Sake of January. We opened a bottle of Jikin, which we had kept in stock. It is fruity with a hint of sourness. The taste is stable. Sashimi of Shirakawa sea bream and steamed mahata with sake were served as snacks. It is the best.

This is my first time drinking the new modern version of Sentori. It has a fuller flavor than the old type, or rather, it has a feeling of lingering on the tongue. But it is Sentori, so it has a fresh flavor. I would like to try the raw sake as well.

Kurei often produces fruity sake, but this one is dry and rough. However, it still has a mouthfeel that is typical of Kure, and it is different from legacy dry sake. It tastes like it is made with rice, and the rice is well received. It is a manly sake that can be drunk in a manly way.

Sake of the month for April. This sake focuses on "astringency". But it is not too astringent and has just the right aftertaste. I tried it with hot pot, but I wonder if it would go better with cream cheese or something...? It's challenging and interesting.

Sake from Nara. I bought it because of the name. You can feel the umami of rice. But the aftertaste flows nicely. I paired it with beef and burdock tsukudani (food boiled down in soy sauce), but it did not lose its power. This is a sake that I would like to keep on hand on a regular basis.

Sake of the month for March. A clear and clean sake. It brings out the best of Yamadanishiki. However, the impression is a little mature. If we wanted, it could have a little more character.

Schwarzwald liquor. Fortunately it didn't overflow when the bottle was opened, but it was quite fizzy. The sweetness of the rice is light. I guess it is not an aperitif, but rather a food wine. I thought it would not go well with simmered dishes and maybe ethnic food. (I haven't tried it, but...).

The sake rice is Gohyakumangoku. It has a fresh aroma of ori. It is dry and has an alcohol content of 17-18%, so although alcohol is felt, the refreshing taste seems to be the core. Sashimi was black sea bream and tripe purchased at Nezu Matsumoto.

It was introduced as a drink like a cream soda, and that is exactly what it is. For some reason, the aroma, the sizzle, and the flavor reminded me of a cream soda. Definitely a delicious sake. If you like bubbles, this is a must-try!

New line of Wind Forest. This was highly recommended. It is even lighter than Kaze no Mori. The freshness of the shwash is still there and too delicious.

Yamori, a delicious sake from Tokyo. The mark of a gecko is stylish. It has a dry taste that you think is light but comes on quickly at the end. It has a claim to be a sake, but it is just right as a food sake.

It is only lightly cloudy and has just a slight whiffle. It can be felt on the tip of the tongue. The sweetness is restrained. Goes well with nabe.

I enjoyed the indigo color so I bought this one as well. The clear taste is still the same, but I feel a little bit of a tangy taste. It is delicious, but I think I prefer the indigo color. The side dish was from a fish shop called Nezu Matsumoto. The grilled sakura trout with sakura salt is excellent.
