This is a sake from my hometown - Echizen Ono (Ono City, Fukui Prefecture). It used to be sold at roadside stations, but I looked for it again on my return trip, but I didn't seem to see much of it in the city. I wondered if they are limiting the amount of brewing - or if they are just out of stock. This is the one I found in my parents' fridge. Cool and pungent. A cool spiciness, followed by a nice, clean rice flavor. Then, a strong wave of spiciness hits you. The spiciness swells up while accepting freshness, umami, and sweetness. The intense flavor is intoxicating. After all, Genpei is delicious. I found out that Genpei Shuzo went bankrupt last November, and the direct sales shop was closed. The story of the bankruptcy and revival of the brewery was also seen in the morning drama "Ranman," and I look forward to the time when I can experience the taste of Genpei again.

This is a sake from my hometown - Ono City, Oku-Echizen region, Fukui Prefecture. I bought this sake when I went back home for summer vacation, and it just appeared. It has a sweet aroma that spreads quickly, with a sharp pungency. The sharpness of the spiciness is complemented by the sharpness of the aroma, which reminds me a bit of Western-style sake. It is a country sake, but it is quite gorgeous and sparkling. How about when it is warmed up? The spiciness rushes in like a gust of wind. Junmai Ginjo🍶Summer only sake 😆. Sweet and thick 😳. It's like coarse 😅. When you take your time to sip it, it softens a bit and has a dry melon aftertaste. Softened by Aizu's specialty, squid and carrots. The final dish is a chilled shoyu sauce, which is unique to summer. But it is rather refreshing. The soup is delicious. I saw this one at a store I sometimes visit and have been curious about it for a long time. I tried Kanenaka, a sake made by Nakajimaya in Shunan City, Yamaguchi Prefecture. The label is very cool. The manager recommended this sake, and it won a prize at a competition in Paris, so I opened the bottle with high expectations. The first saké was cold and the first saké was, "Hmmm? It has a strong unique flavor... It's a bit peculiar because it's a sake brewed from a traditional sake brewery... It's not a good match for me... I think it would be better to warm it up 🤔. I opened it for 2 days and drank it.... It has some kind of sweetness, and it's indescribably rich and delicious 😳. This is what I mean when I say that the taste opens up. It's not for everyone by any means, but I thought it was a good sake with a sense of the creator's commitment. Thank you for the treat 🙏.

Nama yeast, junmai, super dry, kanenaka The aroma is slightly fruity and reserved. In the mouth, it is filled with a robust rice flavor as it thickens. Dry and classical. The bitter and pungent taste that lingers afterward is also very pleasant. On the second and third days, the corners are removed and it gradually mellows out. I did not expect much...but I experienced the power of Nagano sake🍶...aroma: a faint sweet aroma of rice, a clear sweet bitterness...the bitterness is just right and does not bother me...it is delicious😋...but it is also delicious😋 when drunk as is... ...but it really comes into its own as a food sake! Last week I visited Dewano-Fuji at Hankyu Department Store, but I went to Umemoto Sake-ten in Nishinakajima because I thought I could find more variety at a special distributor. (Note that they have moved from the location shown on the map of Sake-no-wa, and they have a corner bar inside after 4:00 p.m.) I was a bit lost, so I asked the waitress and she let me try a sample. Melon-like fruity sweet taste. Slightly refreshing? It was delicious, but Junmai Arabashiri seemed rarer, so I bought that one 😊.

The beautiful kaleidoscope-like label is impressive. The taste is sweet with a hint of bitterness at the end. It is refreshing and crisp, but the screw was unusually hard to open, so I think it should be improved. The Junmai Unfiltered Nama-jyu I drank at the end of the year was cheaper and much tastier. I don't know if it's because they use Miyamanishiki, but it tastes a little like the Jokigen I had the other day. A bit 🍇ish.

My favorite Chiba sake "Iwanoi" is brewed with ultra-hard water (hardness 240). It has the delicious flavor of Omachi and the moderate bitterness and sharpness of hard water!
