It is a summer sake. It is dry and light without stickiness.
But it has umami, bitterness, and an attack on the throat at the back end.
It is a different direction from Kamizen, but it is a sake that can be drunk rather easily.
This sake was entered in the National New Sake Competition.
A gorgeous ginjo aroma,
The flavor of the rice is concentrated in this gem.
Sake rice is Yamadanishiki produced in the special A district Yoshikawa,
Polishing ratio is 30%.
At Nihon Shu-Tsubaki.
Brilliant and slightly effervescent.
Aromatic sweetness and clean dry taste.
A lingering aftertaste that lingers curiously later.
A type of sake that is delicious on its own and not tiring to drink.

However, Watashi is not a good match for this Watafune sake rice.

Chic and austere, but lacks interest.

The smell is of fresh koji malt, and it does not seem to be heavy.

The acidity is followed by an Alc attack, which is a common development, and then a rounded texture & hidden minerality.
Turning... 15/20
It has a sweet taste, but the texture is like barley shochu, and there is a sublimation smell of malted rice. The output is exquisite in terms of smell, taste, and touch.
Yui ... 10/20
The minerality and barley syochu liqueur-like aftertaste are too much.
Cospa ... 6/10
The quality is acceptable, but I won't repeat it.
The output balance is textbook (except for the aftertaste), but this sake is not compatible with rice...
