Tokubetsu Junmai-shu, once fired: ⭐️⭐️⭐️⭐️ Rice polishing ratio 55%, ALC 18 Sake degree +20 Acidity 1.5 Amino acidity 1.4 Yeast: Association No. 9 I bought this sake after the sake shop owner told me that it tastes a bit monotonous when drunk as it is, but it is very tasty with sashimi and other seafood. I was a little nervous about the sake's sake content of +20, but I enjoyed it with sashimi and grilled salted mackerel. Hatsu Shibori 2025 [departure]⭐️⭐️⭐️⭐️ Unfiltered unpasteurized sake Rice polishing ratio 60%, ALC 14%. While looking at the sake on the shelves and in the fridge in the store, looking for a sake to purchase, the unique label of Yano Shuzo caught my eye. I had to buy this one 😅. Junmai-Ginjo Unfiltered Nama-Shu ⭐️⭐️⭐️⭐️ 100% Bizen Omachi, Polishing ratio 55 ALC 16%. We went to this restaurant for the first time, which was located in a residential area, and which we could not go to for a long time, although our friend told us that it was a restaurant with a delicious roast beef dish. I ordered the omakase set meal, which included three sashimi and roast beef. The kampachi, salmon, red shrimp, and roast beef all went well with sake 🥰😋. Amber Junmai Ginjo⭐️⭐️⭐️⭐️ Polishing ratio 50%, ALC 13 degrees We started with a sweet sake as usual. Tonight was the after-party of the annual kingfish fishing tournament with my fishing friends. Tonight's main dish was a raw fish with liver and bone crackers, which we brought in and had cooked for us. I was supposed to bring a kingfish, but... the catch was not good, so I brought two over 30cm long horse mackerels that I caught on the outside and had them cooked for us. We also ordered fried mehikari, tempura of albacore and maitake mushrooms, assorted sashimi (yellowtail, kanpachi, salmon, and sakura shrimp), and seared shime saba (mackerel). Amber is a slightly sweet sake with a hint of ginjo aroma. The alcohol content is low, so it is just right as an aperitif 😋. Chigasaki Chirori: 20251122

Junmai Ginjo-shu Dry ⭐️⭐️⭐️⭐️ Polishing ratio 60%, ALC 15 degrees I visited my favorite liquor store and found a sake with a deer🫎 label. I asked about it and was told that it was from Kankoubai. I had thought that the four seasons' animal label series of Kankoubai would be owl in autumn and polar bear in winter... but deer🫎 appeared between autumn and winter. I bought it without hesitation. It has a subtle ginjo aroma, a slight carbonation on the palate, and a pleasantly stimulating dry and crisp taste on the tongue. Chigasaki Hoshido: 20251125 opened
