Mikotsuru✨I got it as a souvenir 🐰 The rice used is Miyamanishiki with a milling ratio of 50% and an Alc of 16. This is my first post after the Sake-no-wa update, but it's pretty hard to use 💦. You have to type very slowly or it won't reflect muddled or lower case letters💦. This is really just a reminder post 😭

I found another sake with #1 yeast and bought it 🐰✨. I've had Yamamoto before, like Pure Black, so I'm looking forward to seeing what kind of sake they've made with #1 yeast🎶. The rice used is not written on the label, but the sake store where I bought it said it was Akita Sake Komachi because Yamamoto only uses rice grown in the prefecture. The Junmai Daiginjo specs are the same as Sakura with a 50% milled rice ratio and an Alc of 15 🌻. The impact of the acidity plays on the palate 🌟. After that, freshness and a bit of bitterness that is typical of Yamamoto. My personal opinion is that it's a bit like a sour grapefruit 🥰. The strong acidity in the drink enhanced the sweetness of the paired mini tomatoes ✨. I think this sake would be good for people who like acidity and the summer season.

This was also drunk at a mini-tasting at Nishimura Brewery 🐰. The rice used is Ichihozumi with a milling ratio of 50% and an Alc of 15. The yeast is Association No. 1 yeast. I was curious to drink it since it is not distributed nowadays 🐰. I don't know what it was from because it was a bottle and not freshly opened, but it had a strong acidity. It was sold as a product, but I didn't take it home this time because I felt a bit brave. I would like to drink it again if I see it!

We drank it at the June mini-tasting at Nishimura Brewery in Kyoto 🐰✨. This is the limited edition Shinmasa from the hanpukai! As always, it is brewed with locally grown rice, wooden vats, sake brewing, No. 6 yeast, and no additives. I've only had the regular ecru once before, so I can't tell the difference between it and this hanpukai limited edition sake, but the balance of the champagne-like gassiness, gorgeous aroma, umami, and bitterness that finishes off is unique and only Shinsei can brew it. No wonder it's so popular 💕. Pon-chan ✨ for getting a bottle of this! It's just amazing 😆.

Sake that was given to me as a souvenir🐰 I registered a new brand, so I guess you have to go to the local area to buy it 🍀. The website says that the representative brand is "Shirasazato" and there's no mention of this sake 😅. The label says "Music Brewery" and the person who bought it for me said it's sake made by playing music ✨. I've heard of this in pig farming, but I wonder what the difference is between playing music to sake and not playing music to sake. I was wondering what the difference would be between sake brewed to taiko music and sake brewed to taiko music 😅. Is the sake industry lost? I think the spirit of challenge is great ✨ It was a refreshing and easy to drink sake.

I bought it at Yamanaka Sake store in Osaka Ekichika Marche 🐰💕. I LOVE the label of Ni-Rabbit, but the sake is delicious✨. This is my first time to satin. It's a low al 13° that's gassy but smooth and easy to drink 🥰. It has a sweetness from the rice but it's light and the lingering bitterness pulls it together so you can drink too much💕.

Danna bought me a bottle of alcohol🐰. Kure ✨First time I've seen it! I like sweet and sour fruity sake, so I'm not going to go through with this one. It says the rice used is Matsuyama Mitsui with a 60% polishing ratio and the yeast used is Kochi yeast. It has a sharp aftertaste but it's heavyweight, so I won't drink too much 😅. I recommend this sake for those who like a strong sake 🌻.

I got it as a souvenir. I looked at the label and thought it was from Saito Shuzo in Kyoto, but it is from Eikun Shuzo 🐰🍀. The rice used is Aiyama from Hyogo 💕Polishing ratio 65% and the yeast used is Shizuoka NEW5. My first yeast ✨. Aiyama is my favorite sake rice and has a sweet and sour image, but this sake was slightly sour and spicy! It has a refreshing sourness in the mouth and a dry aftertaste ❗ I don't know if it was the yeast that made it different from my image, but it was a new Aiyama sake that made me realize how interesting sake can be 🐰🎶.

I bought this sake because I wanted to try it because of the wonderful comments from people who had tried it at Sake-no-wa before 🐰. When I was a sake novice back then, I thought it was a sake for experts. Sake degree -30 and acidity 3.6 😅Settai sweet and sour! Hinohikari rice produced in Bodaiyama Town, Nara Prefecture, with a rice polishing ratio of 70%! When you put it in your mouth, you get a big wave of rich sweetness, acidity and umami 🌊🌊🌊🌊. I imagined it to be more rice bran and peculiar, but it is easy to drink with no cloying taste, as expected from the Aburacho Shuzo ✨💕! The most beautiful Bodaiyuan I've ever had! This is a great sake for those who like it strong 🥰. I couldn't drink a lot of it because of the strong flavor, so I drank it in small sips and the second half was on the rocks!

I bought this sake when I went to Mitomiku Shuzo 🐰. I like the usual three-star red, but this one is a limited-quantity oorigarami ✨. The Mitomiku Brewery mainly brews traditional Yamahai sake, and this Sannenboshi series is brewed using the fast brewing method, so it is said to be a series for everyone. It is a junmai daiginjo brewed with Shiga's sake rice, Watabune No. 6. When I bought the regular Sanshusei Aka before, it was a delicious sake with both a rice flavor and a clean, clean taste 🥰. This time it's an orikara version of that 💕I'm sure of it! It has a strong flavor but no peculiarities, so it can be served with food 🎶. This time we went to Mitomiku Sake Brewery for lunch at the adjacent cafe 🐰. There are three types of lunch set menus, and you can get sake rice for your rice. The sake rice is changed from time to time, and at this time it was Ginbuki. I heard that they are trying to make it edible by soaking the rice in water for a certain amount of time, but it is rare to have a chance to eat sake rice, and the side dishes were delicious 🥰.

This is also a sake that I received as a gift from Kochi at a Mother's Day dinner party 🐰. Like the drunken whale I mentioned earlier, it is made from rice Gin-no-Yume, with a 50% milling ratio and an Alc of 17. The label on the back of the bottle shows the lineage of Kochi Prefecture's sake brewing rice, Gin-no-Yume. It is a cross between Yamadanishiki and Hinohikari, which is a food rice ✨. This sake is also refreshing and free of any unpleasant taste, but compared to the drunken whale I just tasted, I could taste some bitterness in the aftertaste, maybe because the alcohol content is 1 degree higher 🥰. This is still the best tag team with bonito tataki🎶. And since it's more drinkable than the drunken whale, it goes really well with the bai clam stew 🥰.

On Mother's Day, we gathered with my brother-in-law's family at his parents' house two doors down for a dinner party 🐰. I made potato salad with smoked pickled radish and bai gai, and my brother and sister-in-law made kimbap and bonito tataki. My brother and sister-in-law are very good cooks and are learning how to make sweets and Korean cuisine 🎶I am always grateful to them 🎶. The drunken whale was a souvenir from Kochi Prefecture! The rice used is Gin no Yume with 50% milling ratio and Alc 16! If it is 50% polished rice, it could be called Junmai Daiginjo, but it is Junmai Ginjo✨! I've heard that sake from Kochi is made to go well with bonito ❗ Sake that complements the food 🥰. The ginjo aroma of the sake is a marriage of aromas and herbs such as myoga, green perilla, and garlic served with the bonito tataki 💕. Local ingredients and local sake are the best 🎶!

Dry junmai daiginjo 🐰 made with Gifu Prefecture yeast G2, which has high caproic acid ethyl production. I was curious to buy it because Harushika doesn't have a dry Junmai Daiginjo. The rice used is Miyamanishiki and Akita Komachi, with a milling ratio of 45%, an alc of 15, and a sake degree of +17. Harushika's driest Onikiri has a Sake meter of +18, so this is the first Daiginjo that is this dry. The top aroma is slightly apple-like, and when you put it in your mouth, the fresh green apple aroma pops 🍎✨. When it pops and runs away, it is sharp and dry with a slight bitterness in the aftertaste. It is a beautiful, clear sake that is typical of Junmai Daiginjos, and really is as fruity & dry as the label on the back says. Danna liked it as a daiginjo, but I thought it was a ping pong dash sake 🤣 I hope it stays a green apple until you open the door at least 🍎💨💨.

This is Yonesuru's summer limited edition sake 🌻 Firefly label! The rice used is 100% Dewanosato, the rice polishing ratio is 65%, and the Alc is 14. 🏝️ I think I like the summer limited edition sake the best among the four seasons because it has a slightly lower Alc and is easier to drink 🐰✨. Dewa-no-sato is a cross between Dewa-sansatsu and Ginbuki, a rice developed in Yamagata Prefecture for sake brewing. Yamagata Prefecture is also active in the development of rice suitable for sake brewing, and has the second largest number of such rice after Hyogo Prefecture. It has a fresh aroma with a soft umami flavor, followed by a refreshing acidity and a bitter aftertaste typical of Japanese sake. It is very easy to drink and well balanced💘 It's a good summer sake after all~🏝️ It's not too assertive, so it's easy to pair with dishes, and it complemented my light-flavored meat and potatoes 🎶.
