At standing drinking CHUIN. The last sake of the day was my first Aizu Nishiki sake 🍶. Sukpetto koppetto" means "ah-da-ko-da" or "shino-no". Sometimes Tohoku dialect is kind of cute. ☺️ A slightly unique fermented aroma! It's like the natto from Nagatorogura the other day, but cheesier and with a sour taste. This time I was able to talk with Mr. Kawada and we agreed that the unique aroma of this sake and Nagatorogura may come from the lactic acid added in the fast brewing yeast process 😄. The texture is smooth. Characteristic sweetness with a sweet potato flavor 🍠. From there, the acidity quickly follows, and the dryness spreads soooo gently. The sharpness is good with a lingering bitterness. The sweetness with a sweetpotato sensation is also a new sensation 😳. According to Mr. Kawada, it seems to come from koji (malted rice). He says that the fermentation smell when making koji has a sweet chestnut aroma, and I also thought that perhaps that chestnut-like aroma, combined with the sweetness of the sake, gave it a sweet potato-like flavor. It's kind of unbearable to think that such an interesting sake has been drunk since ancient times. ☺️ The world of sake still seems to be very deep 😊.

去年店頭で見かけて気になってたけど値段がネックでスルーしたお酒。在庫処分なのか2割引だったので購入してみた😅 1年経ってるから少し不安だったけど熟成感は無くフレッシュで甘旨。甘過ぎやろってくらい甘い🤣 だけど少し甘ダレしてるような印象。製造日からすぐ飲めばめっちゃ美味しそうな雰囲気めっちゃ感じる。

YOMOYAMA NAGANO in Osaka⑳ The booths of "MISONOTAKE" and "MAKISUI". This is another brand we didn't know. Misonochiku: Newly brewed Junmai-shu (Junmai-shu with new rice). The overall taste is firm, with little acidity, a full flavor of rice, and a deep, thick sweetness. This is a delicious junmai sake. Murasakitsuyuuso Junmai Ginjo Easy to drink at a low 12% alcohol content, but with a strong umami and sweetness 😋. Juniroku Light Doburoku with 4% alcohol. It has a strong lactic acid bacteria but is sweet and tasty. It is said to be delicious even when frozen like a sherbet. The picture is a little blurry... All of them are delicious. The famous sake from Yoshino, Nara, Shojo no Oni👹san series❣️. The founder of Shugendo, Yakushokaku, was served by a couple of demons: the husband demon was Zendo Oni (the former demon) and the wife was Myodo Oni (the latter demon). This is the first time I bought a sake named after that Zendo Oni 😆. I was originally under the impression that Shoto was a fruity, easy-drinking sake, but this Zendo Oni is so rich and full-bodied that it is hard to believe it is a Jungin of Gohyakumangoku 😳. It has a nice melon feeling and a full-bodied flavor reminiscent of Tamagawa❣️. By the third day, the ripe fruit-like sweetness is added, and the unique flavor is irresistible 😇 I'm enjoying it chippy, chippy, chippy😇 All that crosses our path are demons 👹. But if it's demons like this, I want to see them again. I wonder if his wife will be the next demon (not my wife 😅)

I jumped on a label I'd never seen before and neglected to check the date, and found out that it was February 💦. I drank it cold. Not much Uitatekoso, but there is a slight graininess, with a hint of alkaloa. No mature-like aroma. The mouthfeel flows smoothly on the tongue, and the taste is full and full of rice flavor with a sense of maturity. The aroma that passes through the nose is a little matured, so it has matured a bit. But it just has an autumn-aged look to it 🤣. As the label on the back of the bottle says it is slightly dry, there is a bit of spiciness at the end, but I don't mind it too much because the umami is very strong. The high alcohol content makes it easy to drink, but it comes back with a thud later. I would like to try a freshly brewed sake once. This is the last Maikaze series for this year. It's been quite a while, but we'll be having "Mt. Haruna" for the last time! When the bottle is opened and poured, it has a relaxing sweet aroma. It has a peachy aroma. It also has a slightly banana-like flavor. The palate is smooth, as is typical of Gunma sake, with a slight sweetness that is typical of "Maifu" and a nice astringent taste that plays an active role in the background! The astringency also gives it a mineral taste, which I personally feel is similar to the "Tenpyo Junmai" that I drank before👍. In the latter half, the astringency becomes the main taste, which reminds me of grapefruit. It melts away at the end, so it goes down smoothly! I've enjoyed many Maikaze series this year, including "Akagisan"✨I'm looking forward to next year!

Type: junmai daiginjo, rice: Gohyakumangoku 76% Yamada Nishiki 24%, polishing rate: 35%, alc.: 16% Sweet aroma of ripe bananas. Flavor is juicy and sweet. Sweetness is balanced with gentle acidity. Sake is elegant and clean, it almost feels like water from a spring. Finish is lingering in mounth for quite a while.

Next was the Ryusen Yaezakura Junmai Sake Takumi no Omachi. Compared to the Yamada-Nishiki we drank earlier, the taste is a little more robust. The aroma is almost imperceptible, but the sweetness and umami of the flavor is stronger than that of Yamadanishiki. I was full of anticipation, wondering what this sake, which won first place in the Governor's Award, would taste like!
