It's cold in Shimane 😨. So, we had a hot pot for dinner. I pulled out some sake to heat up. What is it? Daiginjo? I put it in the fridge to cool it down a bit. I was glad to have cold sake because it got warm after I turned on the heater and cooked the nabe 🍶. A souvenir from our recent trip to Tottori. I couldn't go to the brewery, but I got it at a souvenir store. But the brand name is not registered 😭. I opened the bottle when it was moderately cold. It's a little too thick and hazy. Water💦 It's thick and has a faint sweetness.... Hmmm, I want something more punchy. Maybe I shouldn't have chilled it. As soon as my partner took a sip, he said, "It's delicious! Everyone's taste is different. And I was reminded once again that I like strong flavors.

It had been a little while since I got the DM so I wasn't expecting it, but there it was 🙌 So I immediately bought it 🍶. What's wrong? It's not sweet. But it's delicious. I had an image of it being sweet and tasty... As the temperature rose, the sweetness came out 😋 and with it, the mellow flavor. Hmmm, I think it's a little heavy. Maybe I like it better when it is cooled down.

We went on a pilgrimage to the Holy Land of Sake 🤗. Imanishi Sake Brewery's traditional brewery😍. After walking to Hinohara Shrine, we went to Miwa Izakaya for a lunchtime drink 🍶. Encountered Nanadoro, which I couldn't drink at the Lore Brewery either: ❣️ Sourness and chilliness. Sour and chili. Low sweetness. Delicious 😋.

Purchased at Kintetsu Department Store in Uehonmachi on the way home from Itami Airport 🍶. Tried a few and brought home my favorite 😍! All 58% polished Oceto from Kagawa Prefecture 🌾. Sweet and fruity aroma, sweet and delicious mouthfeel. So called "mellow umakuchi" 😋. When I tasted it, it had a great impact on me and I decided on it immediately, but when I drank it again today, it feels a bit heavy 😅 Maybe it's because I drank a refreshing one yesterday. It made me wonder what my taste is 🤭.

The director of the department gave me a share🍶. The first Koshino-Umezato. And the sake rice is Koshitanrei. It has a little bit of sweet and tasty feeling, probably because of the Yamadanishiki. Soft and nice 😋. I see the name of Oguro Brewery is missing from the company name, I wonder what DHC is 🤔.

[Ura Harushika Series] Junmai Daiginjo-non-pressure pressed, Nakadori Nama-nazamajinshu. The sweet aroma spreads as soon as the bottle is opened 🍶 and the tension is explosive 😋. The color has a faint sheen. It smoothly enters the mouth. The umami flavor spreads with a chirichiri sensation. It finishes with a perfectly balanced acidity. The sweet and umami is a little bit tough 😅 because of the dry sake that followed. No, it is a delicious sake 🍶.

Junmai-shu (pure rice sake) made by reproducing the production process from the end of the Edo period to the Meiji 30s. Very dry mouthfeel. I was surprised at how dry it was, as I had imagined it to taste sweet like Muromachi 😳 The aftertaste has bitterness, astringency, and the delicious taste of rice.

Sake from a small brewery in Kushira, Gosho City, Nara Prefecture, in the bosom of Mt. Katsuragi overlooking the Yamato Plain.  It is a pink label version of "Akabane Omachi" made entirely from Omachi produced in Setomachi, Akabane district, Okayama Prefecture, in the Shinomine Rokumaru series. The pink label is a spring-like spring limited edition sake. The cherry blossoms are in full bloom now, so open the bottle quickly🤗.  The color is beautifully clear. The fruity and sweet aroma is subtle. The refreshing acidity spreads in the mouth along with a feeling of petit-pretty gaseousness. It finishes crisp and clean with an elegant sweetness.
