Junmai-shu ⭐️⭐️⭐️⭐️ Polishing ratio 60%, ALC 15%. I met this on 7.5.2022, but could not find the original data from Sake-no-wa brand data, check-in data, etc. 😱, so I decided to repost it😳. The aroma is almost imperceptible. When you put it in your mouth, for some reason, even though it's not a draft sake, there is a tingling sensation on your tongue. Junmai Ginjo Summer Sake - Goldfish label⭐️⭐️⭐️⭐️ Polishing ratio 55%, ALC 15 Where is the goldfish label? When we looked at the label from the back, we could see the goldfish on the back of the label through the contents. Furthermore, when I held my hand over the label from the front and made a shadow, I could see the goldfish on the surface of the label as well. This is a very fun label 🤗. The aroma is only faintly perceptible, and the refreshing taste on the palate gives it a summery sake character. Chigasaki Chirori: 20250627

Good evening Jay & Nobby 😃It was by chance that I was able to confirm that the label was visible from the front side. I could see it from the back side, so when I turned the label around to take a picture of the label on the front side, I noticed that the goldfish was visible on the surface behind my hand 🤗.

Junmai Daiginjo-shu ⭐️⭐️⭐️⭐️ Nakadori Banshu Aizan Kamimoro Shiro Namazume 80% Aizan from Hyogo Prefecture, Special A district Polishing ratio 45%, ALC 15 We had it in the sealed bottle 🥰. It has a light fruity aroma like lychee, and on the palate there is a pleasant and light stimulation on the tongue characteristic of nama-shu 😋. Then the umami of rice spreads afterwards and it is a mild, full, slightly sweet sake 😃. Chigasaki Chirori: 20250627

Summer 2025 ⭐️⭐️⭐️⭐️ Tatenokawa Sake Brewery, Sakata City, Yamagata Prefecture 100% Miyamanishiki produced in Yamagata Prefecture Polishing ratio 50%, ALC 15 After lunchtime drinking, I got a call from my favorite store that Yamakawa Mitsuo is in stock. I must get there before it runs out 😅. And so, I drank alone in the cool of the evening 🥰. According to the article on the label, it's the 10th anniversary of the Mitsuo Yamakawa project: ㊗️ I think it's a slightly sweet sake with a mild flavor, a little acidity and the deliciousness of rice 🥰. Junmai Ginjo-shu Unfiltered Nama-shu Nakadori ⭐️⭐️⭐️⭐️ 100% Yamadanishiki produced in Kanagawa Prefecture Polishing ratio 58%, ALC 17 We had a little sashimi left over from our lunch (sashimi platter) at Miyagawa Kappo, so we had another kind of sashimi. Lunchtime drinking is the best 😋🥰. The owner served us oysters in soy sauce. It's a delicious, slightly dry sake with a mellow flavor and a pleasant stimulation on the tongue from the raw sake. Yuyuu Special Junmai⭐️⭐️⭐️⭐️ Polishing ratio 68%, ALC 15 degrees This is the restaurant we used at last week's [Gurutonami Chigasaki]. The June sake, which was supposed to be our first encounter, was sold out the other day, so we revisited the restaurant for a lunchtime drink. It is dry and refreshing to drink. It went perfectly with the sashimi platter (tuna, yellowtail, bonito, and sea bream) and bonito stew that I ordered for lunch. Chigasaki Miyagawa: 20250627

Junmai Ginjyo 13 Nama Shuzake Nama Zuke ⭐️⭐️⭐️⭐️ 100% Yamadanishiki Polishing ratio 60%, ALC 13%. It is a slightly dry sake with a soft, fruity mouthfeel and a sharp taste after the rice flavor spreads. It is a summer sake that can be drunk easily because of its low alcohol content 😅. Junmai Ginjo-shu 4season summer⭐️⭐️⭐️⭐️ Polishing ratio 55%, ALC 15 degrees Compared to the same Kamikigen Junmai Ginjo-shu 4season Spring, the aroma is softer and more subtle, the mouthfeel is less stimulating, and the taste is mellow and fruity like pineapple with a slight acidity, making it a slightly sweet sake 😋. Kuroemon XVI ⭐️⭐️⭐️⭐️ Yamahai Junmai Miyamanishiki 13 Nama-zake Polishing ratio 65%, ALC 13%. 100% Miyamanishiki produced in Nagano Prefecture It has a faintly fruity aroma, and in the mouth, there is a slight carbonation characteristic of nama sake, which gives a pleasant sensation on the tongue. After that, the taste of rice flavor spreads in the mouth...it is such a sake. Because of its low alcohol content, I think it is perfect as a summer sake for a meal. Chigasaki Chirori: 20250610

Bike Masamune Nama-no-Mazake⭐️⭐️⭐️⭐️ Polishing ratio 80%, ALC 16%. Brewed using the same process as junmai-shu, this slightly dry sake has the carbonation characteristic of nama-nazake in the mouth, but with a hip flavor. This sake is brewed with sake rice grown by Mr. Yamamoto, a motorcycle rider at Yamamoto Sake Brewery in Akita, himself. I learned for the first time that a sake cannot claim to be "junmai-shu" unless the rice used has undergone a grade inspection. I guess it is important to use quality-assured sake rice in order to protect the brand quality of "junmai-shu" sake. If inexpensive junmai sake made with poor quality rice becomes available in the market, it will accelerate the shift away from sake 😅. Chigasaki Chirori: 20250610

Junmai sake, 60% polished rice ratio, 15% ALC 2025/6/17-6/19, the last day of the [Gurutonami Chigasaki 2025] event. I wanted to drink some more sake, and although I used up my event ticket, I entered Ponka on the first day in search of the sake I was interested in😅. I had met a hiyayoroshi junmai sake with the same shade of label/quality label in September 2019 (4th image). It was my first Gobashi junmai sake in 6 years and the pink is the spring label 🤗. Even though it's a junmai sake, it has a slight ginjo-like aroma. It has a slight ginjo aroma even though it is a junmai sake. For some reason, there is a raw sake-like stimulation on the tongue when you put it in your mouth, and I thought it was a refreshing sake with a taste that I never got tired of drinking. 2025/6/17-6/19, the last day of the "Gurunomi Chigasaki 2025" event. From the appearance of the restaurant, I thought it would be a Western-style sake dining bar, but the pamphlet said it was a "sake main" restaurant, so I chose it as one I would definitely like to visit. Junmai Kitakami Yakkyoku ⭐️⭐️⭐️⭐️ Kikumori Sake Brewery Kitakami-shi, Iwate 100% Kame-no-o. Polishing ratio 55%, ALC 15%, Sake degree +5, Acidity 1.7 Amino Acidity 1.0 Koji mold : Reimei Hiraizumi Yeast : Association 6 When the master brought a four-pack bottle, I was surprised at the atmosphere of the label😅. When I checked the brewer, it was Kikumori Shuzo. I checked the app for Kikumori Shuzo's sake that I had met before and found that the brand name was "Kneecap Crossing from Pictured Throwing" and the label was also unique 🤗. The aroma is not very pleasant. But I thought it was a slightly dry sake with rice flavor and sourness spreading in the mouth. The label is unique, but the taste was spot on. I was very impressed with the taste 😋. There was no sake in the Tsumami set for the event, but I ordered it with a lemon sour, and it was a Tsumami set that went well with sake 🥰. Junmai Ginjo ⭐️⭐️⭐️⭐️ Sekihara Shuzo Nagaoka City, Niigata Prefecture Polishing ratio 60%, ALC 15 2025/6/17-6/19, the last day of the "Gurutonami Chigasaki 2025" event. From the appearance of the restaurant, I thought it would be a Western-style sake dining bar, but the pamphlet said it was a "sake main" restaurant, so I chose it as one I would definitely like to visit. The ginjo aroma was not so strong, and on the palate, the sake had a mild taste with some acidity, making it a slightly dry sake. The master says that he tries not to serve the same sake as much as possible, and that he gets mainly junmai sake from the brewery, not from the liquor store.
