First of all, the fresh and sweet aroma comes softly. When you drink it, the juicy flavor and pleasant acidity spread out from the gentle impression on the palate. For a moment, you may think it is quite strong, but then the sweetness and sharpness come together nicely. The sharpness of the wine makes it easy to drink, so I finished it💦.
Shiga's sake also has great underlying strength🤩.
Mellow sweet flavor of seme-odor type.
Tangy, refreshing acidity and dry bitterness.
The bitterness is muted and sweeter when combined with food.
When heated, the sememe smell disappears, and the rice flavor is more pleasant.
The acidity is very strong and leaves a sharp taste in the eyes and on the tongue.
The aftertaste is dry.

A summer version of the "top of the line" Junmai Daiginjo!
This Junmai Daiginjo is brewed using the rare rice "Watafune Roku", the paternal equivalent of Yamadanishiki.
The aroma is fresh and gorgeous. The elegant sweetness of muscat and melon on the palate.
The soft mouthfeel and umami spread throughout.
The sweetness of the juicy fruitiness gives the impression of a slight acidity that creates a three-dimensional effect.
The balance is well blended and you can enjoy a fresh taste with a sense of freshness and weight.
The aftertaste disappears with a pleasant sharpness, and the wine goes down smoothly. This is delicious 😋.
Today is a one-man operation with one master. Usually, there is another staff member. A vegetable salad was served as an appetizer. The second drink was this one. It was the first time for me to try it. It has a strong flavor, but the slight carbonation is refreshing. It is delicious.
The taste seems to have changed, maybe because I was sick and hadn't had it for a while. When I opened it, it tasted good. It tasted good again today, but something was different.
This is the second bottle I bought when I went to lunch at Mifuyu Sake Brewery. I had a hard time deciding which one to buy, even though I was allowed to taste many different kinds of sake at the store.
I always have a weakness for limited edition sake.
It has a hard taste, but the mouthfeel is gentle. It is delicious. I am glad I bought it.

I bought a bottle of Sanrensei at Mitomiku Sake Brewery.
If it says it is sold only at the brewery, you have to buy it 🤣.
The taste is crisp and dry, and if it's cold, it's easy to drink up.
I tried it in a lentil soup, hoping for a slight change in flavor, but it mellowed and became easier to drink👍.
It's something you don't want to waste 🤣
Purchased at a liquor store I've been visiting a bit lately. The aroma is strong. When you put it in your mouth, the mellow flavor and aroma spreads in your mouth. The mouthfeel is medium, but the spiciness comes afterwards and quickly finishes. It is delicious.
There was a little bit of a tangy taste at the end right after opening the bottle, but it disappeared after a couple of days.
This sake was also delicious.
