I opened a bottle because I was able to buy a different sake rice. The deep sweetness and umami of the Omachi was good, but this one, with its bitterness and astringency, is also very good. It's still delicious!

Unlike regular Jyuseki, it seems to use a yeast called Kyo-no-Saki that produces a lot of malic acid. It doesn't say, but according to Nisshimura Sake Brewery's Instagram, it is an unfiltered sake. It is gorgeous, like rum, and a little bitter. The sweetness is moderate. Or rather spicy? The cool taste is perfect for the coming season! As the temperature rises, the appleiness comes out, but at the same time the spiciness increases. Personally, I prefer the "Jujishi" that I've had so far. I made a mistake when I drank it before, but I have to mix the Jujyoku with the sake, otherwise the lees sink to the bottom and the taste changes a lot. If you drink it with the lees mixed in, it might have a little sweetness.

The one that sprays if you don't open it carefully. If it sprays at 300, you'll run out of something to drink 🤣. Ginfukiyuki, 60% rice polishing ratio, Sake degree +6, Acidity 2.0, 1401 yeast The few reviews on social media said it was dry, so I was prepared to drink it, but it was a dry nigori sake, not sweet, but dry, refreshing and easy to drink! Spicy but not too spicy, with a hint of sweetness.

It's a little expensive but I was shocked when I drank the different specs at Kurabiraki, so I bought it. The rice is Watafune No. 2 from Hyogo Prefecture. It's not from Shiga Prefecture even though it's Watafune No.2 🤔. Rich banana-like flavor and muscat flavor. Lingering taste is short. Some food combinations feel spicy. Well, it's elegant and tasty, but I thought it's different from the one I had at the kurabiraki because it's bag-hung and the BY is different😅.

This was also drunk at a mini-tasting at Nishimura Brewery 🐰. The rice used is Ichihozumi with a milling ratio of 50% and an Alc of 15. The yeast is Association No. 1 yeast. I was curious to drink it since it is not distributed nowadays 🐰. I don't know what it was from because it was a bottle and not freshly opened, but it had a strong acidity. It was sold as a product, but I didn't take it home this time because I felt a bit brave. I would like to drink it again if I see it!

We drank it at the June mini-tasting at Nishimura Brewery in Kyoto 🐰✨. This is the limited edition Shinmasa from the hanpukai! As always, it is brewed with locally grown rice, wooden vats, sake brewing, No. 6 yeast, and no additives. I've only had the regular ecru once before, so I can't tell the difference between it and this hanpukai limited edition sake, but the balance of the champagne-like gassiness, gorgeous aroma, umami, and bitterness that finishes off is unique and only Shinsei can brew it. No wonder it's so popular 💕. Pon-chan ✨ for getting a bottle of this! It's just amazing 😆.

It was a long awaited release in Yogo bottle, so I rushed to get it. The aroma is a sweet and gorgeous ginjo aroma like sugar and honey. When you put it in your mouth, the aroma seems to open gently. It's a bit flowery. After that, the taste is gentle and beautiful. The sweetness is more subdued than I expected, but the overall atmosphere is high quality and even elegant. I've never heard of Rikuhada rice before. The sensation on the tongue is smooth and easy to drink. The first day is the most delicious impression. The next day, it seems to be smoky. Also, the impression of the taste is spicy and bitter. I want you to release the other one in 4 gou.

I bought this because I thought it was unusual that the specs were more sweet with Tamayo. It's definitely sweet, but is it an off-flavor? It's a very uncomfortable flavor. It's like rubbery. I wonder if the smell of the rubber from the yabuta was transferred? I don't think this kind of smell is usually found in sake. I wrote "rubber", but it also feels like disinfectant. It's a shame, because I had high hopes for it, because the regular sake Shiboritate was delicious...

You can see Tomioh in supermarkets, but unfiltered raw sake doesn't come along very often. I think it's only available in Kyoto. It's quite a long time since it was made, but it doesn't show any signs of age. Surprising but tropical flavor. The finish converges with astringency.
