On this day, a colleague from my workplace offered to bring me some Hyakko that he had received, and the members of my workplace gathered at our house for a 9-person sake drinking party 🐰🌻. Sengoku Summer Sake Beetle 🐰🌻. The rice used is Yamada Nishiki from Sakura City, Tochigi Prefecture, with a milling ratio of 50% for koji rice and 60% for kake rice, and a low Alc of 14. It is refreshing, a little gassy, and has a good balance of umami and bitterness 🥰. It's still delicious 💕. It is a dangerous sake that you can't stop drinking!

On this day, a colleague from my workplace offered to bring me some Hyakko that he had received, and the members of my workplace gathered at our house for a 9-person sake drinking party 🐰🌻. One of a set of three Gold Snipers from a sake competition brewed by Naminode Shuzo in Shiga Prefecture with the goal of winning a gold medal ✨. The rice used is Yamadanishiki, brewed at 35% polished rice, Nigori sake, Alc 17. This is the first nigori sake with 35% polished rice ✨. It is a daiginjo that has the flavor of rice but is not too assertive and goes well with food 🌻.

On this day, a colleague from work said he would bring a Hyakko that was given to him, and the members of the workplace gathered at our house for a 9-person sake drinking party 🐰🌻. This is the Hyakko Bespoke ✨ The rice used is Yamadanishiki from Hyogo prefecture with a milling ratio of 18% and an Alc of 15. I think this is the most highly polished sake I've ever had. They say it takes over 200 hours to polish the rice to 18% milled rice 😃✨✨. The head aroma is fruity and subdued. On the palate, the ginjo aroma is peachy and clear ✨. The 4th picture was made by Pon-chan 🐰💕 We took a picture together at Nara offline meeting but it was quite yopa and embarrassing 💦 Sorry Pon-chan 🐰 thank you for all your help!

I found another sake with #1 yeast and bought it 🐰✨. I've had Yamamoto before, like Pure Black, so I'm looking forward to seeing what kind of sake they've made with #1 yeast🎶. The rice used is not written on the label, but the sake store where I bought it said it was Akita Sake Komachi because Yamamoto only uses rice grown in the prefecture. The Junmai Daiginjo specs are the same as Sakura with a 50% milled rice ratio and an Alc of 15 🌻. The impact of the acidity plays on the palate 🌟. After that, freshness and a bit of bitterness that is typical of Yamamoto. My personal opinion is that it's a bit like a sour grapefruit 🥰. The strong acidity in the drink enhanced the sweetness of the paired mini tomatoes ✨. I think this sake would be good for people who like acidity and the summer season.

We drank it at the June mini-tasting at Nishimura Brewery in Kyoto 🐰✨. This is the limited edition Shinmasa from the hanpukai! As always, it is brewed with locally grown rice, wooden vats, sake brewing, No. 6 yeast, and no additives. I've only had the regular ecru once before, so I can't tell the difference between it and this hanpukai limited edition sake, but the balance of the champagne-like gassiness, gorgeous aroma, umami, and bitterness that finishes off is unique and only Shinsei can brew it. No wonder it's so popular 💕. Pon-chan ✨ for getting a bottle of this! It's just amazing 😆.

Sake that was given to me as a souvenir🐰 I registered a new brand, so I guess you have to go to the local area to buy it 🍀. The website says that the representative brand is "Shirasazato" and there's no mention of this sake 😅. The label says "Music Brewery" and the person who bought it for me said it's sake made by playing music ✨. I've heard of this in pig farming, but I wonder what the difference is between playing music to sake and not playing music to sake. I was wondering what the difference would be between sake brewed to taiko music and sake brewed to taiko music 😅. Is the sake industry lost? I think the spirit of challenge is great ✨ It was a refreshing and easy to drink sake.

Aiyama is my favorite sake rice and has a sweet and sour image, but this sake was slightly sour and spicy! It has a refreshing sourness in the mouth and a dry aftertaste ❗ I don't know if it was the yeast that made it different from my image, but it was a new Aiyama sake that made me realize how interesting sake can be 🐰🎶.

I bought this sake because I wanted to try it because of the wonderful comments from people who had tried it at Sake-no-wa before 🐰. When I was a sake novice back then, I thought it was a sake for experts. Sake degree -30 and acidity 3.6 😅Settai sweet and sour! Hinohikari rice produced in Bodaiyama Town, Nara Prefecture, with a rice polishing ratio of 70%! When you put it in your mouth, you get a big wave of rich sweetness, acidity and umami 🌊🌊🌊🌊. I imagined it to be more rice bran and peculiar, but it is easy to drink with no cloying taste, as expected from the Aburacho Shuzo ✨💕! The most beautiful Bodaiyuan I've ever had! I bought this sake when I went to Mitomiku Shuzo 🐰. I like the usual three-star red, but this one is a limited-quantity oorigarami ✨. The Mitomiku Brewery mainly brews traditional Yamahai sake, and this Sannenboshi series is brewed using the fast brewing method, so it is said to be a series for everyone. It is a junmai daiginjo brewed with Shiga's sake rice, Watabune No. 6. When I bought the regular Sanshusei Aka before, it was a delicious sake with both a rice flavor and a clean, clean taste 🥰. This time it's an orikara version of that 💕I'm sure of it! It has a strong flavor but no peculiarities, so it can be served with food 🎶. This time we went to Mitomiku Sake Brewery for lunch at the adjacent cafe 🐰. There are three types of lunch set menus, and you can get sake rice for your rice. The sake rice is changed from time to time, and at this time it was Ginbuki. I heard that they are trying to make it edible by soaking the rice in water for a certain amount of time, but it is rare to have a chance to eat sake rice, and the side dishes were delicious 🥰.

This is also a sake that I received as a gift from Kochi at a Mother's Day dinner party 🐰. Like the drunken whale I mentioned earlier, it is made from rice Gin-no-Yume, with a 50% milling ratio and an Alc of 17. The label on the back of the bottle shows the lineage of Kochi Prefecture's sake brewing rice, Gin-no-Yume. It is a cross between Yamadanishiki and Hinohikari, which is a food rice ✨. This sake is also refreshing and free of any unpleasant taste, but compared to the drunken whale I just tasted, I could taste some bitterness in the aftertaste, maybe because the alcohol content is 1 degree higher 🥰. This is still the best tag team with bonito tataki🎶. And since it's more drinkable than the drunken whale, it goes really well with the bai clam stew 🥰.

On Mother's Day, we gathered with my brother-in-law's family at his parents' house two doors down for a dinner party 🐰. My brother and sister-in-law are very good cooks and are learning how to make sweets and Korean cuisine 🎶I am always grateful to them 🎶. The drunken whale was a souvenir from Kochi Prefecture! The rice used is Gin no Yume with 50% milling ratio and Alc 16! If it is 50% polished rice, it could be called Junmai Daiginjo, but it is Junmai Ginjo✨! I've heard that sake from Kochi is made to go well with bonito ❗ Sake that complements the food 🥰. The ginjo aroma of the sake is a marriage of aromas and herbs such as myoga, green perilla, and garlic served with the bonito tataki 💕. Local ingredients and local sake are the best 🎶!

Pon-chan, hello 🐰 When I heard that Kochi's sake is made to go with bonito tataki, I wondered if it was that pinpoint? I thought it was a bit pinpoint, but I guess that's what you'd expect from Japan's largest bonito landings ✨ It's nice to be so close to the ocean 😻
