For today's sake, I chose a Junmai Daiginjo from Kuchiman 😀. We compared the tasting sakes, one brought to room temperature for tasting and one kept chilled, and this one for tasting brought to room temperature might taste better than the chilled one 🤣. The chilled one is just too beautiful to swallow without anything stuck to it😅. The room temperature one spread the sweet and delicious flavor and filled my mouth with deliciousness😇

Jyuemon" by Toshimaya Shuzo, well-known for Yamori... it's a stone's throw away! Nakadori unfiltered raw sake, fresh and crisp... Hachitan-nishiki has a nice aroma... my favorite fruity flavor... and the mouthfeel... a good bitterness of sweetness and bitterness, followed by the sharpness of Hachitan-nishiki! It does not disappoint! I'm sure many people prefer this to Yamoru... I'm sipping it while grilling oysters... yummy!

Another brand of YAMAMORI Purchased at a supermarket near my house. It is a Hachitan-Nishiki, a specialty of Teshimaya, and the taste is almost the same as Yamori's. The aroma is fruity and melon-like. The base is sweet and delicious, but after drinking it, it may seem drier than Yamori's Hachitan-nishiki. Umai 👍👍 The best match this time was sauteed sea bream with butter. It goes better with something with a strong flavor 😋😋. Yamori is my favorite brand, but I think I even like this one more than Yamori❗❗❗ Next time I buy it, I'd like to open the bottle at the same time as YAMORI and compare them properly 😆😆.

Purchased in January at Kinase, a local sake brewery in Mito. I chose this brand for the Ibaraki local sake category. I was really torn between Watanabune and this one, which I had never had before. When I checked the aroma, I found a sour, vinegar-like smell... Looking at the label, we discovered that it had been bottled more than half a year. I didn't realize how much a draft sake deteriorates after half a year, even if the bottle is unopened... The taste is also undeniably deteriorated, but it is drinkable without any problems. It has a slight melon-like flavor with almost no sweetness. It is easy to drink as it is refreshing and sharp. I drank it much more smoothly. There is no doubt that the original is delicious. I want to revisit Matsumori for this...! But I didn't know it smelled like this. I learned a lot.

Almost no aroma 🤔In the mouth, it is fire-brewed but the sensation of freshness fills the mouth. It's a good combination of matured and fresh 😚😊Mellow and calm with a good umami and a crisp acidity 😋. I don't know if it is suitable for today's suddenly cooler weather, but it was delicious . @Koriyama Iando After having a drink in Omiya, I got tired of going back to Tokyo, so I jumped on the 🚄 and went to Koriyama. I decided to have a quick bite in front of the station, but it was crowded everywhere, so I went to a new restaurant that I found. They have a good selection of local sake, and I chose "Yuri", which I had never had before, and it is from the same brewery as Aizu Nakasho! I heard that this sake is brewed by a mother and daughter who are both sake brewing technicians! It has a soft sweetness at first, but eventually it becomes slightly dry and pleasant to drink. It is very easy to drink, which is impressive and delicious.

This is a sake from my hometown - Echizen Ono (Ono City, Fukui Prefecture). It used to be sold at roadside stations, but I looked for it again on my return trip, but I didn't seem to see much of it in the city. I wondered if they are limiting the amount of brewing - or if they are just out of stock. This is the one I found in my parents' fridge. Cool and pungent. A cool spiciness, followed by a nice, clean rice flavor. Then, a strong wave of spiciness hits you. The spiciness swells up while accepting freshness, umami, and sweetness. The intense flavor is intoxicating. After all, Genpei is delicious. I found out that Genpei Shuzo went bankrupt last November, and the direct sales shop was closed. The story of the bankruptcy and revival of the brewery was also seen in the morning drama "Ranman," and I look forward to the time when I can experience the taste of Genpei again.
