This is the first time I've seen this warehouse. The rice used is Maikaze. As the name suggests, everything, including the yeast, is from Gunma, and it seems to be an annual event. The mouthfeel is mild. It is bitter-sweet with a slight banana aroma. It gently finishes with a hint of umami. It seems to have a lot of depth. Well-balanced and cohesive sake. This is the first bottle of Akita Shun Ginjo. I've never met this brewery before, but it's a good omen❗. The second day, the aroma of the nama-moto has receded into the background, and the taste becomes light and clean, but the nama-moto structure gives it a moderate depth, as if it is producing the flavor from a step back. This sake has become my 💓.
