兎御殿
I got it as a souvenir.
I looked at the label and thought it was from Saito Shuzo in Kyoto, but it is from Eikun Shuzo 🐰🍀.
The rice used is Aiyama from Hyogo 💕Polishing ratio 65% and the yeast used is Shizuoka NEW5. My first yeast ✨.
Aiyama is my favorite sake rice and has a sweet and sour image, but this sake was slightly sour and spicy!
It has a refreshing sourness in the mouth and a dry aftertaste ❗
I don't know if it was the yeast that made it different from my image, but it was a new Aiyama sake that made me realize how interesting sake can be 🐰🎶.
