Looks like a new brewery: 🙇♂️ It's called sake, but it seems to be junmai (no mention of rice polishing ratio) 🌾. It rises with herbs, cream, and lychee ❔ pear ❔. The acidity is distinctive ❕, but it's not just light and fresh. But it's not just light, it's a solid, elegant, high quality sake ✨. I felt a very modern essence in a classic 🤔. And with this flavor, it is recommended to be warmed up to lukewarm ❔. I tried it 🍶. Lukewarm changes the atmosphere of the acidity, it's sweet and sour like hot honey lemon 🍋. It's refreshing to begin with, but even more so: ☺️ It's also a great food sake 👍. I recommend drinking it cold to lukewarm, but after trying many different ways, I thought cold or lukewarm would be better 🤗.

Natsuta Fuyuzo works in the rice paddies in summer and in the warehouse in winter. This is my first time to try the KAME-NO-IO sake rice. 😃 It was very elegant, with a deep and delicate flavor. Plus, the mouthfeel is crisp and refreshing at the end of the drink 🙂 I paired it with grilled fish and it goes well😇. It's a lost one in my book 👍

Three staggering drunks strolling to the next restaurant🐾🐈🐾 We drank only our favorites at the first restaurant, so the second one was Aomori sake (๑🍶๑🍶🍶´-) Yum! Fruity! I decided to go to ❣️ because I had never had it before and because of the words "fruity". Exactly! Aomori means scallops 🥰. This is the first time I actually ate them there 🎶. It tastes gentler than the ones I make myself ☺️ I'll use it as a reference for the next time I make it.

It is a refreshing and royal sake of Echigo, light and dry, and fits for dinner. The brewery is located next to Niigata Prefectural Ojiya High School, where I went to school, and the main brand is Chojazakari.

This Sake is slightly dry with an earthy aroma. There are flavors of mushroom and wood. Sweetness and acidity are present towards the end. The flavor profile is different from other Niigata Sake I have tried. Guess I need to drink more Sake. 😁

Sake purchased on the way home from a BBQ at Wakata's house It is not very sweet, or rather slightly spicy, but has a strong umami flavor. It is bursting with Omachi character. The latter half and the aftertaste are very fruity. It was made in April, but I wonder if it has been in the warehouse. It seems to have matured a little 🤔. Well, I don't mind it because I think Wasshin has a positive effect on the quality of sake even if it has an aged feel. I think it might be the same as the sake I bought about 3 years ago with the plague banished label, but it didn't have the tea-like taste that I felt in the sake I drank before 🤔. I was thinking tea-like = Wasshin. The Junmai Daiginjo I drank at the Sakai Off-line Meeting in June also didn't have the tea-like taste, so maybe it depends on the BY.
