Tosa Rei seems to be a recently registered variety of sake rice🌾.
The initial aroma is mellow and sweet with a hint of acidity.
In the mouth, there is a hint of acidity and a juicy sweetness that is typical of Bunkajin.
It seems to have been fired once, but it was fresh and gorgeous and quite delicious 🍶✨️
This is a Daiginjyo brewed with 50% refined rice using the sake rice "Tosari". This type of sake rice will not break even if it is ground to a high degree of refinement.

The acidity is well-balanced, the freshness comes at the end, and it is mellow yet refreshing. It has a fresh feel that has never been seen before. Delicious.

Cold sake
Lychee and muscat-like aroma
Slightly acidic rather than sweet and sour.
The aftertaste is not so much sharp as it is smooth.
As you drink more, the umami comes to the fore rather than the acidity.
