Yamada-Nishiki produced in Shiga Prefecture is made into a prototype polished rice shin-gin (flat polished rice).
It is made from 50% polished rice.
It has a refreshing taste, as if it were in season. The aroma is sweet.
This is one of the three types of sake ordered at the Asano Japanese Hotel.
The name of the sake is Makin, but the taste is very similar to Yamada Nishiki, and it is also easy to drink. The aroma is the lightest of the three, but the taste is relatively thick.
Same day, same place.
A combination of three sakes to try.
The bubbles are medium and crisp, and the finish is very smooth, making it a good first aperitif.
I ordered it at the store in the Nishiki Market of the Asano Japanese Hotel, but I didn't buy it because the bottle was sold in front of the store, but I couldn't keep it cold in the refrigerator now.
The aroma is clean, with some citrus fruity flavor and sweetness in the throat, and it's easy to drink.
Original form polished rice, Shin-Gin (flat polished rice) brewing, Junmai-Ginjo Yamadanishiki 55% polished rice.
The mouthfeel is dry, as indicated by the Sake meter value of +2.8. The aroma has the crisp sweetness and acidity of a ginjo. The body is firm but not boring.
