I bought it because of the old-fashioned, hard-core label 😚The specs are also very Chinese, 35% Yamadanishiki daiginjo😤, but the price is reasonable💰They really only have one bottle, but it seems that only the store of one of their customers has a 4-goupe bottle 👍. I had wanted to drink it for a long time, but the timing was never quite right... The manager said it was his favorite drink in the restaurant! It is a pale yellow color with silver tints and a hint of green. It has a spicy top note with a hint of alcohol, but the aroma is very refreshing, perhaps because of the acidity. When you drink it, the slightly carbonated texture on the tongue is pleasant. There is not much noticeable aroma, but the acidity gives it a refreshing mouthfeel. It may not have much sweetness to begin with, but the acidity helps to make it dry. Despite its dryness, it has a strong flavor, which is probably due to the strong umami that can be tasted from start to finish. Dry sake is usually considered "spicy," but perhaps because of the strong umami, it does not feel too spicy. Interestingly, it is a sake that does not have much bitterness, which may be why it is so light and easy to drink despite its 17% alcohol content. This is seriously very, very good! I wouldn't say it's for everyone, but I think it's a must-try for sake drinkers who like umami!

Rice used is Yamadanishiki After opening the bottle, I wondered if it would have been better if I had let it sit longer. I regret it after opening the bottle. A gift from Sawanoizumi The Jun Dai I drank before was a Miyagi sake, beautifully light and dry, and I felt (selfishly) the earnestness of the toji (master brewer). I had an image of a modest, but firm, light, dry Kura. And then there is this special pure Sawanoizumi. It does not have much of a topping aroma, but the mouthfeel is surprisingly sweet and umami! It is sweet to the level of the Hitakami, and the robust umami is also very tasty! It has a light acidity and bitterness, followed by a refreshing sharpness. It's good! This is good! The price is relatively cheap, about 1300 yen for a four-pack, but it is convincing enough! Ishikoshi Brewery. I underestimated you. Sorry about that. Honjozo 🍶 fresh stored sake✨ A good, albeit alsodense, taste. Dry aftertaste. Slightly bitter. Mild when paired with salmon. ☺️ Sweetness when paired with sea bream. It's delicious. Three staggering drunks strolling to the next restaurant🐾🐈🐾 We drank only our favorites at the first restaurant, so the second one was Aomori sake (๑🍶๑🍶🍶´-) Yum! Fruity! I decided to go to ❣️ because I had never had it before and because of the words "fruity". Exactly! Aomori means scallops 🥰. This is the first time I actually ate them there 🎶. It tastes gentler than the ones I make myself ☺️ I'll use it as a reference for the next time I make it.

The first bottle we opened at the beginning of the New Year was a bottle of "Fuku Chitose Namae Junmai Dry Taste" brewed with the prefecture's original sake rice "Sakahomare", which was grown in Fukui. This is the third time this season that sake made with Sakahomare has been brewed. The sake brewery says that this is the third year they have brewed this sake, not the third year of honesty, but the third year of confidence. The warming sake was recommended, so we tried it lukewarm to finish the saké. The slight warmth of the lukewarm sake matched the umami of the sake, making it a perfect saké to drink with a hot pot on a cold day!

The aroma is fresh banana🍌 type? It is fresh and crisp in the mouth 🐜😚 The gentle sweetness and umami taste goes away quickly 😚 It is a delicious sake that is easy to drink 🥰. It is a newly changed brewery and I will be watching it carefully 🥳.

This brewery was closed in April this year due to the effects of Corona and other factors. It is said that there is no reopening schedule, so it is practically closed. The official site has disappeared, and it looks like the company has been sold. It would be nice if the company that bought it would let it reopen... It's a rich, umami type that's different from the general image of Niigata's sake. It has a sweetness from the rice. As it has won a gold medal, I'm sure this sake would be delicious warmed.
