National Sake Fair 2025 Day 2 ㉘ Gifu ④ Gifu ④ Ikedaya Sake Brewery in Ibigawa Town A sake brewery with a long history, founded in 1689. There is an official website, but there is almost no information... Distribution is quite limited and seems to be mainly in single bottles... Icoma-san said he went there many times because it's in the neighborhood of Boshimaya, but he didn't know about it until recently. Rice polishing ratio 60% unknown (Gohyakumangoku?) 15-16 degrees Sake degree +1.5 I forgot to take a picture of the plate with the description, so the rice is unknown, but it looks like they used Gohyakumangoku in the past. It seems to have been made with Gohyakumangoku in the past. A little bitter type of dry taste. Seems pretty rare and I'm glad I got to try it 😊.

Heiwa Nishiki Sake Brewery in Kawabe-cho Founded in 1850 and brewing sake since the Edo period Polishing ratio 60%, Gohyakumangoku, Sake degree +2, Acidity 1.6, 1,400 yen Sweeter and gentler than expected. I don't mean to be rude, but I was surprised that it was better than I expected! It looks like they were bought out by Tenka, Murasakyu, and Honami Sake Capital last month!

National Sake Fair 2025 Day 2㉖ Gifu ② After drinking sake from the Niki Sake Brewery, we were told that the brewer of Hyakushun was here! So we decided to drink Hyakushun. Kosaka Sake Brewery in Mino City You don't know our sake, do you? So I told them that they had come to an event in Gifu last year, and they seemed a little pleased to hear that! Polishing ratio 60%, Gohyakumangoku 14.8 degrees, Sake degree +6, Acidity 1.3 1430 yen Rare local sake that is not found at dealers. I was told that it is a less sweet type of Hyakuharu, but it is fruity, refreshing, and a little dry. I didn't think the sake degree of +6 was that high. There are many types of Hyakushun that I like, but I don't buy them because they are not sold near me 🤔. After this, I told the brewer that I wanted to drink sake from a brewery that didn't show up at last year's Gifu Sake Event, so I asked the Hyakuharu brewer to introduce me to a variety of sakes.

National Sake Fair 2025 Day 2㉕ Gifu ① Breweries that didn't show up at last year's Gifu Sake Event were exhibiting, so we went to the Gifu booth. Niki Sake Brewery in Takayama City! Last year, Nemuchi-san drank their sake! Polishing ratio 50%, common rice, 15 degrees, Sake degree +4, 2090 yen I thought it was a classic sake, but it was more fruity than I imagined. I thought it was a high-class sake, but it wasn't that expensive. When I looked at the website, there were several types of daiginjos, so I guess they change the price depending on the rice and polish.

Yamamori Sake Brewery in Odaka, Midori-ku, Nagoya City I think Odaka was pretty much in the city, but I see that Kuheiji and Kami no Ii are also located in Odaka 🤔. I drank Takanoyume Junmai ALL NAGOYA Nama-zake Polishing ratio 60% Yumeginko 17% Sake degree -2 Acidity 2.2 Amino acidity 1.6 FIA-2 (Aichi Prefecture yeast) 1540 yen Nama-shu, but it is colored. Slightly matured The sake's sake and acidity were not disclosed at the event, but they were listed on Jizakaya Kodama's website. It's not the same BY, so it's just for reference. Takanomusume Junmai Daiginjyo Genshu Polishing ratio 50%, Yumesansui, 16%, 3844 yen Muscat-like fruity taste. I was looking forward to drinking it because many people are drinking Takanomusume, but I wonder if it was a coincidence.

I wanted to drink Kamisugi, Kikuseki, Toryu, etc. 😅. Nagai Sake Brewery in Hekinan City A sake brewery that was completely new to us. The brewery owner was very helpful 🙏. We drank Special Junmai Tatsuyoshi no Sato Polishing ratio 60%, Yamadanishiki 15%, Sake degree +5, Acidity 1.5, 2420 yen This sake is named after local artist Tatsukichi Fujii. Slightly sweet and light. National Sake Fair 2025 Day 221 Shizuoka 8 Makino Sake Brewery in Fujinomiya City There is also the Makino Brewery of the same name in Gunma, which brews "Ohaii" sake! Fujinomiya sake breweries always have "Fuji" in their company name or brand name. We were served by the daughter of the brewery. She said she is the heiress of the brewery. We drank Fujiyama Junmai Daiginjo Polishing ratio 50%, Yamadanishiki 15%, Sake degree +5, 4000 yen Beautiful, fruity and not too Shizuoka-like! Fuji nigori sake Polishing ratio 70% Gohyakumangoku/Koshibuki 15%, Sake degree -8 1400 yen It is neither sweet nor dry, and is easy to drink. Fuji Junmai Ginjo Polishing ratio 60%, 2038 Honorific Fuji, 15%, Sake degree +5, 2,800 yen A typical Shizuoka sake. Spicy but just right. National Sake Fair 2025 2nd day⑳⑳ Shizuoka 7) Fujinishiki Brewery in Fujinomiya City Fujinishiki Brewery is located in Fujinomiya City, though it could be mistaken for Fujimasa Brewery. They seem to make not only sake but also wine and shochu! Polishing ratio 40%, Omachi 15%, Sake degree -1, 3245 yen Fruity, full and gorgeous! One of my favorites from the Shizuoka booth!

The 2nd Nationwide Sake Fair (2) Shizuoka Sake Fair Fujimiya Sake Brewery, Fujimiya City, Shizuoka Prefecture The first time I went to the fair, I was surprised to find that the only sake they had in stock was an old one. Fujimasa is now under the umbrella of Kutsuma Suisan, the owner of Numazu Uogashi Sushi, a sushi chain in the prefecture under civil rehabilitation. I wonder if that's why the liquor stores stopped stocking it? Polishing ratio 60%, 2038 Honorific Fuji 15%, Sake degree +4, 1815 yen I guess it's a refreshingly light and dry type of sake. I couldn't find anyone drinking it when I searched for it, but it seems it was just renewed this year.

National Sake Fair 2025 Day 2 ⑱ Shizuoka 5 Takashima Sake Brewery in Numazu City Some stores in Kansai sell this sake, but I haven't had a chance to drink it, so I decided to try it! Polishing ratio 40%, Hyogo Yamadanishiki 16%, Sake degree +10, Acidity 1.2 Shizuoka yeast NEW-5 & Association No.11, 4950 yen. It's a refreshing sake, but I thought it's suitable for warming even though it's junmai-dai in flavor. The sake shop commented that it is a junmai daiginjo that can stand up to aging, which is great. Also, it's rare to find a junmai daiginjo with a sake degree of +10!

National Sake Fair 2025 Day 2 ⑰ Shizuoka ④ Gotemba Ishikawa Sake Brewery in Gotemba City The newest brewery in Shizuoka, established in January this year! Tsuboguchi Food Service, which operates restaurants and caterers in Shizuoka Prefecture, took over the dormant Ishikawa Brewery in Omaezaki City and moved it to Gotemba City! The toji was formerly the brewer at Naniwa Masamune, Jokigen, Hida no Hana, and Akagisan. He originally planned to start his own company and brew his own sake by renting facilities without a brewery, but when he saw the excellent facilities, he accepted the toji's offer. Polishing ratio 60%, Koshihikari produced in Gotemba, 16%, 2,200 yen Quite modern and fruity! I think it is one of the most delicious sake made with Koshihikari.

Bandai Brewery in Izu City Izu's only sake brewery Polishing ratio 60%, 2038 Honorific Fuji, 16-17%, Sake degree +4.5, Acidity 1.4 Shizuoka yeast HD-1 1903 yen Full-bodied and dark. Not very Shizuoka-like. I thought it was like a sake from Tajima or Himeji. When I told the booth staff that it was not like Shizuoka, they said, "Yes, this is the only type of sake in Shizuoka that is different from the others. He said, "Yes, this is the only one in Shizuoka that is different from the others. I wondered if it had something to do with the water system or something like that. He explained about the sake and I asked him if he was from the brewery. I asked him if he was from the brewery. No, I am a member of the association. I was told that I would be served sake by a member of the union for a while from here.

National Sake Fair 2025 Day 2 (15) Shizuoka (2) Isoboamama Sake Brewery in Yaizu City! There was a line next to Kihei, so I thought it was a good opportunity to try it. It looks like it would be expensive to buy 😁. I drank Isoboast Daiginjo Namazume Polishing ratio 45%, Tojo Akitsu Yamadanishiki 16-17%, Sake degree +5 to +7 Acidity 1.1, in-house yeast, 5170 yen Clear, gorgeous and delicate taste. Good sharpness. Isoboast Daiginjo Junmai Emerald Polishing ratio 50% Tojo Yamadanishiki 16-17% Sake degree +4 to +6 Acidity 1.2, in-house yeast, 4,950 yen Compared to Daiginjo, it has a strong flavor. I told the brewer of Kihei that I liked it better than Isobojiman because I personally preferred Kihei which I drank first!

National Sake Fair 2025 Day 2⑭ Shizuoka ①. Shizuoka Heiki Sake Brewery in Suruga-ku, Shizuoka City. Moved to Okayama in 1967 but resumed sake brewing in Shizuoka in 2012; with about 100 koku, it is the smallest brewery in Shizuoka Prefecture Even in Shizuoka, there are still only a few stores that sell it. The brewery's staff was very helpful, and when I returned home I found out that he was the president and toji (master brewer). He is also the president of Heiki Brewery in Okayama and is still young in his 30s😳. We drank Junmai Daiginjo Yamadanishiki Red Polishing ratio 40% Yamadanishiki 16-17%, 3300 yen This sake was made for a national sake competition. It is a fruity, rich and juicy type of sake, which is not typical of Shizuoka. When I mentioned this to the brewer, he told me that they use 1801 instead of Shizuoka yeast. Junmai Daiginjo Yamadanishiki Ao Polishing ratio 40%, Yamadanishiki 16-17%, 3300 yen This sake was made for the Shizuoka Prefecture's annual sake competition. This one uses Shizuoka yeast. This Daiginjo is completely different from the previous one in that it is less assertive and more food-friendly. It tastes very Shizuoka-like. Both bottles and labels have a luxurious feel, but at 3,300 yen, they were not as expensive as I thought they would be 😅I expected them to cost around 5,000 yen. I was going to try the Kihei from Okayama, but forgot to go to the Okayama booth💦.

Polishing ratio 45%, Kami no Ho from Suzuka, 15%, 7,700 yen Okagesama was juicy, but Sakusaku is refreshingly fruity and delicious! I thought I was drinking it for the first time at a Japanese sake festival😅. I want to try Hakutsuru-nishiki and Yamada-nishiki too! It has a strong impression of sweetness rather than flamboyance. It is sweet and delicious. The brewer was there and we talked about his visit to the brewery for New Year's. National Sake Fair 2025 Day 2 10 NARA ④ Nakatani Sake Brewery in Yamatokoriyama City Currently, the main business is hands-on brewing at the Yanagimachi warehouse built in the Yanagimachi shopping district in the center of the city. Polishing ratio 60%, Yamadanishiki produced in Yamato Koriyama 15%, Sake degree +4, 2100 yen This product was discontinued due to the shutdown of the main brewery. There were calls to revive it due to the drama, but the production capacity of the Yanagimachi warehouse was not enough to brew it, so it was filled with sake that had been stored in cold storage at the main warehouse and put on sale. It had a matured taste, but was easy to drink and delicious. I'm curious about the friendly signboard cat at the main brewery mentioned in the Google review 🐱.
