I'm opening a bottle of this tonight to go with my dinner of sashimi (mainly white meat) 💁 This is actually my first post 😳. Kitayuki Junmai Ginjo ver.N 2025BY✨❄️ I've been drinking it outside many times, but this is the first time I've had it at home. I got this bottle on a recent live performance expedition 😊. I've only posted about Masayo-san (Garakudai) from Sado Island, but this one has a very long history and is a legend. Now, as for the tachiko, I like the aloe and mintiness with a graininess and coolness from the odorless because it is Koshi-tanrei. It tastes like this is a food sake, with a slight soft rice sweetness and no harshness, as if you are drinking clean spring water that is like air.

Tonight, I was going to do a gym workout 🏋️‍♀️ -> early dinner 🍚 -> no drinking Day, but I thought it's ok that I exercised 😅 I'm opening this bottle 💁. KAISUMORI Junmai Daiginjo-Yamadanishiki 40- 2023BY✨🌳🌳. I love this Junmai-Daiginjo Yamadanishiki so much that I got it over a year ago before the renewal of Yukinomayu. Finally opened the bottle 😅 From the standing aroma, it has a lactic acid aroma like sweet white sugar or undiluted calpis, which is typical of brewing forests. It has a rich sweet flavor, a bit of matured honey, and a silky acidic attack, but in the second half, it has a dry alcoholic taste like brandy, which is probably due to its maturity, and is very mature. It may not be as easy to drink as usual, but personally I find it easy to drink and delicious with a clean aftertaste 😋😋😋😋.

Miyazumi Junmai Ginjo Hachitan-Nishiki One time fire-infused 2024BY✨. It's been a long time since we've had a Miyazumi brand. ☺️ I'm not a fan of the "Kurakura". The first thing is to start with the aroma. The aroma is like a gentle muscat, white grapes, strawberry milk. The taste also has a pleasant acidity, a little rice sweetness and milky, but the latter half has an impact with a bitter dryness that lingers in the aftertaste. It is the first sake in a long time that has a sharp aftertaste, which I like 😊 delicious 😋😋😋😋😋.

Senkori Golden Kabuto Mushi 2023BY ✨🪲. As you can see from the BY, this is a Golden Beetle that has been laid up for over a year 😅. I remember that I drank it outside when it was released last year and it tasted so good, and I happened to be lucky enough to get a bottle. I was lucky enough to have a chance to get a bottle of it and now it is here. It has a citrusy aroma with a fresh acidity and a honey-like aroma like a noble sake or a matured aroma. The taste is also full, sweet and juicy with a hint of Senkou acidity and a bitter accent on the back end 😋😋😋😋😋.

Good evening, the week is over 🤗 I was in the mood for something to start my weekend drinking and here is the bottle I chose 💁. Wakanami Junmai Ginjo Omachi 2024BY 🌊🌊🌊. Finally, I can drink Wakanami's Omachi 😭. I'm super excited because the last time I saw it, it was already sold out 😊. The aroma is a mix of orange 🍊 and grape 🍇, which is very gorgeous and very typical of Omachi 🤟 When you take a sip, the soft and tasty rice sweetness and the juicy grape, orange and strawberry 🍓 spread all over your mouth. This is one of my personal top hits of the year!

Tonight, we open this bottle for a mid-week, after-work drink 💁. Abe DENEB 2024BY ✨🦢🌠. When it's a new brand in the Star Series, you can't help but drink it 🤩🤩. I was intrigued by the meta information about the second fermentation in the bottle, orikagari, nama sake and I like it too much 😊. The bottle was opened successfully after about 5 minutes of opening and closing the crown 👑😌. It is already in a state of "orikagari" because the gas rises when the bottle is opened. The aroma is lactic acid, with a refreshing grapefruit and lemon citrus aroma. The taste has a fizzy, bubbly sensation that spreads, and while the lactic acidity and rice sweetness are present for a moment, the bitterness and spiciness soon take over, making it a very delicious adult grefle squash 😋😋😋😋😋 It is similar to the previous Uchiai Kaikka🎇 in lineage, but it is hard to say which one is the better.

Tonight, we are opening our second bottle of this as a pairing for sashimi 💁. Shinshu Kamerei Green Label 2024BY I saw on SNS that this brand was sold directly from the brewery, but I gave up on it because the timing wasn't right, but it seems that they made a lot more than I thought. I was looking for this Green Label, so I got this one. ‼️ I was also impressed by the very reasonable price since it is a junmai sake made from multiple sake rice rather than a single sake rice 🥺🥹🥹, but I spent about 10 times as much on transportation so I enjoyed my ataoca trip 😅🥵🤣. The bouquet of green apple and muscat, which is typical of Shinshu Kamerei, is very fresh. The taste is also very tasty, with Kamerei-like acidity, juicy sweetness, and a bitter, spicy sharpness on the back end 😋😋😋😋. I can't drink anything else if I am offered this quality in an entry model at this price 😆 This is a bottle that shows the capability and seriousness of the brewer. I am very much impressed.

Tonight, I'm uploading this one, which I had opened yesterday but omitted to post 💁. Pukupuku Brewing Pukupuku Hop VaVaVa - DDH Doburoku- 2024BY✨🍶. This is a Doburoku brewed with double dry hops (DDH) from Aikoku, which we recently had with Sengoku x Houou Mida. ☺️ A little top clear. It is a cloudy white color and a little foamy. The refreshing aroma of hops like Greffles is perfect for summer 🥹🤩 The taste is also great with the balance of sweetness, richness and acidity of rice 🤩🤩 but the bitter taste of dry hop and lingering citrus juiciness in the back end is 😋😋😋😋😋😋 Full stirring gives it a mokumoku and 3D foam, texture of rice grain and a smooth throat. Also good 🤗

Tonight, I'm opening this bottle as an aperitif -> a mid-dinner drink before dinner 💁. Senkori UA Uchihanabi 2024 🎇. I guess they didn't release this season's bottle, so I'm going to drink it because I had last season's Uchiage Hanabi lying around 😅. The opening of the bottle was completed without difficulty and quietly ✅ When you pour it into the sake cup, the beer-like bubbles vigorously rise and then disappear. It has a light cloudy color, with a refreshing citrus lemon aroma. Delicious and perfect for the extreme heat as a drink😋😋😋😋😋😋. Maybe I should have let it sit a little longer this season as the guaguas have taken on a spark-like position 🤩.

Tonight is a late dinner after a business trip 🍶. Nichinichi Akitsu Yamadanishiki 2024BY✨ This is the season's Akitsu Yamadanishiki. It's still hot as usual, so I'm reaching for low alcohol sake😅. When opened, it has a gaseous feel and when poured into a glass, it has beautiful fine bubbles 🫧. The aroma is a clear and refreshing scent of uri. The taste is nice, with a nice acidity and a sense of bubbles popping. The aftertaste is wildly dry and has a nice sharpness. It is wildly dry & has a nice sharpness. Personally, I would have liked a little more alcohol. I thought it would be better if it had a little more alcohol content, but it is easy to drink and delicious.

Tonight, the 900th bottle of Karo is delicious and I want to enjoy the change a little more, so I'm relaying it here with the same yeast from the same prefecture and the same No. 9 yeast 🤝. Sake relayed here 🤝 San-do 穂増 Roku-no-sake 2024 ✨ I like San-do Homasu, but it's a Roku-no-saké, so I was not sure what to do with it... 🤣. Well, it's been a while since I've had a San-do Hozasu, so I'm going to enjoy it 😊. The bubbles are always very light and bubbly 🫧 after opening the bottle and pouring into the sake cup. The aroma is similar to the previous Koromo, with a soft sweetness and graininess like steamed rice, mixed with herbs and lactic acidity. On the palate, the bubbly acidity seems to bounce and dance on the tongue. After that, it tastes of lactic acid and Japanese pear🍐, which is typical for a sake that is made from the raw yeast, but there is also a caramel-like sense of maturity, but that much after two months of production? I'm a little surprised, but the fish is delicious with a dry sharpness that brings the whole sake together 😋😋😋😋.

Tonight is the start of the weekend evening 🤗. What a surprise, we have reached 900 check-ins ㊗️🎊🏆! First series drop on such a milestone 😊. KARO Planet 9 Type-A UNVEIL THE UNKNOWN 2024BY🪐💫❾ This is a sake by Koroh, the originator of Kyokai No. 9 yeast. It's a Concept Workers Selection, so it's different from their usual sake, but it seems to be a modern challenge sake, so I welcome it 😁. When the bottle is opened, the sound of gas escaping is pleasant, and it has a slight muscat or melon flavor, but because of the low temperature, it has a strong graininess, like brown rice. The taste is a complete turnaround, with a very chili feeling and a light acidity that comes in smoothly, and once you taste the fullness of the rice flavor, the bitterness quickly catches up with it, and it is my favorite adult bitter modern classic type of sake 😋😋😋😋. Apparently there is a Type-B? I'll check out the post of the sakewa reviewer and compare the two 😅.

Tonight is Obon week. My family is in normal mode, so we usually start drinking before dinner 🍶. I opened a bottle of this one 💁 to try a little sweet sake today. Sairai S's 2024BY✨ I thought I'd never seen this brand on sale before, so I immediately bought it. The aroma is also very Sairai, with a sweet bouquet of cotton candy and white sugar, and a honey-like depth. The taste also has an impression of a lot of chili gas, as you can see on the bottle opening warning ⚠️, followed by acidity and sweetness of rice, but the second half is quite dry and sharp, classic sake style 🍶. It is a rare taste for Sairai, but I personally like it very much and it is delicious 😋😋😋😋😋.

Tonight, my second post, a Houou Mita x Sengoku Aikoku drinking comparison 😊. Sentori Aikoku 2024BY✨ This is brewed by reviving an ancient variety, Aikoku No. 3. The brewing process is the same, but Senkou's is unfiltered and brewed with low alcohol. When I poured it into the sake cup, it was already orikarami. There is no gaseous sensation, but the aroma has the graininess of Aikoku and the banana aroma characteristic of Sengoku's sake. In the mouth, there is a weak tangy gas, and the acidity and sweetness that is typical of Sentori's sake are wonderful! The expression changed to that of a dry junmai sake with a wild taste, and it was delicious beyond my expectations 😋😋😋😋. It depends on your taste and TPO, but as a SENKYO devotee, I'm dominated by this one 😅.

Houou Mita Aikoku 2024BY✨ Tochigi sake's two top breweries, Hououmida and Senkou, have finally collaborated 😳 It seems to be brewed by reviving an ancient variety, Aikoku No.3. From the aroma, it smells like brown rice and grains, probably due to the ancient rice-like aroma. After tasting the sweetness of the rice, it has a dry Junmai sake flavor, making it suitable as a mid-meal sake. It is a bottle I would like to pair with sashimi and other Japanese dishes. Tonight, I went out during the day and it was hot 🥵, so I wanted to have a glass of bubbly 🫧🍶 to cool down, so I opened this bottle that had been hibernating for about a year 💁. AKABU SPARKLING GALAXY 2024✨🫧🌌. This is a SPARKLING GALAXY that is one of my personal top 1 or 2 favorite drinks from Akabu 😊. Opening the bottle is extremely peaceful 😌. Pouring it into the sake cup, the sake has beautiful bubbles 🤩. The aroma is not flashy, but it's gentle and cucumbery. The attack is also enjoyable, with a softly spreading rice sweetness, melon and pear juiciness, and an overall bitter dryness that makes you feel like you're drinking a real Champagne 😳. It is very easy to drink, but you can also feel the fullness of the wine and it is still delicious 😋😋😋😋😋.

Tonight, it's mid-week and as usual, I'm going to try to stay active in the drinking game 🙌 Instrument Masamune alternative Fresh HOP 2025✨ I thought it's been a while since I've had a Gakki, but I haven't had a Gakki since I had the same brand a year ago 😅 But I had a First Vintage last year and it was so good that I'm getting it again this year 😊. The aroma is very fruity, like a white wine. The taste is like drinking Muscat or Sauvignon Blanc, with a light acidity and a nice juicy sweetness. The aftertaste is also alcoholic and voluminous. But the price of wine has gone up dramatically compared to a long time ago, so I really appreciate this kind of challenge. 🙇‍♂️ In conclusion, it's really delicious 😊😋😋.

Collage Junmai Ginjo Banshu Aizan The first bottle of this season's Banshu Aizan is my personal favorite and probably the most delicious of all the Kuraraku.
