Tonight, Shinshu Kamerei was so good that I opened this bottle of Ohatsu-san as a second bottle in a hurry: 💁‍♂️ Saku-no-hana, hand-packed and directly pumped, made with rice grown in our own rice paddies SPEC-D 2024BY✨. I was attracted by the unfiltered direct pumping of Hitogokochi, which is my favorite sake rice 😅 The aroma has a clear and light citrus and graininess that is typical of Hitogokochi. The aroma is clear and light, with a hint of citrus and graininess, as is typical of Hitogokochi. The mouthfeel is pleasant with chirichiri-gas and clear acidity, and the sweet and delicious fullness of the rice is quickly followed by a bitter dryness that is easy to drink and delicious 😋😋😋😋. I am impressed by the variety of delicious Shinshu sake. ☺️

Tonight, I'm exhausted from the gym, but I'd like to get pumped up with this drink: 💁‍♂️ Shinshu Kamerei Noto Yume Mizuho ✨🐢. This is a bottle brewed with sake rice from the Kazuma Sake Brewery 😊 From the standing aroma, it has a clear greenish wild grass and soft graininess. When you take a sip, unlike the usual intense sweet and sour fruity flavor, the sweetness and sourness with a gentle ripeness like strawberries spread like a sinking feeling in your body. The latter half of the sake has a dry, neat and cohesive quality with a firm bitterness and alcohol dryness. Very delicious and I can't stop drinking more 😋😋😋😋😋😋.

Tonight is the start of Kitchin Drinker with a leisurely weekend to prepare a quick dinner 🤣. The muddy pickings continue, and while Masayo-san was delicious the other day, I'm going to drink my brother's 1.5 year aged one for good measure 💁‍♂️ Abe x Tatsumi Seishukudo direct pumped sake orikagarami 2023✨. This is a straight draft sake, also known as Abe White. The bottle has a sticker on it to warn people to be careful when opening the bottle because it is fermenting in the bottle. ⤴️ But when I was comfortable storing it vertically in a cool place for a long time, as soon as I removed the metal fittings, it exploded 💥 Oh, no 😅 I thought, but the metal fittings caught the stopper nicely😌 No spills, just surprised, but 😵 But the bottle is automatically agitated to keep the bottle on the bottom lees. But inside the bottle, the lees at the bottom of the bottle rose up with automatic stirring and looked like dancing snow ❄️. I enjoyed the sudden taste 😊. When I poured it into the sake cup, bubbles so vigorous you'd think it was sparkling spread across the surface and disappeared 🫧🫧🫧🫧 The standing aroma is a little sweet and juicy, like melon or pear🍈🍐. It has a tingling sensation of bubbles popping on the tongue and a sweet and delicious taste of gentle rice and lactic acid, but it has a dry sake quality and a great lightness, probably because it is a sake with a raw yeast base, which is very delicious 😋😋😋😋. It was a gem worthy of Masayo's Aniki 💮😋😋😋.

Tonight I would like to drink Masayo, my bikini 🤗. Gagakuyo - Hiwa - Nigori 2023BY✨ The taste is clear with just the right amount of acidity and sweetness from the rice, and the finish is crisp and delicious 😋😋😋😋😋😋. When mixed on the lees, the lactic acidity and creaminess increases, making it even more delicious 😋😋😋. I was satisfied with Masayo this time ☺️

Tonight, this will be another long time since I've been to the brewery: 💁‍♂️ Kawatsuru Olive Active Nigori Nama Sake 2024BY🫒🫧. It's the season for muddy nipples, and since Sanuki Kuraudai is quite sweet, I decided to try this one 🫧. There was a bottle opening explosion💥 around the neck, but it opened without a hitch. ☺️ The top clearings were also removed cleanly, so when I poured it into the sake cup, many bubbles were rising🫧🫧🫧🫧 The color is clear with a very light whitish cloudiness. The aroma is lactic and olive, but the sweet and sour taste of Japanese pear is more memorable. When you put it in your mouth, you can feel the gas bursting on your tongue, and the finish is crisp and very delicious 😋😋😋. When mixed with lees, you can taste more olive 🫒ness and bitterness, which is also good 👍.

Good evening, this is my second post. The first lot of the season has been released, but I've been sleeping on this one from three seasons ago, as usual, here 💁‍♂️ Sancho Hozu 2021 (Gonoho Brewery) ✨ I'm surprised I didn't realize it had been sitting for over 3 seasons 😱. From the standing aroma, it smells like a well aged aroma😅 (not in a bad way, but it turns into sweet caramel and roasted coffee) and the taste is a concentrated sweet chocolate 🍫 and pudding 🍮 with a good amount of gas 😆. I learned once again that I should drink the sake as soon as possible and not be too sick of wasting it 😓.

Good evening, I posted a little while ago about a different brand of sake brewery: 💁‍♂️ Nozomu Nozomu, Junmai Akita Sake Komachi, Unfiltered, Bottle Heated and Fired, 2023BY✨. It's from a brewery in Tochigi, but I'm not sure if it's a respect for Akita sake or not, but I'll drink it without worrying 😊. The nose has a mild graininess and a slight sourness from the sake brewing process. In the mouth, it's delicious 😋😋😋😋😋😋 The rough dryness of the sake aftertaste is also good 👍.

Good evening, this is my first series of drinking at home, but I bought this one 💁‍♂️ because it was so good when I went out for a drink a while ago. Kamo Kanehide Special Junmai 13 Hi-iri 2024BY✨ This bottle has a low alcohol content of 13 degrees Celsius even though it is a pure sake. From the standing aroma, it has a gentle yet refreshing impression of weak muscat and minty herbs: ☺️ When you put it in your mouth, you can feel the chili on the tip of your tongue, but the dryness of the special junmai from the firm acidity, fruity sweetness and umami accentuates the sharpness of the back end, which I really like 😋😋😋😋. I don't know the sake rice, but since it is from Hiroshima, is it Hachitan or Senbon? Or Yamada? I'm trying to figure it out, but I get the impression that it is similar to Shinshu Kamerei Junmai Hitogokotsuki and will be a regular sake in our house 😊.

Good evening, this is the wrong lot of this one that I had just uploaded a photo of ahead of time: 💁‍♂️ Collage Junmai Ginjo Orikagarami San Namaishu 2022BY The first lot is the Sherlock ORIGARUMI Sanshu 😅 I don't have the palate to tell the difference between the lots, but the aroma is a little matured. The top clearness has a dense sweet attack, but it tastes more like pear than melon 🍐. When the lees are involved, the milky and silky taste is added, like a café latte or chocolate latte 🥺 This is delicious 😋😋😋😋.

Tonight, I'm opening an additional bottle of this one as the sun has been drinking it up so quickly: 💁‍♂️ Sentori Modern Zero 2024BY✨ It's a traditional classic and modern after renewal to the Edo style of brewing. ☺️ It will be a 100% Yamada-Nishiki Nama-Hashimoto unfiltered unpasteurized sake from Domaine Sakura. From the standing aroma, there is no strong aroma but a thin lactic acid aroma and banana aroma. When you put it in your mouth, you can feel the pleasant acidity and roundness of rice and lactic acidity on your tongue 😋😋😋😋. I wanted to compare it with the old version classic and modern but I wonder if it's available anymore 🤔.

Good evening, I guess it's been a while since I've been there, but here's a collaboration sake from this brewery: 💁‍♂️ Nichinichi Homasu 2023BY✨ This one is made with Hohomasu from Hananaka-san, who brews sansho in Kumamoto. I'm getting excited whether I like it or not. ⤴️ The bottle is quite gassy and nice when opened 😊 When poured into the sake cup, it has petit bubbles🫧🫧🫧🫧 Standing aroma is near odorless with a slight herbal, bluish nuance. In the mouth, it is a perfect adult cider 🥤 The gas, acidity, gentle sweetness like pear or apple, and bitterness and sharpness on the back end are in perfect harmony and the sake goes on and on 😋😋😋💮 It was delicious 💮💮.

Tonight, I went out for a drink and came home drunk, but I didn't have enough to drink, so I opened a bottle of this sake: 💁‍♂️ Chiyonohana Special Honjozo Shiboritate Namazume 2024BY✨. This is a sake that is distributed within the prefecture by the Sugihara Sake Brewery, which brews the famous Imi, the smallest sake brewery in Japan 🙌. This one is a complete clear sake. Tachika has a darker pineapple/tropical flavor compared to Imi 🏝️, but I personally like the more mature, clear pineapple flavor ☺️. The flavor is mainly sweet and tasty, but it has a clear, crisp aftertaste and is made so you don't get tired of drinking it, which I really prefer 😋😋😋😋. I can feel the depth of Mr. Sugihara's spirit in this bottle, but I don't have his usual poems 😅.

Tonight, after working out 🏋️, I have a tendency to drink even though I know it's the natural enemy of muscle growth, 😱. I'll keep it to a small amount here out of guilt 😅. Wakanami NAMICAN 2024BY 🌊🌊🌊🌊 This is my favorite Junmai sake from Wakanami in a can bottle ✨ I procured two bottles, one for drinking and the other for going out 👛. The aroma is almost odorless and slightly herbal. The taste is mainly sour and juicy like a fresh muscat 😋😋😋😋😋😋 The second half has more alcohol and a spicy heaviness, which makes it even better that it is not only shabby👍 I can't go wrong with Wakanami after all 😊.

Tonight, we're having a late lunch, an early dinner, or an early evening drink on our day off 🙌! I'll be drinking with this one for the first time in a long time: 💁‍♂️ Kaze no Mori Challenge Edition 2024 🌪️🌳 The brewer made a Kaze no Mori that he wanted to drink, and as usual, the opening of the bottle is accompanied by a pleasant sound of gas escaping from the tank. The taste is quite restrained in terms of gasiness, but the assertive acidity, sweetness like condensed milk strawberry 🍓, and silky smooth flavor are very delicious 😋😋😋😋 The back palate is just a bit heavy on the tongue, but overall it has a light taste 😊.

Collage Junmai Ginjo Orikagarami Ⅱ Nama Shu 2022BY✨ I'll start with the second one since the first one was uploaded last year 🤗. The aroma is not at all old and has a soft smell of rice. The aroma is not at all old and there is a soft smell of rice. When you put it in your mouth, you will feel the tingling stimulation and melon 🍈 The sweet juiciness and the sharpness of the aftertaste are so delicious and happy 😙. When you mix the lees, there is no big change, but the rice feeling and texture is silky and perfect for winter ⛄️ ☺️

Tonight, we have a sake from this brewery that we haven't had in a while 💁. NIIDASENSHU Taru Sake 2024BY It looks like a barrel-aged pure rice sake with no additive yeast, and the liquid has a light pinkish hue 😳. The aroma is a lactic fermentation nuance of the sake yeast in the barrel-aged aroma, and the taste has just the right amount of wildness of the sake yeast and the depth and umami of the matured taste, making it surprisingly easy to drink and delicious 👍.

Tonight, we open a bottle of this season's can't-miss 💁. Sono Kangiku OCEAN99 Shiroginoumi -Snow sea- 2024 ⚪️🩶🌊 I got this one again this year, which is hard to compare with the Denshogiku Red that I had the other day 🤗. The bottle has a vent hole so you can open the bottle without difficulty 😉. When poured into the sake cup, it has a gorgeous aroma of tropical fruits, The taste is sweet and juicy with a hint of sourness and a bittersweet spiciness on the back end that makes it easy to drink 😋😋😋😋. However, personally, I would definitely prefer a rambunctious horse with full gas 😅💥😋⚠️

Tonight, I'm opening a bottle of Okiku here for the first time in a long time 💁🌼. Koei Kiku Sukai Seikai 2023BY🌊🌊🌊 Is this a new brand? I was curious about the specs of using 100% special pure polished Yuyamanishiki, which is why I loosened my purse strings 😅. From the nose, it has the freshness of grapes and a rustic impression of smoked grains. The taste has almost no gas and the impact of sweet and sour like when you eat a grape is just as delicious 🎯😋🐴. There is a decent amount of bitterness in the aftertaste, which is also nice 🤩. Oh, I'm tempted to try the Sunokure Yamadanishiki and some of the others in this season's lineup again 😊.

Tonight, it's been a while since I've been to this sake brewery in Akita 💁. Isshuikusuisei Premium 2024BY✨✨✨✨ This is a high-end line of Fukurokuju Shuzo. It's a wine-like departure 🤩🤩. The aroma is a mild grain aroma with a hint of citrus. The taste is characterized by a beautiful acidity and a grapefruit-like sweetness and bitterness, and I feel that it has a wide range of uses both as a stand-alone sake and as a food sake 🤗. It seems to be a pure OSPEC but it has a mature taste and is very delicious 😋😋😋😋😋😋.

Tonight, we opened a bottle of this new sake nigori series 💁. Ohmine 3 grain Winter no Otosore 2024BY✨ This is Ohmine's first regular winter sake in a while. From the moment the bottle is opened, the piquancy of the wine heightens expectations. ☺️ When poured into a glass, it has a petite, silky appearance, The fruity aroma of melon that rises in the air, the juiciness that makes you feel as if you bit into the flesh, and the richness and sharpness of the finish are just like an adult melon cream soda🍈🥛🥤 and very delicious😋😋😋😋😋. I liked it even better when it was well mixed with the lees, it took it to a more mature level 😊.
