The rice used is Senbonishiki from Kumano in Hiroshima Prefecture. This brand is probably the first. To be honest, I didn't know about it. The person of the shop said "It comes in after two years". Store Drinking. 100% Senbon-Nishiki produced in Hiroshima Prefecture The color is clear. The aroma has a Calpis-like flavor. The taste is sweet and umami of rice. Since I was also visiting Kyoto, I had a second glass of "Ginshari", a Kyoto sake. The aroma is faintly muscat-like. The mouthfeel is refreshing...but then the mellow sweet, sour, and astringent taste like grapes spread out in a sizzle. The difference between the naming and the taste was a betrayal in a good sense! Here's the last GW drink we had It was a sake brewery I knew nothing about. This sake was sold as a summer draft sake by the Japan Meimon Shukai. The first Toyoshu in a long time is a pure rice sake brewed with the Yamanokami yeast derived from sasayuri (a kind of lily of the valley) that blooms in the sacred grounds of the Ogami Shrine, a sacred place for sake. If you are a sake drinker in Nara, you must try this 😁. Perhaps it was because I was used to light and fruity junmai sake, but it was alcoholic, not too sweet, and had a firm mouthfeel.
