Hentai, cha~jig ‼️⚡️ Sake degree -53, acidity 4.3, mizu-hashiroshi brewing. The toji was the former toji of Mimuro Sugi, so you could say it is a Bodhi yeast yeast yeast yeast yeast yeast brewing. It is a stable, perverted sake, Nippon Soul 🍶. The color is clear but firm yellow. The nose has a burnt caramel-like aroma mixed with a grain-like aroma. The mouthfeel is viscous and thick. The taste has a caramel-like aroma, with a thick, concentrated honey-like sweetness, followed by sourness and a rich sweet and sour taste. 第8回和酒フェス@大阪ベイタワー ⑩ 自ら変態酒と豪語する全量水酛の江井ヶ嶋酒造さんの日本魂 ねむちさんの顔見たら、おーっ!って蔵人さんがリアクションしてた🤣 お酒の並びが左から順番に右へ行くほど変態度高くなってるそう😁 飲んだのは ●カラクチセブン 辛口だけど、そこまででもなく飲みやすい部類。 味のボリュームと旨味がしっかり ●みずもと仕込み 十分個性的だけど、普通に美味しい。 まだまだ変態度低め ●水酛スペシャルII 写真撮り忘れ💦切れてるけど端に少し写ってるはず 今回から白麹に加え多酸酵母使用、で扁平精米。前より甘酸っぱくて更に美味しくなってる気がした。 ●水酛甘露 去年は持ってきてなかったはず。濃厚な甘さで名前の通り甘露のようなトロみ感じる甘味。 ねむちさん共々コチラは購入しました😁 ●水酛スペシャルⅡフレンチオーク樽貯蔵 2年半オーク樽貯蔵したもの。熟成感と樽香が合わさってかなりのクセ強🤣これは無理かも🤣 オーク樽以外は無濾過生原酒 終了間際に購入したお酒持って蔵人さんと杜氏さんとねむちさんと自分の4人で写真撮ってたみたいだけどほぼ憶えてない😅

1783 2023/12 Nihon-Spirit Mizuhashiworks Junmai-Shu White Oak Barrel Aged Sake 100% Hyogo rice 70% 17° 21/4 A Akashi-shi, Hyogo Eigashima Sake Brewery 500 1650 This is a mizu-hashiroshi aged sake that has been laid down in a barrel. It was purchased in October and enjoyed with a sip from time to time. It is much lighter than AFS1975, which I used to love, but it reminds me of that texture.
