There is no top note, and when you put it in your mouth, it is a beautiful cup with a soft smoke aroma and a calm sweetness and umami that floats softly in your mouth and disappears quickly.
In the mouth, it is a well-balanced sake with a pleasant muscat aroma, sweetness, slight bitterness from the acidity, and a smooth texture. The taste is stable from cold to chilled with no major changes in flavor. This time, I drank it all at once after opening the bottle, but next time I would like to enjoy the changes in flavor on the second and third days.
It does not have a fruity flavor, but has a full aroma of rice, a soft and mild sweetness in the mouth, and although it does not have much acidity, it has an alcoholic taste from fermentation and a bitter taste that finishes with a crispness, allowing you to taste the fine sweetness and umami of the rice brewed in each mouthful.

On the second day, the acidity begins to show its head, and the alcohol becomes less pronounced, making it a cup with an even deeper flavor and a lingering finish.
The aroma is like a ripe pineapple, and the deep sweetness reminds of brown sugar and fruity sweetness. It is a cup that I would like to drink with spicy food rather than Japanese food.
The owner gave this to me as a celebratory sake when the Hanshin won the championship.
