The aroma is a modest but heavy ginjo aroma, not refreshing. I don't feel ethyl caproate as if it is really 1801. No, there may be a slight apple aroma when you are aware of it... but that's about it.
The taste is balanced and has a certain amount of umami.
It has a bottom that is hard to believe that the alcohol is 14℃, and there is a chocolate-like nuance.

Sake I've always been curious about
It's been a long time since I've had Naminode itself.
This sake is made from 36 of the 41 rice varieties grown in Shiga Prefecture. Lots of rice I didn't know about 😳.
Not only sake rice and edible rice, but also feed rice?
It has a calm taste, with a graininess and a slightly nutty flavor. It has a sense of complexity because of the variety of rice used.
I had a hunch that I wouldn't like it, which is why I didn't buy it, but my hunch was right 💦.
The label is very elaborate, with hidden letters and a bird flying on the back.
I still don't think it has much sweetness 🤔.
The sourness is stronger than the day I opened the bottle.

It is mild and well-balanced with no particular sharpness.
The top aroma is slightly melon-like and pear-like. It is slightly dry, but the umami of the rice seeps in pleasantly and gradually.
You will never get tired of drinking this sake.
