At Ya-Ya in Kobe. This is the first time to drink Neko Masamune since it was transferred from the defunct Omi Sake Brewery to Maihime🐱. It has a sweet taste with a slight graininess from the freshness. It tastes a little messy, but it's not that bad, right? Might prefer it to Omi Neko Masamune 🤔. It's quite fruity and has a pungent and alu taste, but maybe it's good? It's sweeter the longer it's been open.

This is a driver's sake that cannot be tasted on the Suwa Gokura tour. Only this brewery offered small bottles of sake instead of cups. I must drink it this year😅. The aroma is calm with a little bit of alcohol smell. The sweetness of the rice flavor and the well-balanced acidity were delicious. This was my first time drinking Maihime sake in Suwa, and I loved it 😁.

This is the first bottle of Akita Shun Ginjo. I've never met this brewery before, but it's a good omen❗. The second day, the aroma of the nama-moto has receded into the background, and the taste becomes light and clean, but the nama-moto structure gives it a moderate depth, as if it is producing the flavor from a step back. This sake has become my 💓.

I drank it last year and enjoyed it so much I bought it again. Personally, it is my favorite new sake along with "Akagisan"✨. When you open the bottle and pour it, the aroma is crisp and gorgeous, like pears. The mouthfeel is light and immediately afterwards there is a solid gassy feeling. It's as shwashy as a carbonated beverage! Dry and clean on the palate, with pear and green apple flavors that are gorgeous and fresh. There is a hint of sweetness, so it is not only dry, but also well balanced. The astringent taste comes in the last half of the bottle and finishes it all off, so it is a delicious wine with a perfect ending! The sun is setting later and later, and we can feel the approach of spring. It's still early, but I'm looking forward to this year's spring sakes!
