Tonight, I'm opening a bottle of this one, which has also been laid up for a little over 2 years, following the other day's laid up metaphysical now 💁🤣. Abe Junmai Ginjo Hi-iri 2022BY🥈🥈🥈🥈 Stocking lot vol.3 This is the first time in a long time that we have had a lot of Abee Silver, but there is a reason why we have been waiting for this lot.., This lot was previously brewed with 55% polished rice, but this time the rice was polished to 60%! The reason is... Mr. Abe made a mistake in ordering the milled rice. 🤣. So although it is called Junmai Ginjo, it is designed to be almost Junmai. However, the yeast was changed from Association No. 901 to Niigata G9 yeast to match the rice polishing ratio, and the alcohol content has also settled down from 15 to the 13 degree range. By chance, this makes it a special model in a way 😳. Well, the opening is quiet and the standing aroma is no aroma to very little steamed rice and a thin lemon nuance. The taste has a beautiful acidity at first, followed by the sweetness of the rice, but the citrusy poppy taste is the winner 🥇. The aftertaste is even more delicious with a slightly aged, mellow volume and a sharp spiciness 😋😋😋😋😋😋. A rare silver psycho 🙌!

Tonight, I'm opening a bottle of this one, which has been laid up for 2 years from the bedding series 💁. Jikin Junmai Ginjo Yamadanishiki Hiiri 2022BY✨. Well, it's a period of hibernation as if to say I've slept well 😅 However, the aroma is unexpectedly very fresh and youthful with a nice aroma of melon, pineapple and rice bran 😋😋😋😋 The taste is also delicious with a beautiful sweet and sour attack first 😋😋😋 The second half is bitter and spicy beyond the Q/A reluctance yesterday, the first and second halves are completely different sakes. It's like a sake, but it's a fusion of modern and classic in a high level of harmony and great workmanship 💮.

Tonight, we open a bottle of sake from this young brewery 💁. Q/A LABO reluctantly 2024BY✨ This is a test brew of Q/A, which seems to focus on "astringency" 🍶. Pouring into the sake cup, it has a sooty, nigorigo color. The aroma has a faint scent of cucumber. In the mouth, you can feel the sweet and sour taste of cucumber/melon at the attack, but the astringent taste spreads throughout the whole body from the middle 😆 It has a bitter and mature taste, which is a type of sake I have never tasted before and I thought this was a good one 😋😋😋😋😋😋.

Tonight, the first bottle of Koshuizo was drunk like juice, so we forced a switch and opened a second bottle of this one 💁. Sentori Grand Nature 2024BY✨ It seems to be a new product in the Kijoshu line of the Natur series, but there seems to be almost no difference in specs from the previous ON -w 😅 Well, let's drink it anyway. The nose has a sweet citrus aroma of apricot and orange, which is typical of kijoshu. The first sip is based on a strong acidity, but it is followed by a voluminous sweetness that makes it a perfect aperitif or after-dinner drink. Overall, the sake is light and easy to drink, so even those who do not like kijo-zake can enjoy it easily 😋😋😋.

This is a new addition to Echigo-Tsurukame's Modern Challenge lineup. This time, too, a bottle overflowing with love for STAR WARS. Low alcohol, sparkling, and draft sake... I'm excited about my favorite meta information. The bottle was opened quietly as it was very cold ✅ Pouring it into the sake cup, there is a bit of nigori (soot) and bubbles 🤗. The aroma is fresh and greeful, with a citrusy bitter acidity of lemon. The taste is characterized by stimulating gas and acidity, and the refreshing grefle sweet and sourness and bitterness in the aftertaste fades away as it goes down your throat comfortably. It's like drinking an elegant grefleur sour and I can't wait to try it again 👹😋😋😋😋😋😋. The power of death_⭐︎star is still terrifying... 🤣

I'm finally feeling better & it's the weekend, so I'd like to resume my drinking. I was so sick, but I wanted this one 💁. La Jomon Epoché Junmai Sake Namaishu 2024BY✨ This is the first Epoché in 2 years! And since it's a draft, we can't help but drink it 🙌 The aroma is soft and refreshing, with a hint of cucumber and lime. In the mouth, you can gradually feel the sweetness and deliciousness of the rice in a thin pokari from the beautiful acidity, while the latter half has a bitter accent and a nice sharpness 😋😋😋😋😋😋. I've been drinking spods because I've been sick and this might be just what I need after being sick 😅🤣.

This evening, I opened a bottle of my favorite sake brewery, Collage. Collage Junmai Ginjo Natsugin Usu Nigori 2023BY The first time I went to the beach, I was in the middle of the night! But as promised, we dropped last season's 😅 From Tachika. It's hi-iru so it has fresh juicy melon 🍈 and I'm smitten 😁. It has a juicy sweet and sour taste at the attack, but it has a bitter, dry and dry taste from the middle and it lingers for a long time. I think if the temperature is raised a little more, it will become softer and will be in devil's repeat mode, so I will drink it slowly over the weekend 😋😋😋😋.

Tonight, after dinner, I opened this bottle as an after-dinner drink 💁. Pukupuku Brewing Inu Chari Doburoku feat. This is a collaboration sake between craft saké favorite Pukupuku and craft gin Tatsumi Brewery 🙌! Lately, sake x gin collaboration sake has been popping up. As a nomurier, as long as it tastes good, the result is all right, so we'll have it right away 😋. When I opened the bottle and poured it into the sake cup, it was a beautiful light cloudy top clear with bubbles of petit gas. The aroma has a lactic sourness that is typical of mizu-hashiroshi and the freshness of herbs. When you put it in your mouth, the gas bubbles and the sweetness of the berry flavor follows, like an adult fanta grape 🍇😊 The aftertaste is also light, but with a light dryness that makes you wonder if it's sake or gin 😋😋😋😋😋. When I tried it in doburoku state, it changed like a fermenting unrefined sake like a puku-puku cloud ☁️ 😳 It was very thick and thick. It has a texture of rice grinded on the tongue, and the lactic acidity is very good. SAKE x GIN is going to increase from now on😃.

Tonight, open a bottle of this major sake 💁. Saku/ZAKU IMPRESSION Type G Junmai Genshu Unfiltered Direct Kumi 2024BY✨. From the bottle design, it looks like a series with a modern construction, not a regular lineup 😊. The bottle was opened with a popping sound. The aroma is sweet and melon-like with a hint of flint and charcoal. The rice used is undisclosed, but is it Yamadanishiki or Omachi? I checked and found that they use "Mie no Yume" and other indigenous rice varieties 😳 This may be the first time I've ever tasted this. The taste is impressive with the freshness of chirichiri-gas from direct pumping, and the sweetness of the rice can be enjoyed in the middle, and the finish is delicious with a salty-sweet taste with a touch of alcohol and volume 😋😋😋😋. This is a pattern that will be gone soon😅

Ski Masamune Sour Overdrive Limited Unfiltered Nama 2024BY⛷️⛷️⛷️ It seems to be a sake made with mizu-hashimoto x multi-acid yeast x white malted rice, and seems to have high acidity, but there are no specs listed. From the first aroma, it has a soft lactic acidity and a bitter sweet aroma like chocolate. The taste has a strong dry acidity with a moderate sweetness, but it is not too "sour" and has a gradual rice flavor, with a good balance of citrusy lemon-like freshness and bitterness on the back palate. I will check out other brands 🙌!

Tonight, the sake brewery collaborated with Tsuke-san for the first time in a long time here 💁. Hiraizumi x Tsukekuro Sake Brewery Yamahai Junmai Tokichifuku 2024BY✨ The shipment is in February this year, but it seems to be a matured sake. When poured into a sake cup, it has a golden hue 😳 The standing aroma is also matured aroma like whiskey 🥃. The attack of the taste is unexpected with a soft sweetness and umami of rice that is not typical of Yamahai Junmai. The second half is also alcoholic, but strangely enough, it can be drunk smoothly and is certainly delicious 😋😋😋😋😋😋. Even if you are not a fan of matured sake, this one will not be a hurdle for you. It looks even better at room temperature or warmed up. ☺️

Tonight, I opened a bottle of this sweet and delicious sake because I forgot it was sitting here 💁. Chiyonohana Junmai Ginjo-shu Shiboritate Namazume 2024BY✨. This sake is distributed within the prefecture by Imi, but it is a junmai ginjo-type sake 🍶. The aroma is a loud ginjo aroma with a tropical pineapple aroma that is typical of Sugihara's production. The taste has a sweet and juicy impact, but the middle to bitter dryness makes it strangely light and easy to drink, which is Sugihara's magic🪄😋😋😋😋🪄😋. Really, the taste is almost the same as that of the Imi, so I am very grateful to be able to drink this one when I want to without having to fight in vain for the premium 😊.

Tonight, we'll start the week off with a collaboration between La Jomon and Spring Haze: ⤴️ La Jomon x Haruka IDEHA Direct Kumi Nama 2024BY✨ Continuing on from yesterday, this sake is made with Kame-no-o. I had given up on getting the straight draft due to the recent release of the hi-iri version, but luckily I was able to get it, so I'm going to try it right away. The aroma is a gentle and clear Uri aroma like No. 6 with a hint of smokiness from the rice. The taste is pleasant with the chirichiri-gas and acidity from direct pumping, the sweetness of the rice is potpourri-like, and the bitterness and spiciness in the back end are just right, delicious delicious delicious 😋😋😋😋. It was a very satisfying bottle as I was not able to drink the nama-shu type last season 💮.

Tonight, I ate dinner early at the end of Gym workout 🏋️ and dozed off a bit 💤 I woke up and started drinking slowly 🍶. Sentori Organic Naturals, draft 2025✨. This will be my first Naturals Nama after the return of Edo, so I was curious to buy it. When poured into a sake cup, there are quite a few gas bubbles rising to the rim and it has a light cloudy color. The aroma is complex and refreshing, with Sentori's typical blue banana, papaya, muscatel, nuts, and yogurt. When you take a sip, you can feel the tingling of gas on your tongue, followed by citrus sweetness and acidity, then bitterness and alcohol, with a pleasant finish. It is a masterpiece from the very beginning. One personal question. Is the difference from the Classic I drank the other day due to the different rice polishing ratio and the wood vat brewing? I only have a memory of it, but it tastes very similar to the Classic, so I thought they were the same 😅(sorry if I have a stupid tongue, but)

Mai-bijin sanQ Yamahai Junmai Nigori Nama Sake, pressed in a wooden tank 2024BY✨ I didn't have much prior information and couldn't picture what kind of sake it was from the back etiquette alone, so I looked at the web additionally and understood. So it's a perverted sake in a good and respectful way! 🤨 san = acid, Q = quest, sanQ = thank you, so first of all it has an acidity of 9.5, 😅. Pouring the top clear liquid into the sake cup and smelling the aroma, I could smell the very pungent acid aroma. It has a sour yogurt aroma of ground rice, citrus lemon and greffle nuance. The first sip is very refreshing, but the strong bitterness and acidity are stimulating, as if you have just taken a bite of citrus fruits (Hassaku, lemon, grenfre, and lime). However, in the second half, it seems to disappear without a hitch. It is more like a craft saké than a sake. Personally, I like it very much and it is very tasty 😋😋😋, but it is a unique sake that will not be popular with the general public at all 🤣.

Nabeshima Junmai Ginjo Akaban Omachi Namaishu 2024BY✨ Nabeshima, the king of Saga sake. It's been a while so I'm looking forward to it 😊 It's from the standing aroma, clear light orange and chemically like Omachi. Like an adult fanta orange 🍊 with the chilli and fresh acidity of the raw sake. The bitterness on the back end is pleasant and makes the saké go down smoothly 😄.

Tonight, as it is the last day of GW, I would like to bathe in this sweet and tasty sake for the first time in a while as a source of energy for tomorrow 💁. HANAOYAKU Jyundai Ginpu ORIGARUMI Unfiltered Nama Sake 2023BY✨ It's a brand that is rarely seen in stores these days and extremely difficult to purchase, but for some reason, this Ginpu was mysteriously found in the back of the My warehouse 💤 It is a little over a year old, but the aroma is fresh and clear pineapple🍍🍍🍍 with a honey🍯 scent that is almost mead-like. It also smells like the liver oil I used to eat when I was little and it makes me feel nostalgic. ☺️ The taste is sweet and delicious on the attack in the upper part, but from the middle, the taste is generally calm and mature pineapple juice🍍🍹 with sharp bitter and dry sharpness, and the structure is delicious and I really like it. Both the aroma and taste are clean and crisp clear Japanese pear and muscat. SAKAYA Hachibei Yamadanishiki Namaishiki Namaishimo Junmai Namaeshu 2024BY✨ We're looking forward to opening this bottle of raw sake from Hachibei, a not-so-careless Hachibei in Mie: ☺️ First of all, the aroma is of lactic fermentation of yogurt, probably due to the yeast and yeast strain of the sake brewery. Personally, I like yogurt, so I don't mind it at all, but first-time drinkers may be a bit surprised 😳 The taste is surprisingly mild, with a creamy lactic acidity and a direct enjoyment of the delicious rice flavor. Tonight, I'm opening a second bottle of Maison Aoi because I want to drink the first one slowly. This is the first in the series 💁. Raifuku X [red] straight pumped 2024BY🙅🙅‍♂️🙅‍♀️ I have often seen this impactful jacket, but I have never had a chance to see it. The "X" seems to be named after the undisclosed specs. The nose has a grain-like sawdust and nutty aroma. The attack has a tangy acidity with a hint of citrus freshness 😋😋😋😋 followed by the umami of the rice, and the sharpness of the finish is even better 👍 The sake goes down surprisingly smoothly 😊. The sake rice is Yamadanishiki? No, it is Omachi. I was expecting it to be Yamadanishiki or Omachi, but it tasted so good that I decided to go into drinking mode 👼.
