Leave the Karesansui for warmed sake at New Year's and open a new bottle of cold sake 🍶.  The color is a youthful pale crystal. The aroma is cool and refreshing, typical of Gohyakumangoku. The aroma is fresh and fruity, reminiscent of muscatel and green apple, with a gentle fragrance.  On the palate, the slight gassy sensation characteristic of nama-shu is pleasant, and the mellow rice flavor fills the mouth. In the latter half, a dignified sharpness stands out without any cloying taste, and a lingering hint of sweetness invites the next cup of sake.

Stocked up on sake for New Year's at Sake no Aberataya. I opened the bottle I bought but I wonder if it will last until New Year's 😅.  It has a deep and calm aroma that is typical of matured sake. When you put it in your mouth, the mellow and mellow flavor brought about by three years of low-temperature aging spreads quietly. The second half of the bottle is smooth and smooth, leaving a long lingering aftertaste with a hint of sweet bitterness.  The flavor will blossom more plumply if it is heated. You will be able to drink it forever.

It has a beautiful, cloudless transparency. The nose is tickled by the rich rice flavor like freshly cooked rice and the gentle ginjo aroma reminiscent of faintly ripe bananas.  In the mouth, the soft sweetness of the rice spreads gradually. For the first time in a long time, I encountered a delicious sake that can be drunk like water.

After tasting many different kinds of sake, this was the last one to be served.  There is no other sake as good as the local sake that has been loved by the locals for a long time.  It is a sake that is usually sold in supermarkets, so we don't have it here....  We left the store and went to Ugata Shrine (⛩️) and walked to Ukata Station. There was no supermarket! But there was a convenience store at the station that sold one cup of sake, so I bought it 🤗.  On the way back, we slept on the Shimakaze. I could have just taken a regular express 😅.

On the way to Ugata Shrine from Isogu, I stopped by KANPAI ISE-SHIMA. This was the real purpose of our visit 😅. I said I wanted a classic sake, but in the end, the sweet and tasty sashimi was the best 😋.

The second bottle was a Junmai sake 🍶.  Sake is drunk with miso, soy sauce, and salt 🤭 I think I prefer it warmed up rather than chilled. But still, the sea urchin miso is delicious 😋!

The other day, I bought some sake🍶 in Atami. I chose the "Fuji Nishiki Introductory Set" set after much deliberation at the souvenir shop. First, I opened a bottle of "Shiboritate Genzake" (freshly brewed sake).  The mouthfeel is very sharp. The bitterness spreads. The subtle umami of rice is pleasant.

In the mouth, it has the thickness that only unfiltered sake can have, yet it has a gentle umami flavor that spreads gradually without any cloying taste. The official sake, "Fly High Cloudy," is named after the god of water, Mikumari no Kami, who is known as the "god who controls water.  The aroma is a gorgeous ginjo aroma reminiscent of muscat and white peaches. The aroma is not BURNOUT SYNDROMES or Arabesque, but Jigsaw's "Sky High".   In the mouth, the creamy texture melts on the tongue and the clear, fine rice flavor typical of Junmai Daiginjo spreads. The slight carbonation gives it a pleasant pizzazz, and the balance of sweetness and sourness is exquisite!   But it still has a feeling that it is not this 😅 You want a graininess? My partner said it was like a juice.

I bought a bottle at Itami Airport the other day 🍶 Opened a bottle of Tenbi after a long time.  The top clear liquid is smooth and smooth 😋 The nigori has a strong acidity.  It is a tasty sake, but I have a feeling that it is not this one. I guess I don't like sweet fruity sake anymore.  I couldn't taste it after the gassiness was gone because I drank it all 😅.

Traveled to Saga, where I had not had much luck with sake. At Itami Airport on the way back to Shimane, I came across a sake tasting and sale 🥰 and asked for a few bottles to be shipped to me.  I opened a bottle of Toyo Bijin from the sake that arrived 🍶 and had a cup of oden with the sake cup I had purchased in Arita 😋.  It is stunningly clear and colorless. A very gorgeous and refreshing ginjo aroma reminiscent of muscat and white peach rises up, raising expectations even before drinking.  In the mouth, lush sweetness and delicate acidity are in harmony, and the clear flavor spreads gently. The finish is smooth and disappears easily, leaving a short but beautifully transparent aftertaste.

I went from Shimane Prefecture, No. 2 on the "Prefectures I'll Never Visit" list to Saga Prefecture, No. 1 (J-town net survey) 🤗③. Today, after walking in Okawachiyama, we went to Ureshino Onsen (hot spring) ♨️ The place is not available... Since we had a series of dry sake, we chose a sweet sake for dinner. It was The SAGA certified sake 🍶. The initial sweetness quickly fades away without leaving any residue, leaving a clear aftertaste with a soft acidity. Sake breweries & liquor stores, I wonder if I have time to go 😅.

I thought it was an open area because it is famous for Imariyaki pottery, but it was a small town😅. Opened a bottle of sake bought in Karatsu at the hotel 🍶 It is a sake with a bitter taste that comes to the fore although the flavor of rice is at the bottom. I need to drink some sake from Imari...

What a surprise, we are in the middle of Karatsu Kunchi 😳 We are very moved by this unexpected encounter. Lunch was Soba noodles😋 We managed to arrive at a Soba noodle shop while being pulled back by stalls along the road. The standard tenzaru: ❣️ The sake was Tenzan from Saga Sake. It was a delicious dry sake 😋.

Today is our wedding anniversary. open a bottle of old sake brewed in 1985🍶 🙄 It was brewed the year we got married. I bought this when we went to Kurayoshi in the spring.  The first thing that catches the eye is the amberish-gold color that has been polished over time. The aroma is complex and mellow, reminiscent of dried fruits, caramel, and maple syrup.  In the mouth, it has a mild and mellow mouthfeel. The rich sweetness and acidity come together to create a deep and complex flavor that envelops the tongue. The lingering aftertaste is long, with a pleasant bitterness and umami remaining for a long time, filling the mouth even after swallowing.  It seems that you can drink it forever and ever.

First "Tanaka Rokugo" 🍶 Strictly ordered my daughter who was in Fukuoka to get it! I remember telling her to leave it at our house in Nara😅. The aroma is elegant and fruity, reminiscent of green apples, with a hint of rice flavor. In the mouth, a full umami spreads softly, and the nourishing flavor that reminds one of the core of rice flows slowly over the tongue. However, the umami soon blends with the crisp acidity and changes to a light dry taste. While it has the solid rice flavor typical of junmai sake, it has an excellent sharpness that quickly recedes in the aftertaste, leaving a light lingering aftertaste.
