Junmai Ginjo-shu Midori, Snow Cave Storage Sake ⭐️⭐️⭐️⭐️ Polishing ratio 55%, ALC 15.5 20241112-1114This is the seventh type of sake purchased on a trip to Kaigake Onsen and Muikamachi Onsen in Niigata 🤗. The ginjo aroma is not so strong and the sake has an immediate sourness on the palate, followed by a soft dry taste 😋. Ryokutankei⭐️⭐️⭐️⭐️ Junmai Daiginjo-shu Ingredient rice: 100% Yamadanishiki produced in Hyogo Prefecture Shirotaki Shuzo Yuzawamachi, Minamiuonuma-gun, Niigata Prefecture Rice polishing ratio 50%, ALC 14-15 degrees 20241112-1114This is the fifth type of sake purchased on a trip to Kaigake Onsen and Muikamachi Onsen in Niigata 🤗. The ginjo aroma is not very noticeable. It is a slightly sweet, mild and full-flavored sake in the mouth. The other day, I had to drink it while eating a chicken nabe that I made based on a TV program called "Chicken and Mushroom Basil Nabe". It was quite suitable as a food sake 😋. We opened it to celebrate our grandson's Shichi-Go-San (age 5) and drank it with the parents of our daughter-in-law. I was told that it is good warmed sake... so I had it lukewarm to top-heat. It is a refreshing sake that you never get tired of drinking, yet you can feel the sharpness and the umami of the rice. Junmai Ginjyo Kame-no-o Hitotsubashi ⭐️⭐️⭐️⭐️ 100% Kame-no-o from Akita Prefecture Polishing ratio 55%, ALC 16 Ryoseki Shuzo Yuzawa City, Akita Prefecture This is the 13th sake from Izakaya Chirori's 10th anniversary event. It is a sake with a subtle aroma and a gentle sweetness and umami taste in the mouth. The master served us "Yuzu Junmai Daiginjo Kakemai: 71% Yamadanishiki Koji rice: 21% Izu Tsannin Polishing ratio 50%, ALC 16%, Sake degree +9" was served as the 14th sake. Junmai⭐️⭐️⭐️⭐️ 100% Tamakae produced in Shiga Prefecture Polishing ratio 60%, ALC 15 20241201: This is the 11th sake from Izakaya Chirori's 10th anniversary event. I forgot to take a picture of the label on the day of the event 😭😱I was able to take a picture of it a week later on 12/07 when we held a get-together because it was still left 🤗. It is a little dry and refreshing...but it has a slightly peculiar aroma. I wonder if it's a quirk of the sake rice, tamaei... Chigasaki Chirori: 20241207, 20241201

It was served at room temperature. The 8th kind is Collage Junmai Ginjo Sake. The eighth type is Kuraku Junmai Ginjo Nagoshi Sake, which I have not had for five years since I met it in 2019. Special Junmai Sake ⭐️⭐️⭐️⭐️ Polishing ratio 60%, ALC 15%. This is the seventh sake from Izakaya Chirori's 10th anniversary event. I received a similar sake labeled "Hitakami" before (August 22, 2022), but it was 100% Yamada-Nishiki, so I registered it as a new sake. I guess it is a little dry 😅😅. Junmai ⭐️⭐️⭐️⭐️ 100% Yamadanishiki produced in Itoshima Polishing ratio 65%, ALC 14 This is the third sake at Izakaya Chirori's 10th anniversary event. We have had this sake before (May 8, 2023), but it had an ALC of 15 degrees at that time, so we decided to register this 14 degree sake as a new one. As I expected, it is a refreshing sake with acidity and rice flavor. The strong acidity makes it seem a little dry...but in fact, I think it is a slightly sweet sake. Chigasaki Chirori: 20241201

More than 40 kinds of sake were prepared in the bar, and the hourly fee of 1,000 yen was all-you-can-drink. Since the time can be extended, we came to the restaurant in search of new encounters. Kuro-Uguis Junmai Daiginjo-shu⭐️⭐️⭐️⭐️ Polishing ratio 45%, ALC 15 degrees This is a meeting of the same classmates who joined the company in 1981. Most of the members who are over 65 years old gathered at a Chinese restaurant in Shinbashi for the first time in a long while, and this is the sake we encountered at the after party at an izakaya. I took note that it was a slightly sweet sake with a full flavor and refreshing aroma. I remember well that it was delicious, but since it was an after-party, I don't remember all the details😅. Maybe that's why I forgot to post a review even though it was the first sake we met 😭😱. Izakaya in Shinbashi: 20241110
