At home. First time in Saitama. I couldn't find Saitama easily, so I searched by the name of the prefecture and finally found it. The aroma is grainy and nutty. The mouthfeel is smooth and fresh, and it has a sweet taste of grain. The sourness and bitterness were not so strong. From the label, I thought it would be heavy, but it was easy to drink.

I found a suspicious looking liquor. Is it for export? I saw it in the lap of Asahara Sake Brewery and bought it. It is a carbonated sake with low alcohol content. It is carbonated after the fact, so it has a great shwashy feeling. It is good for a quick drink on a hot day, but if you want to feel the carbonation, I honestly think beer or a highball would be better. I don't think this is what people call "Japan".

Tonight, our first in the series, Aizu Otokoyama Kai from Fukushima Aizu ✨. First of all, the specs are 100% Fukunoka with Jungin polish and 16% alcohol. The aroma is clear with a hint of pineapple and a mojito-like flavor in the second half. The attack is soft and sweet just like the aroma, but soon the acidity and bitterness overtake it and it has a nice crisp finish 👍 It is perfect as a mealtime drink and is very easy to drink without feeling too much alcohol 😋.

Otokoyama Brewery is located in Aizumisato-cho, Onuma-gun, Fukushima Prefecture, which is different from Kaito Otokoyama. The brewery was dormant for a while, but has restarted again. It is a fresh, raw ogara-mi sake. It is slightly carbonated and tastes great with the bitterness of the oli.

Kumamoto's local sake, Sanzanmura Slightly sweet ginjo aroma A light, sweet mouthfeel with a soft acidity. Like drinking fresh green apple juice I drank too much and my memory is fuzzy I'm not even sure of the notes I wrote at the time😅. Anyway, it's delicious! Sake brewed with sake rice grown by a pesticide-free method called "Koi Farming" in Sanzan Village! Using the carp farming method, carp are released into the rice paddies 🌾🌾 to get rid of pests. A few years ago, I drank Manbo from Kumamoto Kameman Shuzo, which was a sake made using the duck farming method🦆! There are many people in Kumamoto who practice natural farming methods 🫶.

This is a sake from my hometown - Echizen Ono (Ono City, Fukui Prefecture). It used to be sold at roadside stations, but I looked for it again on my return trip, but I didn't seem to see much of it in the city. I wondered if they are limiting the amount of brewing - or if they are just out of stock. This is the one I found in my parents' fridge. Cool and pungent. A cool spiciness, followed by a nice, clean rice flavor. Then, a strong wave of spiciness hits you. The spiciness swells up while accepting freshness, umami, and sweetness. The intense flavor is intoxicating. After all, Genpei is delicious. I found out that Genpei Shuzo went bankrupt last November, and the direct sales shop was closed. The story of the bankruptcy and revival of the brewery was also seen in the morning drama "Ranman," and I look forward to the time when I can experience the taste of Genpei again.

Almost no aroma 🤔In the mouth, it is fire-brewed but the sensation of freshness fills the mouth. It's a good combination of matured and fresh 😚😊Mellow and calm with a good umami and a crisp acidity 😋. I don't know if it is suitable for today's suddenly cooler weather, but it was delicious . Souvenirs from Shinshin SY Among several souvenirs, I chose this one intuitively by looking at the label. He brought three four-packs of sake as a souvenir, which is a generous gesture for a business traveler who travels all over the country. I would never have been able to do such a thing with my own pocketbook. When I pour it into the cup, it is more yellow than I expected! Is this a matured type? The aroma is slightly fruity, but has a bitter, mature aroma. The mouthfeel is crisp and dry, with a light sweetness and bitterness, and a moderate umami, but the maturing aroma in the aftertaste is unique. The light sourness and bitterness in the aftertaste are quite a tricky thing to pull off. This strange taste is not one of my favorites, but it is something that makes me want to drink it again. Jyuemon" by Toshimaya Shuzo, well-known for Yamori... it's a stone's throw away! Nakadori unfiltered raw sake, fresh and crisp... Hachitan-nishiki has a nice aroma... my favorite fruity flavor... and the mouthfeel... a good bitterness of sweetness and bitterness, followed by the sharpness of Hachitan-nishiki! It does not disappoint! I'm sure many people prefer this to Yamoru... I'm sipping it while grilling oysters... yummy!

Another brand of YAMAMORI Purchased at a supermarket near my house. It is a Hachitan-Nishiki, a specialty of Teshimaya, and the taste is almost the same as Yamori's. The aroma is fruity and melon-like. The base is sweet and delicious, but after drinking it, it may seem drier than Yamori's Hachitan-nishiki. Umai 👍👍 The best match this time was sauteed sea bream with butter. It goes better with something with a strong flavor 😋😋. Yamori is my favorite brand, but I think I even like this one more than Yamori❗❗❗ Next time I buy it, I'd like to open the bottle at the same time as YAMORI and compare them properly 😆😆.
