweet fruitiness on the attack, followed by a stretchy acidity, and then a dry sharpness on the last part that makes the back of your throat tingle, and this ∞ loop is so delicious that it is addictive 😋😋😋😋😋. The price is higher than before, but it's much easier to find than rare sake, the taste always exceeds expectations, and the price makes it a superb brand that never fails to deliver 😊.

The aroma is sweet and sour apple, and the taste is a great balance of fresh juicy green apple and full-bodied black grape-like bitterness 😋😋😋😋😋 It can be served either with food or alone, but I would rather enjoy it alone: ☺️

This is the second bottle opened this evening and I chose this one 💁. Kawanakajima Dry Special Junmai 2025BY✨ I'm pairing it with the Akinatai fish sashimi for dinner. The aroma is a mild rice aroma, which will not interfere with the meal. The attack on the palate is typical Kawanakajima, sweet and delicious, then dry, crisp and clear, with a relaxing taste 👍. Although it is dry, it is very easy to drink and quite smooth and delicious 😋😋😋😋😋.

I'll be drinking this craft saké tonight 💁. Pukupuku Brewing Pukupuku Hop KiKiKi - Hopped Nigori Sour Sake- 2025 Summer✨ This is the third edition of our regular sakes made in our own brewery 😊. This time it's a Nigori Sour and it's right up my alley 🤗. Opening the bottle was easy. The aroma is of citrus fruits with a hint of citric acidity from the white malted rice, and lychee, as the etiquette says. The taste is also delicious, with the texture of the bubbles poured into the sake cup, and the sweet and sour bomb that goes down your throat after the juicy sweet and sour bomb 💣 like Greffle Soda 🥤 😋😋😋😋😋😋. I'm going to have to open a second bottle of something different 😅 because I'm guzzling it down so fast.

This evening, we will open a bottle of this collaboration sake 💁. Sentori HelloWorld 4th by SakeLab Tokyo✨. Finally, or maybe it's too late, but this is the 4th collaboration sake with sakelabo. The reason why we started with the 4th one is because the 1st to 3rd ones are lying deep underground in the stocker and we can't get them out 🤣 (we can, but it's a big work 😅). So I'll start with the newest one, which has been sitting for 10 months 🤗. The opening was quiet. The aroma is tropical with a hint of green banana because it's so cold. 🏝️ The taste is also sweet and dry with a dry acidity. It is a Sentori, but it has the feel of drinking a classic sake and I really like it 😋😋😋😋 When it is ogara-mugara, it has a translucent milky white color and the flavor of the rice increases and it has a full flavor 👍. We will compare the sakelabo collaboration sake at some point: ✌️

I'm dropping a timely drink this evening 💁. Saint Hizirizm Sake Mother Active Sake Yamadanishiki 2025BY✨🫧. Unlike our usual Sake Mother Activated Sake, this is 100% Yamadanishiki Ver: ‼️ However, when I read the reviewer's post, his comment was a bit of a letdown as there was no usual rampant horse gas. I drank this season's normal one not long after it was shipped and it had the same feeling. ⁉️ and I opened it with trepidation this time and shhhh🤫🤫🤫🤫🤫. Oh no? I thought it was the same this time. I know a lot of people want that rampant horse gas, but it still has Tachika's luscious calpis yogurt aroma and rich, addictive sweet and sour taste 💪 😋. I just want gas❗️gas❗️gas❗️gas❗️ (regrettably) I had some soda water in the fridge, so I put it in and drank it, and it tastes more like the usual active sake mother, but of course the taste is diluted, but the attack and sweetness changes to a dry aftertaste, which is a good thing 😊.

Tonight, we start our evening drinking early on a holiday evening 🍶. It's been a while? Maybe not, but I'm in the mood for Abe, so here it is 💁. Abe Junmai Daiginjo Orikagarami Nama Sake 2024BY✨. We had some leftover Orikarumi Nama-shu, a.k.a. "Abe Gold", released in the early spring, so we wanted to try it. The bottle was opened very quietly. When I poured it into the sake cup, the top clearings were removed, but it was still slightly cloudy. The top aroma is a gorgeous pear and melon. The taste is a juicy fruit on the attack with a very elegant sweetness and a pleasant acidity that is too good to be true 😋😋😋😋😋 The aftertaste is also sharp, but it is a jun-dai-hakoshi so there is no tangy taste or stuckiness, so it can be described as a beautiful sake 🤗. After the ogara-meshi, the color becomes translucent and the umami flavor seems to have expanded 😊.

This is the second bottle opened this evening: ✌️ Rice and Agave Symposium Hanakaze 2024 ✨🌼🌪️ I like this brand of Ina-Agave so much that I only drink this series these days, 😅. I think it will be the 2024 one. The standing aroma is still the same as before, with a honey scent like grenfre and mead, and the image of a bouquet of a flower garden is expanding. The taste also has a sourness that feels a little gassy on the tongue, and from there it tastes like grenfruit juice and energy drink, and the last taste is bitter and pungent like medicinal herbs 😋🐴😋. I will enjoy it little by little. ☺️

Tonight, I'm dropping my first series 🤗. Kankoubai Junmai Ginjo AKI Owl Label 2025BY✨ This is a hiyaoroshi from a sake brewery in Mie that brews sake and plum wine, and is probably one of their autumn-aged products. The aroma was somewhat plum-like, which may have been my own illusion, but it had a refreshing acidity. The first sip of the dish is a tart and sour taste, followed by the sweet and juicy taste of apples, Japanese pears, green plums, and cherries. Delicious 😋😋😋. The back palate is sweet and umami with a dry sharpness, so it is a bottle that can be drunk without getting dull. ☺️

I know it's a little late to post this, but I wanted to congratulate a few people on their new beginnings 🥂, so I opened a bottle of this one 💁. Shinshu Kamerei Premium Gold Junmai Daiginjo 39 Miyama Nishiki rice 🐢🐢🐢🐢✨✨✨✨ This one has been in cold sleep for over a year and a half due to waste disease, but now it's waking up 👀 Now, this premium gold is made with Miyamanishiki and 39% jun-dai milled rice 😅 I think it has the same specs as Ginkame. The aroma is not flashy, but it has a sweet aroma of white sugar and graininess. The taste has a strong chili gas feeling, and combined with the sweet and sour apple flavor, it is a knockout 😋😋😋😋 The bitter and spicy aftertaste, sharpness, and lingering finish are also excellent, and at the end, I wonder if it has been aged for a year and a half? The taste is full and rounded, and the sake goes on and on 💮.
