Yamahai Junmai Daiginjo-shu⭐️⭐️⭐️⭐️ Polishing ratio 50%, ALC 17 degrees The check-in was in twice due to an operational error, so we had to delete one 🙇. The ginjo aroma is only faintly present, and the sake feels clean and slightly dry in the mouth, but the umami flavor spreads after a while. Chigasaki Hoshido: 20250217 purchased 0222 opened

Junmai Daiginjo-shu ⭐️⭐️⭐️⭐️⭐️ Nakadori Chogoku Namazume 100% Yamadanishiki produced in the special A district of Hyogo Prefecture Polishing ratio 35%, ALC 15 We had it in the sealed bottle😍🥰. Junmai Daiginjo-shu ⭐️⭐️⭐️⭐️ Hyogo Pref. 100% Yamadanishiki produced in Yoshikawa Polishing ratio 45%, ALC 16 We had it in the sealed bottle 🥰😍. I had never heard of Yamadanishiki from Yoshikawa (YOKKAWA) before, so I counted it as a new encounter. Slightly amber in color, the ginjo aroma is subdued. Junmai Ginjo-shu New Born ⭐️⭐️⭐️⭐️ 100% Yamadanishiki from Hyogo Prefecture Polishing ratio 50%, ALC 15 Today, I had a physical exam for a stomach endoscopy and a colonoscopy, so I hadn't eaten or drank for about 20 hours and my stomach and intestines were empty 😨. I was so hungry that my brain wanted seared rice more than sake😅. After filling my stomach with some white rice, I had some AKABU with a few seared sashimi on rice 🤗. The sake was slightly sweet but had a refreshing taste. Chigasaki Chirori: 20250218

Bokuchiri Special Junmai Sake ⭐️⭐️⭐️ Polishing ratio 60%, ALC 15-16 degrees It was sealed 🤗. I think it's a dry sake with a faint koji aroma and a strong lactic acidic taste in the mouth with a slight sourness. I gave it 3 stars because I don't like strong lactic acid taste 😅 I was going to finish the day, but it wasn't good enough, so I added a bottle of Koraku Junmai Ginjo Orikagarami Nama Sake, which I haven't had in 5 years 😋! Umibozu (Poseidon POSEIDOM) Junmai-shu⭐️⭐️⭐️ Polishing ratio 60%, ALC 15%, Sake degree +9 Slightly dry, but milder dry than the image of dryness from the +9 rating (stated on the bulletin board in the store). The label recommended a 1:1 soda highball, which I tried...it tasted like a soda liqueur, and I thought it was a sake to be enjoyed with fried or stir-fried food or other dishes with a bit of oil. But... from my taste, the sake highball gets 2 stars: ⭐️⭐️😅 Chigasaki Chilori: 20250204 Germany

Mochi Special Junmai Unfiltered Nama Sake ⭐️⭐️⭐️⭐️ 100% Comet from Hokkaido Polishing ratio 60%, ALC 16 It has an aroma of koji mold, and when you put it in your mouth, it has a little stimulation on your tongue peculiar to nama-shu. Special Junmai Kasumisake Nama Sake ⭐️⭐️⭐️⭐️ 90% Fuji Fuji, 2038 from Shizuoka Prefecture 10% Yamadanishiki from Tojo, Hyogo Prefecture Rice polishing ratio: 55% for koji rice, 60% for kake rice ALC 15%. It was unsealed 🤗It has a faintly refreshing aroma, and when you put it in your mouth, you can't feel the slight ori of sake lees in the air 😋 It is a crisp sake. Chigasaki Chirori: 20250204

Junmai Sake Lavieen Rose (Lavieen Rose🌹)⭐️⭐️⭐️⭐️ Polishing ratio 55%, ALC 13%. I went to the well-known Tyrol-san who sent me the information about the arrival of this sake. First encounter with 6 different varieties 🥰😋. Tonight's sashimi platter was 5 kinds: kampachi, ankimo, salmon, octopus, and scallop 😍. A light amber-colored, slightly sweet and sharp sake. Junmai Ginjo-shu ⭐️⭐️⭐️⭐️ Polishing ratio 50%, ALC 15%. The store owner said it was a delicious sake when heated...so I bought it to compare with Kisekirei 🤗. Before the dinner buffet, we had a craft beer drinking contest after the hot spring ♨️ bath... I enjoyed every sip 🥰. The sake was placed by the window as soon as we checked in, chilled ginjo, and served. The sake had a modest ginjo aroma and a delicious rice flavor on the palate. The next morning, I put the remaining four-pack of sake in my backpack and stored it at room temperature in the hotel locker until the bullet train home. The slopes were clear and the view was spectacular 👍Lake Nojiri was also beautiful 🥳. At the shinkansen izakaya on the way home, we had this sake that had reached about room temperature. The aroma was remarkable and the taste was mellow. It was a different sake than last night 😋We had to be careful not to chill it too much...we were all reminded of that😅. 20250124: Purchased at Nagano Station Building Store

Special Junmai Unfiltered Nama-shu⭐️⭐️⭐️⭐️ Polishing ratio 58%, ALC 15%. It is a junmai sake with a subtle fruity aroma, which is probably due to the rice used in the brewing process. Although it is a pure sake, it does not have much carbonation, and although it is a pure sake, it is 15% ALC, so it is refreshing and crisp and you will not get tired of drinking it 😋. I decided to buy two sakes to drink at the inn: Junmai Ginjo Kisekirei, which was included in the set and Junmai Ginjo Daisetsukei, which was not included in the set 🤗. 20250124: Nagano station building standing bar

Second time in the set to compare 😅😅 I was told it was slightly sweet, but the taste of Kisekirei was still on my tongue and in my brain, so the first sip of this one felt a little dry 😅. After resetting my palate with the Waragi and Tsumami, I found it refreshing, moderately sour and slightly sweet 😋. This sake does not have much carbonation, and even though it is junmai sake, it has a subtle fruity aroma, and the mild taste of the raw sake is pleasant 😋🥰. Junmai Ginjo-shu Kisekirei⭐️⭐️⭐️⭐️ 100% Yamae-Nishiki produced in Nagano Prefecture Polishing ratio 55%, ALC 15%. This is the second of three sake tasting sets at a standing bar in the Nagano station building. It is sweet, sour and juicy, almost like a white wine 😋. The exact same comment as the catchphrase on the label was made by one of my friends who drank it with me. It was decided that this is the one I want to savor slowly at the inn 🤗. And we tasted it in the evening during our relaxing time, and also had it at room temperature in the bullet train on the way back (Izakaya Shinkansen) and enjoyed its aromatic flavor 🤗🥰. 20250124: Nagano station building standing bar

Junmai Ginjo Hitogokochi Made with Yamahai Sake Mother ⭐️⭐️⭐️⭐️ 100% Hitogochi produced in Matsumoto City, Nagano Prefecture Polishing ratio 55%, ALC 15 This year's skiing and hot spring tour with my friends was held at Myoko Ikenodaira Onsen🤗. From Tokyo station to Nagano station, the usual Shinkansen izakaya opened with Urakasumi Junmai Daiginjo-shu. However, the opening time this time was 1.5 hours 😅Tsumami was oyster bento 🥰. At the transfer Nagano station, I took advantage of a sake tasting set at a standing bar to select sake to drink at the inn. The first sake was Sasanohomare. The first sip felt clean and slightly sweet, but there were 3 kinds of quite sweet sake that I chose, and as I compared them, I felt it was also slightly dry 😅. And perhaps because it is brewed with a Yamahai sake mother, it also seemed to have a full, nostalgic flavor. 20250124: Standing drink in Nagano station building

Around February 2024, TBS aired a program called "Izakaya Shinkansen" starring Hidekazu Majima. I tried to imitate the way he enjoyed himself with his own chopsticks, small plate, and sake cup, spreading out a luncheon mat and enjoying the sake and snacks he had purchased before boarding the train 🤗.
