The first thing you feel is freshness and sweetness. I guess a little bitterness comes later. I feel some connection that it was the "Toyokuni" brewery that I picked up after my business trip to Osaka.
I enjoyed the indigo color so I bought this one as well. The clear taste is still the same, but I feel a little bit of a tangy taste. It is delicious, but I think I prefer the indigo color. The side dish was from a fish shop called Nezu Matsumoto. The grilled sakura trout with sakura salt is excellent.
Sake of the month for December. It is brewed with Ishikawa's newest sake rice, Hyakumangoku No Shiro, and Ishikawa's oldest native rice, Kinshi. The alcohol content is 11 degrees. It is easy to drink but has a great minerality. It is very tasty.
Toono's doburoku, which I haven't had for a long time. It's delicious and has a very rice-like taste. However, the only drawback is that it just spills. As expected, it sprayed.... It tastes elegant and not rough.
IIMAYA GUITO! vol.5 November Sake. I went back to my parents' house for the New Year's holidays and left my cat in my wife's care, so we were together for the first time in a while. I don't often drink Hiraizumi, but it has a mineral taste with little Yamahai flavor. It seems to have a strong aroma, aiming to be a food sake. But the smell is not intrusive. Went well with tuna sashimi!

I bought a bottle of Sakai no Dawn at a local supermarket. Sake Nouveau. A clear sake that soaks into the body and soul. It tastes a little sweet. This is the first time I've had it this year, and it's good!
Tasake's sparkling sake. I paired it with the hairy crab I received as part of my hometown tax payment, and it was just as I had expected. The refined taste of the crab and the shwashiness had a synergistic effect and was delicious. It has a refreshing aftertaste with no unpleasant aftertaste. The bubbles were fine and not too fizzy. It was a good end to the three-day weekend!

Calm aroma. The flavor is as if the rice has been blended with clean water. The umami is also light and the sweetness is restrained, so the aftertaste is refreshing. It seems that the brewery only has one bottle of this sake, but I am glad I only have one bottle.
I had avoided it because I thought it tasted like natto (fermented soybeans), but of course it couldn't be. It is rather fruity. Delicious. You shouldn't judge it by its appearance. w
