Tonight, we are opening a bottle of this phoenix 🐦‍🔥 as we did the other day 💁. Houou Mita BLUE PHOENIX 2024🐦‍🔥🫐 This was first introduced at this year's CSW, but now it's a regular release, and I couldn't suppress my desire to buy it, so I'll drink it early 🍶. The opening of the bottle was no accident. It has a cork stopper which is hard to open like the other day's WP, but thank goodness for fizzy type. ☺️ The aroma is mildly cereal, but once you take a sip, the sweetness of Muscat and Japanese pear fruits are wrapped in sparkling bubbles 😋😋😋😋😋😋. The aftertaste is also dry like sparkling and even more delicious 😋😋😋😋.

Yoshida Kurau - Night & Dance- 2024 🌃🕺✨ I would say this is my favorite brand from this brewery 😊 It is light and easy to drink with a low alcohol content, yet it has a solid volume and a nice sharpness. It has a solid volume and a nice sharpness👍 The aroma is mild, with a hint of cucumber and muscat. The taste is a delicious dry sharpness from the sweetness of the rice with a dance of chili gas and acidity on the tongue 😋😋😋😋😋😋. However, I have the impression that the umami is a little protein, perhaps because the last time it was laid down for a year and a half, or perhaps because the rice in this vintage is hard to dissolve, but it is definitely delicious. ☺️

Tonight, I will open a bottle of SAKE PARK 4 and open a bottle of this one. Tatami Abe Seishukudo PB Sparkling 2023BY✨🫧. I'm feeling a little drunk on alcohol, so I chose to focus on the drinkability of the shuwashu🫧 ☺️ The tape on the bottle says to be careful not to blow out ⚠️💥 and of course I didn't follow the advice to drink it within a month of shipping, so it's in a state of secondary fermentation in the bottle and magma is building up, so I went to the bathroom🛀 and tried to open the crown with a bottle opener little by little, but the gas was too strong. Tonight, I missed the sourness of Senkou-san, so I'm opening a bottle of this one, which I also overslept 💁. SENKOU KABUTOMUSHI KABUTOMUSHI Araubashiri 2022BY✨ This is Kabutomushi but in Araubashiri ver 🙌! From the aroma, it's a bit too long, but I can feel lemon 🍋 at the bottom of it. The taste is very sour and mature lemon squash 🍋🥤 but it's very tasty with the fullness and richness of rice 😋😋😋😋. I still regret letting it sit too long 🙇😋😋.

Tonight, we are trying our first series of this brewery 💁. Jyugodai Kuroemon Junmai Ginjo Miyamanishiki Shigome 58 2023BY✨ It's amazing that this sake brewery in Kiso County, Nagano Prefecture has been around since 1650 (Edo Period) 🤩👏! The sake rice is Miyamanishiki. The aroma is mild and grain-like. The first sip has a pleasant acidity and a hint of white sugar, followed by a grapefruit-like bitterness in the second half and a crisp finish. You will not get tired of drinking it, and you will easily drink more 😋😋😋😋. Brings back memories of eating grapefruit with sugar when I was little 😊.

Tonight, I would like to open a bottle of a collaboration sake from these two breweries 💁. Tanaka Sengyo Itoshima pesticide-free Yamadanishiki Junmai Sake ver. 2021✨✨✨ Tanaka Rokugo/Itoshima's Itoshima Sake Brewery and Senkyu's collaboration sake, but as you can see, 2 years have passed 😅... I think it's fire-brewed, so I'll drink it without worrying about it. First of all, the aroma has pear, muscat, gourd, rice grain aroma, lactic acidity from the sake yeast, and a little honey maturation aroma, which gives the impression of increased complexity due to 2 years of age 😊. The taste is delicious 😋😋😋😋😋😋😋😋😋 The aftertaste is very good with umami, richness and tangy dry accent by makashi and maturity👍 I thought it was a bit like Senkyoku, but it was made by Itoshima Sake Brewery, so it makes sense. (I thought it was a bit like Senkou, but since it is made by Itoshima Sake Brewery, it makes sense.

Tonight, I'll open a bottle of this one for the first time in 2 years, as it's a timely sake & the 10th of every month is Tenbi Day 💁. Amami Shinshu Junmai Ginjo Nigori Nama 2024BY❄️❄️❄️ Tenbi's new sake nigori aka "Yukiten" has made a comeback after a 2 year absence 🙌 I opened the bottle quietly and calmly: ☺️ The aroma is a muscat flavor, which is typical of Tenbi. ‼️ However, when I took a sip, I couldn't feel the shwashiness that I was expecting. It's delicious 😋, but it doesn't have the impact and impressive balance that makes you say it's delicious in one sip 😢(I really wish we could compare the two, but other than the Tachika, they seem to be different sakes). (I really wish we could do a drinking comparison, but I still feel it is a different sake except for Tachika) I hope that they will improve it over time, but I feel that the wall will be much higher and steeper than I imagined. (I don't think I will buy it again.) I am sorry for my dry comment after a long time 🙇.

This evening, I am posting my second bottle. It's been a while since I've had a drinking comparison of these boys. Collage Junmai Ginjo Yoshikawa Yamadanishiki 2022BY✨        Tojo Yamadanishiki Next, Yoshikawa-san. I missed to write about Tojo, As usual, it is 2 years old BY thing 😅. Tachika is totally different from Tojo, it is not fruity at all and has a mild grain with a clear melon🍈banana🍌 flavor. The taste is also soft with a base of sourness. The sweetness and umami spread with a sense of transparency. The spiciness of the aftertaste is also somewhat soft and totally gentle 😋😋😋😋. For me, I think Tojo has the edge this time 😊. But I would like to see the potential after a few days 👀

Tonight is my first home drinking post in a few days. It's been a while since I woke up to a limited edition from this brewery that has been sitting for a year and a half 🤩. Sancho Hanakairo Limited Edition Yamadanishiki 2022 ✨ From the standing aroma, it is mild with a hint of pear and lactic acidity 😌. When you put it in your mouth, you can feel a little bit of gas, a little bit of matured caramel sweetness and umami, and a bit of bitter dryness. It is bitter and dry, but the overall quality of the sake is dry. (I think it was the mark of the sake yeast from the back etiquette😅) It was very good with sashimi and grilled fish, perfect for aperitifs and mid-meal drinks 😋😋😋😋😋😋.

Houou Mita White Phoenix 2022BY🐦‍🔥⚪️✨ It has been two years since it was produced, and it has been sleeping without ever seeing the light of day. I've had the Black before, but I'm going to skip the Gold and try the flagship White 🤗 Well, it's got a great appearance ☺️ and the bottle stopper is corked instead of the usual crown 😳 As soon as you open the bottle, the fruity ginjo aroma is intense and gorgeous, and I'm happy at this point 😆 In fact, it's so elegant and soft on the palate that I'm not even sure I'll be able to taste it 😆. ✨ The taste of rice spreads softly in the middle and is very delicious 😋😋😋😋😋 The bitter spiciness in the aftertaste accents the sake with a high degree of perfection. I have the impression that it is like J4D, the best sweet and tasty sake 😊.

Tonight, we will open a bottle of this sake from Miyagi for the first time in the series of home drinking 💁. Kenkun Ichi Tokubetsu Junmai Shu Jinryoku 2024.8 🍶 I'm new to the sake brewery, but I've only had one saké rice called "Jinriki" once 😊. I first had it cold and wondered if it was a classic sake. I thought it might be a classic sake, but it surprisingly has a modern impression with a refreshing aroma of Japanese pear and muscat, soft acidity, and sweetness that gradually spreads. It is a classic sake with a modern flavor that is perfect as a food sake 😋😋😋😋 It also looks good heated so I will try it later 🤗

TSUCHIDA × TSUKE KIMOTO HOP NIGORI 2024.6 🍶. The top clear liquid poured into the sake cup has a light pinkish-orange tone with aromas of citrus, herbs, vanilla, and black tea. The attack is pleasantly acidic and gaseous, with a clean sweetness and hop bitterness that makes it easy to drink and addictive. It's delicious 😋😋😋😋😋😋😋.

My favorite brand, but it's been a while since I've had this one, so I bought this one 💁 and I have to drink it every year. Sono Kangiku Occasional Series Junmai Daiginjo Denshogiku Yamadanishiki 50 Super limited orikarami nama sake 2024✨🔴✨ Denshogiku Red season is here again this year and I'm looking forward to it 😊 I was able to open the bottle quietly so I started with the top clearings first. When I pour it into the sake cup, it has a very light nigorigo color with a little gas and an intense tropical fruit aroma that makes me happy. ☺️ In the mouth, there is a sourness with a touch of sizzle and a firm sweetness, but in the second half, the bitterness and spiciness come in slowly, and the aftertaste is crisp and delicious 😋😋😋😋. When the lees are mixed well, creaminess is added and the overall impression is soft. I think this year's Denshikiku Red will also be a good performance 💮.

Fukkai Yamadanishiki Namaishiki Nama Hashiwari 2024BY 🌊🌊🌊🌊🌊 This is the first bottle after the brand name change from Fukuda to Fukkai 😊. Pour it into the sake cup and start with the aroma. Not the usual Yamadanishiki-esque melon aroma, but a gentle, clear, bluish herbal 🌿 feeling that reminds me of the sea in Nagasaki 😲. In the mouth, the sweetness of the rice spreads with a pleasant, clean acidity and a slight bubbly feeling that sinks in gradually, and it is delicious 😋😋😋. The back palate has an edgy dryness that is typical of a sake yeast yeast yeast yeast yeast 😊.

Good evening, I'm going to drink this brand for the first time in a long time 💁. Kudokibe Junmai Daiginjo Jr. and Hakutsuru Nishiki 2024BY✨ It's been a while since I've had a sake with Ogawa yeast 😊. It's the same rice as the other day's Jikin, so I'm going to have it as a drinking comparison based on my memory and the past logs. When I opened the bottle, I could smell the sweet aroma of fresh melon and white sugar. The taste is sweet, but the base is sour and has a soft sweetness that is not too strong, and the low alcohol content makes it easy to drink and very tasty. The finish is a little spicy and heavy, expressing the volume of the sake. ☺️ First Kudo in a long time and a very satisfying one 🙌

Shinshu Kamerei Junmai Daiginjo 39 Miyamanishiki 2021BY I checked the log and found that it was made at the same time as the one I opened last July but shipped at a different time 😯 but 2 years have passed since it was shipped😅. I'm worried about the condition, but let's drink it without worrying about it. It has a nice fresh green apple aroma from the moment you open the bottle. ☺️ When you take a sip, the beautiful acidity and sweetness that is typical of Kamerei is a hit 🎯 The bitterness in the back end is also pleasant, and you can drink it smoothly while admiring how delicious it is 😋😋😋.

Tonight, here 💁 which is becoming more and more popular these days. Okuroku Junmai Ginjoshu Namaho "Unite" 2023BY✨. But I am intrigued just by the keywords "Yui no Kou", "No.6 yeast", and "Namo yeast". It has a more gorgeous ginjo aroma than usual No. 6, and a sweet aroma like honey or pudding caramel. The attack is also delicious with beautiful acidity and a full sweet flavor 😋😋😋😋, but the finish is crisp and dry, a bottle that I am very satisfied with 😊.

Tonight, I'm opening a bottle of this one that I was lucky enough to procure the other day 💁. La Jomon Nanuca Terrestrial (temporary) ✨✨✨ It's an assemblage of three different sake rice (Dewa Sanzan, Kame-no-o, and Yuki-No-Mikami) in equal amounts in a pure large spec. ☺️ From the aroma, it has the aroma of La Jomon's No. 6 yeast, which is mild and has no aroma characteristics, but it has a fruity aroma of cherry 🍒 and a roasted aroma like coffee or cacao that I personally have never experienced before 😊 The taste also has a light impression with acidity at the attack, but the layered flavor gradually spreads out,
