Today we have Vega from Abeno, which comes with a nice acidity. I wouldn't call it fizzy, but you can feel a little bit of petitiveness on the tongue. Not much sweetness.
Sake of the month for November. Sake made from sake rice called Ipponshime. It is a clean and refreshing sake. It lacks a little umami. There is no aftertaste. It is a delicious sake, just a matter of taste preference.
I bought it at Wadaya in Oimachi because they started to carry Abeno. No effervescence, modest aroma, slightly acidic. The taste is clear. I am glad to be able to buy Abé.
Sake of the month for October. Sake made from Hinohikari sake rice. It has an easy-drinking fruity mouthfeel with umami coming later. It has a mild taste with no harshness.
Sparklers continued from last week. Back this week. Less acidic, more sweet. Totally different. You might not recognize it without the sparkler label. It tasted like the end of summer and the coming of winter rather than autumn.
Opened a bottle of sparkler, although it was a little past its prime. As usual, the balance of clear sweetness, umami and acidity is just right. I didn't have fireworks this year. The back of the bottle is still in the fridge, so I'm looking forward to it.
Fresh & fruity, petite type. There is no cloying taste, and just a hint of bitterness at the end. I thought it would go well with grilled salt fish, and today I had Usubahagi sashimi.
ma-ki--san, I enjoyed the old Gohyakumangoku sake that I drank in the past, but this short-stalked Watabune was exceptional! I would like to try another sake rice next time!
First of all, it smells sweet, like an elegant sweet. I quite like it at this point. The alcohol content is 13 degrees. It is a fire-brewed sake, but quite fruity. The clear sweet flavor lingers on the tongue.
Akita sake! Fruity, sweet and delicious. Delicious. Kame-no-o is more refreshing than Yamadanishiki. The alcohol content is 16%, but it is a little strong. It goes well with simmered dishes with a strong flavor.
With grilled bonito and Basho swordfish from Kamimachi Ikezawa Honten in Kochi. The sake was dry. Not the usual Ding's fruity, but umami-guchi type. It was unexpected but satisfying!
A friend of mine from Akita sent me this sake, which I had never heard that TDK was working together to produce sake. It is not a very distinctive sake, but it tastes good as an everyday food sake. It seems to go well with everything.
It is lighter than Tasake's regular series of special junmai sake. Easy to drink. This is delicious. I would like to drink it again when I have a chance!
Tokutei Yumachi that has been sitting in the fridge for six months! Too smooth on the palate. I am happy to feel the delicious rice. This is delicious but hard to find...

Wadaya original in Oimachi. This is very tasty. The fizziness was quite strong and the lid blew off when I opened the bottle. I highly recommend it. It is a shame that it is an original sake.
Sake of the month for June. This sake is made from Mie sake rice "Kami no Ho", Mie yeast, and Mie brewing water. It is soft on the palate, but has a slightly bitter, cloying taste on the finish. The aroma is almost imperceptible. The sake itself is light. I would have liked to taste a little more of the rice. The bitterness and miscellaneous tastes at the end are strongly felt.
Imanaya GUITO! vol. 5 May Sake. Very sweet. The alcohol content was kept as low as possible to give it a gentle sweetness that will make you reach for it when you want to relieve stress or fatigue. It is indeed a good choice for a late night drink while watching a movie. But what to do with the sashimi afterwards?
Sake of January. We opened a bottle of Jikin, which we had kept in stock. It is fruity with a hint of sourness. The taste is stable. Sashimi of Shirakawa sea bream and steamed mahata with sake were served as snacks. It is the best.

This is my first time drinking the new modern version of Sentori. It has a fuller flavor than the old type, or rather, it has a feeling of lingering on the tongue. But it is Sentori, so it has a fresh flavor. I would like to try the raw sake as well.
