Original form polished rice, Shin-Gin (flat polished rice) brewing, Junmai-Ginjo Yamadanishiki 55% polished rice.
The mouthfeel is dry, as indicated by the Sake meter value of +2.8. The aroma has the crisp sweetness and acidity of a ginjo. The body is firm but not boring.
When the bottle is opened, it is quite effervescent.
It has a light and dry taste with a sweet umami flavor that is not too strong, and is very tasty.
No words are needed. It is simply delicious.

The rice seems to be mellowed because it is milled along the shape of the rice instead of milling it round.
The mouthfeel is sweet like a daiginjo, but the taste is smooth and sharp.
It is my husband's favorite.
