It was shockingly delicious 🫢.
I asked for a doburoku of rice and agape, including sogape, to compare and was awakened by its sour, spicy, and greefy taste. It also has a deep lactic acid taste. This is amazing!
This is the corner bar of GINZA SIX and IMADEYA after my run. There were many foreigners there, and some of them showed a photo of Shinsei's Ame Frog to the waiter and said they wanted this one😅.
We also made friends with a Korean guy who lives in LA and was born in Australia during the kaku-uchi, and he told us that he came here to buy San-Do and Shinsei No.6. Unfortunately, IMADEYA didn't have it, but we introduced him to an izakaya in Tokyo that has a lot of Shinsei 😆.
A quick word of caution. This one was sold in the store and was priced at ¥3,630 for 500ml, but I didn't hesitate to take it home.

This sake is a special "doburoku" brewed in a wooden vat using the "mizumoto brewing method" from the Muromachi period, without using any association yeast, lactic acid for brewing, or chemical additives. The strength of the natural yeast, lactic acid bacteria, and various bacteria that resonate with the yeast and lactic acid bacteria produces a complete fermentation process that takes more than 150 days for the unrefined sake.
